BACON-WRAPPED DATES WITH GOAT CHEESE

Steps:
- Preheat the oven to 350 degrees Fahrenheit. Slice the dates lengthwise on one side to create an opening. Remove the pit.
- Using a spoon, stuff a small amount of goat cheese into the cavity of each date and press the sides together to close.
- Cut the bacon slices in half. Wrap each date with a slice of bacon and secure with a toothpick.
- Arrange evenly on a baking sheet with raised edges (otherwise grease will get everywhere) and bake for 10 minutes. Remove the dates and use the toothpick to turn each one so it's laying on its side. Bake for another 5-8 minutes, until browned to your liking, and turn the dates to the other side and repeat. Remove from the oven, place on a paper towel lined plate, and let stand for 5 minutes before serving.

I watch Ted make these on Queer Eye for the Straight Guy tonight. Sweetpea has a similar recipes posted but they aren't stuffed. A nice balance of sweet and salt.

Steps:
- Move oven rack to upper third of oven and preheat to 500°F.
- Stuff each date with an almond, then fill the remaining space with softened goat cheese using a pastry bag.
- Wrap a piece of bacon around each date and secure with a pick.
- Place dates on baking sheet lined with parchment paper and bake until bacon is golden and crispy, 6-8 minutes.
- Set aside to cool briefly before serving.
- For presentation, insert picks into half a pineapple sliced lengthwise.

Another great Saveur recipe.The already sweet dates caramelize in the oven,inbued with the smoky goodness of the bacon..then you bite into it-it's soft,and gooey,giving way to a even gooier ,creamy center and then you get a surprising little crunch from the salty almond.MMMMM.... These went over well at my B-day even among those that claimed to dislike goat cheese.(suggestions were made about subbing cream cheese,but I didn't hear any complaints;)The goat cheese really isn't overpowering;it's tangy creaminess is what harmonizes the sweet and savory flavors.I just wish I could eat these more often !

- Preheat oven to 500°F.
- Meanwhile,pit the dates carefully.You may cut a small slit in each date(easier than pitting from the stem end),being careful to keep the dates intact.Place a small amount of goat cheese into each date.You may use a small spoon or pastry bag,Place one almond into each date.Cut each slice of bacon in half crosswise.wrap one piece of bacon around each date,securing with a toothpick.
- Place dates about 1/2 inch apart on a baking sheet,seam sides down.Bake 6-8 minutes.The bacon should be crispy and the juices from the dates bubbling.Be careful not to burn the dates!
- Remove from oven and let cool.(Very important!these are great warm but if you pop one in your mouth strait out of the oven the goat cheese will burn your mouth like hot lava.Seriously,let these cool a little.).

- Preheat oven to 400 degrees F. Cut a slit in each date. Place almonds inside slits. Press together the dates to close slits. Wrap each date with a piece of bacon.
- Line a shallow baking pan with Reynolds Wrap® Aluminum Foil. Add a roasting rack; place the dates on rack. Roast for 15 to 20 minutes or until bacon is crisp. Serve immediately with toothpicks. Dates will be hot inside.
