Spring Mix Apple Raspberry Salad Recipe - Serve with dinner, take to a potluck or serve at a party! A few ingredients can add pizzazz to a side salad.

5 oz. spring mix lettuce
3.5 oz. bag of dried cranberries & candied pecans
1/4 cup blue cheese crumbles
1 apple (sliced thin)
4 slices cooked, chopped bacon
1/2 cup raspberry vinaigrette dressing (or desired amount of preferred dressing)

Steps:

  • For bulk salad assembly, layer spring mix in serving bowl, and top with cranberries, pecans, blue cheese crumbles, apple slices, and cooked-chopped bacon.
  • Right before serving, toss with Vinaigrette dressing, or desired dressing.
  • Or, assemble salads into individual servings and divide the 1/2 cup of dressing to each salad accordingly.
  • Store any leftover, undressed salad in an airtight container in the refrigerator.

PORK CHOPS WITH APPLE BACON SALAD



Pork Chops with Apple Bacon Salad image

Number Of Ingredients 13

2 tablespoons grapeseed oil
Four 8 to 10 ounce pork chops
1 tablespoon salt
1/2 teaspoon ground pepper
1 tablespoons grapeseed oil
1 cup apple (1/2-inch diced)
1/4 cup cooked bacon (medium dice)
1/4 cup red onion (julienne)
1 teaspoon salt
1/4 cup white balsamic vinegar
1 teaspoon sugar
2 tablespoons butter
1/4 cup celery leaves

Steps:

  • For the pork chops: Mix together the juice, salt and 1 gallon cold water. Submerge the pork chops and let brine in the refrigerator overnight.
  • In a large saute pan over high heat, warm the oil. Then sprinkle the chops with the salt and pepper. Add the chops to the warmed oil, and then reduce the heat to medium. Sear the chops until browned, 4 to 5 minutes on the first side, and then flip and repeat the process on the second side. After cooking on the second side, remove the pork from the pan and drain out excess oil from the pan.
  • To prepare the apple bacon salad: Return the pan to medium-high heat. Then add the oil, apples, bacon, onions and salt to the pan. Cook for 6 to 7 minutes, stirring throughout. Add the balsamic and sugar, and then reduce the vinegar for 2 minutes. After reducing, remove the pan from the stove and stir in the butter until smooth. Add the celery leaves.
  • Serve the chops with a choice of sides and finish with the apple bacon salad.

Tossed Salad and Raspberry Vinaigrette image

1 pound mixed field greens
1 cup dried cranberries
1 cup walnut pieces
One 22-ounce can mandarin oranges, drained and chilled
1 1/2 cups grape tomatoes, halved
1 1/2 cups crumbled feta cheese
1 cup fresh raspberries
1/2 cup apple cider vinegar
1/2 cup aged balsamic vinegar
2 teaspoons sugar
1 1/2 tablespoons Dijon mustard
1/2 cup extra-virgin olive oil

Steps:

  • For the salad: Place the salad greens in a large bowl. Mix in the cranberries, walnuts, mandarin oranges, grape tomatoes and feta.
  • For the vinaigrette: Combine the raspberries, vinegars, sugar and mustard in a blender until smooth. Slowly stream in the oil until combined.
  • Toss the salad with the vinaigrette before serving.
