CHICKEN AND STUFFING CASSEROLE

This casserole got me and my family our '10 minutes of fame'. It was entered in the "News Channel 7 Kitchen Recipes" and I had 6 news crew members here at my home eating it! Not only is it easy to make, it is truly delicious, too! Serve with a fresh green salad if desired.

1 (3 pound) whole chicken
8 ounces dry bread stuffing mix
1 (10.75 ounce) can condensed cream of chicken soup
1 (10.75 ounce) can condensed cream of celery soup
1 ¼ cups chicken broth (from boiling the chicken)
1 cup evaporated milk

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Layer the deboned chicken meat in a lightly greased 9x13 inch baking dish. Sprinkle stuffing mix over the chicken layer.
  • In a large bowl mix together the soups, broth and evaporated milk. Stir well. Pour this mixture over the stuffing mix, making sure it gets to the bottom of the baking dish (poke around with a fork to let it saturate into the bottom layer). Bake in the preheated oven for 35 to 45 minutes, until it starts to bubble in the center.

This easy version of Grandma's specialty features seasoned stuffing and chicken baked in a creamy mushroom sauce.

1 ¼ cups boiling water
4 tablespoons butter or margarine
4 cups Pepperidge Farm® Herb Seasoned Stuffing
6 skinless, boneless chicken breasts
Paprika
1 (10.75 ounce) can Campbell's® Condensed Cream of Mushroom Soup or Campbell's® Condensed 98% Fat Free Cream of Mushroom Soup
⅓ cup milk
1 tablespoon chopped fresh parsley

Steps:

  • Mix water and butter. Add stuffing. Mix lightly.
  • Spoon stuffing along center of 3-quart shallow baking dish. Arrange chicken on each side of stuffing and sprinkle with paprika.
  • Mix soup, milk and parsley. Pour over chicken. Cover.
  • Bake at 400 degrees F for 30 minutes or until done.

This is a tried an true family recipe. You never have left overs when you make this one! It is warm and conforting, with out all the work. One of my top recipes, easy! People will think you spent all day making this. Make a great presenation. You can add 2 slices of cheese to each breast. However, I lighten it up with one slice. Still has good flavor.

4 chicken breasts (thawed)
11 ounces chicken soup (1 can)
1/2 cup butter, melted
3 cups Stove Top stuffing mix
1/4 cup water
4 slices swiss cheese

Steps:

  • In a baking pan: place chicken & add slice of cheese to each breast.
  • In seperate bowl combine chicken soup and 1/4 water. Place soup mixture on top of chicken and cheese.
  • Then crunch up stuffing into small bits, add to chicken. The last step is to add the butter over the top (drizzle). This way the stuffing gets moist and crunchy.
  • Bake at 350 for 1 hour.
  • Note, check after 45-50 minutes If top gets to brown cover with foil.

1 ½ cups water
¼ cup butter
1 (6 ounce) package quick-cooking stuffing mix (such as Stove Top®), or more to taste
1 tablespoon butter
1 onion, diced
3 stalks celery, diced, or more to taste
1 (10.75 ounce) can cream of chicken soup
1 (8 ounce) container sour cream
½ (10.5 ounce) can cream of mushroom soup
1 whole cooked rotisserie chicken - skinned, boned, and meat shredded
salt and ground black pepper to taste

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Spray a 9x13-inch baking dish with cooking spray.
  • Bring water and 1/4 cup butter to a boil in a saucepan; stir in stuffing mix. Remove saucepan from heat, cover, and let sit until water is absorbed, about 5 minutes. Fluff stuffing with a fork.
  • Heat 1 tablespoon butter in a skillet over medium heat; cook and stir onion and celery until softened, 5 to 10 minutes.
  • Mix cream of chicken soup, sour cream, and cream of mushroom soup together in a bowl.
  • Spread shredded chicken into the bottom of the prepared baking dish. Layer onion mixture over chicken and season with salt and pepper; top with soup mixture. Spread stuffing over soup mixture layer.
  • Bake in the preheated oven until lightly browned and bubbling, about 1 hour.

This is a wonderful 1-dish meal that my kids just LOVE! It's so easy that I can make it as soon as I get home from work, and when it's done in the oven, the kids think they've had a wonderful home-cooked meal! Yum! (Oh, by the way, I PREFER to use the Campbell's Cream of Chicken Dijon soup, but I can't find it anymore in Indiana...)

1 (6 ounce) package chicken flavor stuffing mix
4 boneless skinless chicken breasts
1 (10 3/4 ounce) can condensed cream of chicken soup
1/3 cup sour cream
1/8 cup milk
1/8 teaspoon poultry seasoning
1/8 teaspoon paprika
1/8 teaspoon garlic powder
salt & pepper
1 2/3 cups water
2 tablespoons butter

Steps:

  • Mix contents of stuffing mix pouch and the 1-2/3 cups water. Set aside.
  • Place washed and dried chicken in a 2-quart casserole (or 13 x 9 inch baking dish). Sprinkle chicken with poultry seasoning, paprika, garlic powder, salt & pepper (for seasoning).
  • Mix soup, sour cream and milk. Pour mixture evenly over chicken.
  • Spoon stuffing mixture over the top, evenly.
  • Dot the top with little pieces of butter.
  • Bake at 375 degrees for 45 minutes, or until the chicken is cooked through and the juices run clear.

2 lbs chicken breasts (I cut them in half so they aren't so thick. Chicken tenders also work very well with this recipe.)
1 (6 ounce) box seasoned stuffing mix
1 2/3 cups chicken broth (water can be used instead)
1 (4 ounce) can sliced mushrooms, drained
1 (10 3/4 ounce) can cream of chicken soup or 1 (10 3/4 ounce) can cream of mushroom soup
8 ounces sour cream
1/2 cup shredded cheddar cheese

Steps:

  • Mix contents of vegetable/seasoning packet from the stuffing mix, stuffing crumbs and 1-2/3 cup chicken (or vegetable) broth, set aside.
  • Arrange uncooked chicken in 13x9 inch baking dish.
  • Scatter mushrooms over chicken.
  • Mix soup, cheese and sour cream; pour over chicken.
  • Top with the set-aside stuffing mixture.
