1/2 cup picante sauce
1 cup shredded Monterey Jack cheese
1 cup shredded cheddar cheese
6 large eggs
1 cup sour cream
Optional: Tomato slices and minced fresh cilantro

Steps:

  • Pour the picante sauce into a lightly greased 9-in. pie plate. Sprinkle with cheeses; set aside. In a blender, combine eggs and sour cream; cover and process until smooth. Pour over cheese. , Bake at 375° for 20-25 minutes or until a knife inserted in the center comes out clean. Let stand 5 minutes before cutting. Garnish with tomato and cilantro if desired.

  • Preheat oven to 350 degrees F (175 degrees C). Grease one 8x8 inch casserole dish and set aside.
  • Beat together the eggs and milk. Add seasoning salt, ham, Cheddar cheese, Mozzarella cheese and minced onion. Pour into prepared casserole dish.

1 package (17-1/4 ounces) frozen puff pastry, thawed
1/4 cup butter, cubed
3 cups sliced red potatoes
1 cup thinly sliced onion
1/4 teaspoon salt
1/4 teaspoon pepper
OMELETS:
6 large eggs, lightly beaten
1/4 cup minced fresh parsley
2 tablespoons water
Dash each salt and pepper
2 tablespoons butter
FILLING:
2 cups shredded cheddar cheese
1-1/2 cups cubed fully cooked ham
1 large egg, lightly beaten
1 tablespoon water

Steps:

  • On a lightly floured surface, roll each puff pastry sheet into a 12-in. square. Place one square in a 10-in. quiche dish; set dish and remaining pastry aside., In a large skillet, melt butter. Add potatoes, onion, salt and pepper; cover and cook for 10-12 minutes or until potatoes are tender and golden brown, stirring occasionally. Set aside., In a large bowl, beat the eggs, parsley, water, salt and pepper. In a 10-in. skillet, melt 1 tablespoon butter; add half of the egg mixture. Cook over medium heat. As eggs set, lift edges, letting uncooked portion flow underneath. Continue cooking until set. Slide omelet onto a baking sheet. Repeat with remaining butter and egg mixture to make a second omelet., Sprinkle 1 cup cheese over prepared pastry. Top with one omelet and half of the potato mixture. I developed this recipe combining potatoes and eggs over 30 years ago as a way to satisfy my family's hearty appetites. The green and red peppers really add a festive flair to the table.

1 cup chopped onion, divided
3 tablespoons canola oil
3-1/2 cups frozen cubed hash brown potatoes
1-1/2 teaspoons salt, divided
1/2 teaspoon pepper, divided
1/2 small sweet red pepper, chopped
1/2 small green pepper, chopped
2 tablespoons butter
1 cup shredded Swiss cheese
4 large eggs
1-1/4 cups milk
1/4 teaspoon paprika
2 teaspoons minced fresh parsley

Steps:

  • In a large skillet, saute 1/2 cup onion in oil until tender. Add the potatoes and half of the salt and pepper. Cook over medium heat until potatoes are thawed and softened, about 5 minutes. , Pat potatoes onto the bottom and up the sides of a greased 9-in. deep dish pie plate. Bake at 400° for 20 minutes. , Meanwhile, saute the peppers, and remaining onion in butter until tender. Spoon over potato crust. Top with cheese. 1 cup milk
1/2 cup all-purpose flour
1/2 teaspoon salt
1 pinch ground pepper (optional)
1 cup shredded cheese or 1 cup cheese slice

Steps:

  • Preheat the oven to 450°F.
  • Mix eggs, milk, flour, salt and pepper until smooth.
  • Pour half of the egg mixture into a greased 9x13-inch pan.
  • Place cheese on top of egg (you can also add any other filling that you want). Pour the rest of the egg mixture over the filling.
