BANANAS WITH ORANGE AND RUM CARAMEL

3 tablespoons unsalted butter
4 bananas, peeled and sliced into 1-inch pieces
1/3 cup sugar
2 tablespoons white rum
1/4 cup orange juice (preferably freshly squeezed from 1 orange)
2 oranges, peeled and segmented
2 pints vanilla ice cream
Mint sprigs, for garnish

Steps:

  • Melt 2 tablespoons of butter in a large nonstick skillet over medium-high heat. Place the bananas in the butter, cut side down. Pour the sugar around the bananas and let it cook until it starts to caramelize, moving the bananas around a bit to ensure even browning.
  • Remove the skillet from heat; add in the rum, and orange juice. Return the skillet to heat and let reduce for a minute. Turn the bananas and let the juices reduce for another minute.
  • Remove the skillet from heat and swirl in the remaining tablespoon of butter.
  • Serve the bananas in shallow bowls drizzled with the caramel pan sauce. Top with orange segments and a scoop of vanilla ice cream. Garnish with a sprig of mint.

A different way to use bananas as a dessert topping. The orange sauce coats the bananas and brightens up vanilla ice cream and cake. 1/2 cup orange juice (I used freshly squeezed)
1/2 cup brown sugar
1 tablespoon lemon juice (optional, I did use freshly squeezed)
2 slightly under-ripe baby bananas (NOTE poster used red bananas which are about 4 inches long)

Steps:

  • Heat orange juice, brown sugar, and lemon juice in a skillet for about 15 minutes on low (there should be small bubbles breaking the surface, but not quite a simmer). The orange juice will reduce and thicken into a syrup.
  • Peel bananas and add to syrup. Cook for a few minutes per side, making sure to warm through.
  • Serve immediately with ice cream, pound cake, or plain. Both would be all the better!

1/2 tsp ground cinnamon
1 Tbsp sugar
3 zest peeled and juiced oranges
4 cut in half , length wise bananas
1 Tbsp grand mariner or cointreau ( opt. )

Steps:

  • 1. Pre heat oven to 350 Bake, In a Baking Dish, put the Orange Juice and Zest of Orange, stir in the cinnamon - place the bananas with cut sides down in the juice . Bake for 12 Minutes .
  • 2. Take Bananas out of oven and save Juice in Pan, Place Bananas on a serving platter - Put the sugar in te hot juice in the pan and also add the Grand Marnier at this time if using, Stir to combine with the juice and pour over Bananas . Serve Immediatly
