My grandmother's bacon tomato pasta casserole recipe is an indulgently gooey take on mac and cheese. Add bacon and tomato sauce and you get the best comfort meal ever.

2/3 pound elbow macaroni
salt ((for water))
28 ounces crushed tomatoes
1 tablespoon sugar ((heaping - my family loves 2 tablespoons - but I only put in 1))
10 slices bacon ((sautéed and chopped))
1 pound Velveeta cheese ((sliced and tear as you layer it in))
1 cup almond milk

Steps:

  • Fill a large sauce pan 3/4 with water, add salt and bring it to a boil.
  • Sauté bacon until crispy (around 10 minutes) remove from pan, blot with paper towel to remove grease and cut in chunks.
  • Open can of tomatoes and add sugar and bacon and stir to combine. You may have to transfer it to a mixing bowl to fit all the bacon. I just keep it in the can.
  • Preheat oven to 350 F.
  • The water should have come to a boil. Add elbows and cook for 10 minutes. It's okay for it to be al dente. Drain and run cold water over them to stop from cooking further.
  • Put a layer of tomato sauce on bottom of medium casserole dish.
  • Add a layer of elbows and ladle some tomato sauce over them. Be generous.
  • Tear the cheese into smaller pieces and place on top of sauce layer.
  • Repeat layering, you will have at least 4 layers ending with cheese.
  • Pour milk in until you can see it 1/2 way up the casserole dish.
  • Bake covered for 30 minutes
  • Uncover and bake for additional 30 minutes.

½ cup mayonnaise

1 (16 ounce) can refrigerated buttermilk biscuit dough

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Lightly grease a mini muffin pan.
  • In a skillet over medium heat, cook bacon until evenly brown. Drain on paper towels. Crumble bacon into a medium mixing bowl; add chopped tomato, onion, Swiss cheese, mayonnaise, and basil.
  • Separate biscuits into halves horizontally. Place each half into prepared mini muffin pan. Fill each biscuit half with the bacon mixture.

4 slices OSCAR MAYER Center Cut Bacon
1 cup chopped zucchini
1 green pepper, cut into thin, matchlike sticks
1/2 cup finely chopped green onions
5 cups peeled, seeded and chopped tomato es
2 Tbsp. light brown sugar
1 tsp. dried basil leaves
1 tsp. dried oregano leaves
1 bay leaf
1/2 tsp. ground black pepper
3 drops hot pepper sauce
1 cup KRAFT Shredded Cheddar Cheese
8 saltine crackers, coarsely crushed

Steps:

  • Heat oven to 350ºF.
  • Cook bacon in large skillet until crisp. Remove bacon from skillet, reserving 2 Tbsp. drippings in skillet. Drain bacon on paper towels.
  • Add zucchini, green pepper and onions to reserved drippings; cook and stir on medium-high heat 3 to 4 min. or until tender. Stir in all remaining ingredients except cheese. Reduce heat to medium- low; simmer 10 to 15 min. or until tomatoes are tender. Discard bay leaf. Crumble bacon; add to vegetable mixture.
  • Spoon vegetable mixture into bowls; top with crackers and cheese. Bake 15 min.

1 lb. sourdough bread, cut into 1/2-inch cubes
1 small onion, chopped
8 slices OSCAR MAYER Bacon, chopped
3 plum tomatoes, seeded, chopped
8 eggs
1/2 cup milk
8 KRAFT Singles, halved diagonally

Steps:

  • Heat oven to 350ºF.
  • Place bread cubes on rimmed baking sheet; bake 10 min. or until lightly toasted. Meanwhile, cook and stir bacon and onions in skillet on medium heat until bacon is browned and onions are tender.
  • Combine bread cubes, onions and bacon in large bowl. Stir in tomatoes. Spoon half the bread mixture into 13x9-inch baking dish sprayed with cooking spray; top with half the cheese slices. Repeat layers. Whisk eggs and milk until well blended; pour over bread mixture.

This is a good casserole that can either be served as a main dish or as a side dish. This recipe was given to me by a friend.

6 ounces uncooked egg noodles
1 lb sliced bacon, diced
1/3 cup green pepper, chopped
1/3 cup onion, chopped
1 teaspoon salt
1/2 teaspoon dried marjoram
1/2 teaspoon dried thyme
1/8 teaspoon pepper
1 (28 ounce) can stewed tomatoes
1 cup shredded cheddar cheese (4 ounces)

Steps:

  • Cook noodles according to package directions; drain.
  • In a large skillet, cook bacon over medium heat until crisp.
  • Remove to paper towels to drain, reserving 2 tablespoons drippings.
  • In the drippings, saute green pepper, onion, salt, marjoram, thyme and pepper for 5 minutes.
  • Stir in tomatoes.
  • Bring to a boil.
  • Reduce heat; simmer, uncovered, for 10 minutes.
  • Stir in the noodles.
  • Add half of the bacon.
  • Transfer to a greased 2-qt. baking dish.
  • Top with cheese and remaining bacon.
  • Bake, uncovered, at 350° for 10-15 minutes or until cheese is melted.

This was served at my sister-in-laws baby shower along with a wonderful salad with balsamic dressing and seasonal fruits. It was so elegant. I had to ask for the recipe it was so delicious! My mother-in-law asked her friend for the recipe and here it is! I couldn't believe how easy it is to make. This is great when you have company staying over and you don't want to be in the kitchen first thing in the morning cooking. You put this together in the evening the night before. Try changing the cheese and toppings with your favorites! Very versatile dish! Enjoy.

1 loaf French bread (4 cups cubed)
10 eggs
4 cups milk
1 teaspoon dry mustard
1/4 teaspoon onion powder

Steps:

  • Butter a 13 x 9 inch casserole dish.
  • Arrange bread cubes in casserole dish. Sprinkle with shredded cheddar cheese.
  • Beat together the eggs, milk, dry mustard, onion powder, salt and worcestershire sauce. Pour over the bread and cheese in the casserole dish.
  • Sprinkle with crumbled bacon, mushrooms and chopped tomatoes.
  • Cover and chill overnight.

2 cups shredded Cheddar cheese (8 oz)
2 cups chopped roma (plum) tomatoes (6 medium)
6 eggs
1 1/2 cups milk
1 teaspoon Dijon mustard
1 teaspoon dried basil leaves
1/2 teaspoon salt
6 slices bacon

Steps:

  • Spray 13x9-inch glass baking dish with cooking spray. Spread bread in baking dish. Sprinkle evenly with 1 1/2 cups of the cheese; mix lightly with bread. Sprinkle with tomatoes.
  • In medium bowl, beat eggs, milk, mustard, basil and salt with fork or wire whisk; pour over bread mixture. Cover tightly and refrigerate at least 2 hours but no longer than 24 hours.
