BAKED BRIE WITH CANDIED PECANS AND BACON



Baked Brie with Candied Pecans and Bacon image

Top gooey baked brie with dried cherries, pecans, bacon and thyme.

2 strips bacon
1/4 cup dried cherries, chopped
1/4 cup candied pecans, finely chopped
2 teaspoons red wine vinegar
1 teaspoon fresh rosemary leaves, finely chopped
1 teaspoon fresh thyme leaves, finely chopped
Kosher salt and freshly ground black pepper
One 7- to 8-ounce round high-quality Brie (preferably from France)
Sliced bread and/or crackers, for serving

Steps:

  • Preheat the oven to 325 degrees F.
  • Cook the bacon in a large skillet over medium heat until golden and crisp, 4 to 5 minutes per side. Transfer to paper towels to drain and cool and then finely chop.
  • Mix the bacon, cherries, pecans, vinegar, rosemary, thyme, pinch of salt and a few grinds of pepper in a small bowl.
  • Trim off the top rind of the Brie, leaving a 1/4-inch border around the edges and put in a small baking dish. Top with the pecan mixture, letting it mound and fall into the dish around the Brie. Cover the dish with foil, and bake until the cheese is warm and gooey, 30 to 35 minutes.
  • Serve warm with bread and/or crackers.

1 small wheel of Brie or Camembert (about 9 ounces)
1/2 cup pecan pieces
3 tablespoons light-brown sugar
3 tablespoons pure maple syrup
crackers or sliced baguette, for serving

Steps:

  • Preheat oven to 350 degrees. Place cheese on a rimmed baking sheet; bake until softened, 15 to 20 minutes. Transfer to a serving plate; cool about 20 minutes.
  • While cheese cools, place nuts on a clean baking sheet; bake until toasted and fragrant, 7 to 10 minutes. Sprinkle nuts over cheese.
  • In a small saucepan, combine sugar and maple syrup. Bring to a boil over medium heat; simmer until foamy, 1 to 2 minutes. Drizzle warm sauce over slightly cooled cheese and nuts; serve with crackers or baguette.

1 granny smith apples, and or 1 cracker
1/2 cup chopped walnuts
2 tablespoons brown sugar
1 tablespoon flour
2 tablespoons melted butter
2 teaspoons Bourbon

Steps:

  • Add wet ingredients and mix well.

This mix of baked brie topped with brown sugar, pecans, and rye whiskey is too good for words. You could use any other type of whiskey, such as bourbon. Serve with crackers.

1 (8 ounce) round Brie cheese
¼ cup brown sugar
¼ cup chopped pecans
1 tablespoon rye whiskey

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C).
  • Cut slits about 1/4-inch deep in a crossing pattern across the top and along the sides of the Brie wheel. Place the brie in a baking dish.
  • Bake the Brie in the preheated oven until softened, about 5 minutes.
  • While the Brie bakes, stir the brown sugar, pecans, and whiskey in a small bowl; pour onto the top of the Brie and return to the oven another 10 minutes. Serve immediately.
