This is not only for breakfast...it's great for any meal of the day. It's hearty and delicious and my family requests it often! Hope you try it :)

5 -6 large eggs
1/2-1 lb bacon, cooked and crumbled
1 cup shredded sharp cheddar cheese
1 (1 lb) package frozen hash browns (shredded "or" diced) or 1 (1 lb) package fresh hash brown potatoes (shredded "or" diced)
2 tablespoons vegetable oil
salt
pepper

Steps:

  • Have your bacon cooked and crumbled and set aside.
  • Place vegetable oil (or you can use bacon drippings) in a non-stick 12" skillet and heat over medium heat.
  • Pour potatoes into pan and press down evenly.
  • Fry about 10 minutes until underside is brown and crispy.
  • As carefully as you can flip potatoes over.
  • If you can't do this in one piece, try to do it in thirds or fourths, but try to keep them from falling apart.
  • Press potatoes down in pan evenly.
  • Make 5 to 6 two inch holes, or openings into the potatoes, evenly spaced.
  • Drop an egg into each hole.
  • You can add a little butter to each hole before dropping the eggs in, if you like.
  • Sprinkle salt and pepper over all.
  • Sprinkle bacon and then cheese evenly over top.
  • Cover until eggs are set.
  • Serve in pan with toast or bagels on the side and enjoy!

4 c thawed shredded hash browns
8 large eggs
1 1/2 c cheddar cheese, shredded
1/2 c diced bell peppers, any color
1/4 c diced onion
1/2 tsp each garlic powder salt and pepper
10 slice precooked bacon, diced
1 Tbsp basil flakes

Steps:

  • 1. Heat oven to 425^(if making right away-if making part way-heat oven next day) Spray a 9x13 inch casserole dish with nonstick . Set aside.
  • 2. Place hash browns in a large bowl.Set aside. In a smaller bowl beat two of the eggs and add 1/2 cup of the cheese, onions,peppers, salt and pepper and garlic powder to the eggs then pour over the hash browns and combine until all the hash browns are well coated.
  • 3. Pour mixture into the prepared casserole dish, and pat down evenly.(if making next day, cover and refrigerate now). If making right away bake until golden brown(425^) for about 35-40 minutes.
  • 4. Remove from oven when crispy and golden. Top the hash browns with remaining cheese. Make 6 small indentation in cheese layer. Crack an egg in each indentation.. Season with salt and pepper as desired.Sprinkle with bacon pieces and basil flakes.
  • 5. Bake until the egg whites are set and the yolks are cooked to desired doneness(10 minutes for slightly runny yolks(poached). a few minutes more for set.

A casserole that you can prepared the night before. May be served as a main dish or as a side. Use cheddar in place of the four cheese blend. I personally have not tried this recipe yet but plan to include it in my menu as a side dish very soon. I believe this comes from Cooking Light and has been recommended to me. I'm putting it here on Zaar for safe keeping. Prep time is estimated and does not include refrigeration time.

6 slices bacon
1 cup onion, chopped
2 garlic cloves, minced
1 (32 ounce) package frozen southern style hash brown potatoes
1 cup pre-shredded four cheese blend, divided
1/2 cup green onion, chopped
1/2 cup nonfat sour cream
1/2 teaspoon salt
1/4 teaspoon fresh ground black pepper
1 (10 3/4 ounce) reduced-fat reduced-sodium condensed cream of mushroom soup, undiluted
cooking spray

Steps:

  • Cook bacon in a large skillet on medium heat until crisp. Remove bacon from pan and crumble.
  • Pour off the drippings, add the onion and garlic to pan and cook for 5 minutes or until onions are tender. Stir frequently.
  • Add the potatoes. Cover and cook for 15 minutes, stirring occasionally.
  • In a large bowl combine crumbled bacon, 1/4 cup cheese, green onions, sour cream, salt, pepper, and soup.
  • Add potato mixture and toss gently to combine.
  • Spoon the mixture into an 11 x 7-inch baking dish coated with cooking spray.
  • Sprinkle the remaining 3/4 cup cheese over the top and cover with foil coated with cooking spray.
  • Refrigerate 8 hours or overnight.
  • Preheat oven to 350°.
  • Remove casserole from the refrigerator. Let stand at room temperature 15 minutes while your oven preheats.
  • Bake covered at 350º for 30 minutes. Uncover and bake 30 additional minutes or until bubbly around edges and cheese begins to brown.
