Number Of Ingredients 9

1/2 cup plain yogurt
2 tablespoons honey
1 teaspoon grated lemon zest
1 teaspoon plus 2 tablespoons lemon juice, divided
3 medium ripe avocados, peeled and cubed
1 medium apple, chopped
1 cup halved seedless grapes
1 can (11 ounces) mandarin oranges, drained
1 medium firm banana, cut into 1/4-inch slices

Steps:

  • For dressing, mix yogurt, honey, lemon zest and 1 teaspoon lemon juice. Toss avocados with remaining lemon juice., In a large bowl, combine remaining ingredients; gently stir in avocados. Serve with dressing.

This is my favorite Avocado recipe, and so easy! It was given to me by my sister-in-law's mother, who comes from Miami, Fl. It tastes like a dessert, but is called a salad and is quite addicting. Up until now, it's been one of Miami's most closely guarded secrets :).

Number Of Ingredients 4

1 avocado, peeled, pitted and cut into bite sized pieces (Florida, or 2 Haas)
2 -3 bananas, sliced into bite sized pieces
1/4 medium onion, diced
2 -3 tablespoons mayonnaise, approx., just enough to hold it all together

Steps:

  • Combine all ingredients and stir gently until evenly mixed. Refrigerate until chilled or serve at room temperature, your choice.
  • After a time or two, you'll change the proportions to suit your tastes. Enjoy!

1 tablespoon lemon juice
2 medium avocados, peeled and cubed
1 package (5 ounces) spring mix salad greens
5 plum tomatoes, chopped
1/2 cup chopped red onion
1/4 cup chopped walnuts, toasted
LIME DRESSING:
3 tablespoons olive oil
1 tablespoon minced fresh parsley
1 tablespoon minced fresh cilantro
1 tablespoon sour cream
1 tablespoon lime juice
1 teaspoon yellow mustard
1/8 teaspoon salt
1/8 teaspoon pepper
Dash sugar

Steps:

  • Drizzle lemon juice over avocados. In a serving bowl, combine salad greens, tomatoes, onion, walnuts and avocados. Whisk together dressing ingredients; pour over salad. Toss to coat.

I like this recipe as a dip for chips and as a topping for salads, especially a nice grilled salmon salad. I just chopped the vegetables smaller for the salsa.

2 ripe bananas or 2 plantains, coarsely chopped
1 florida avocado, coarsely chopped
2 plum tomatoes, finely chopped
1/4 cup finely diced red onion
1/4 cup finely diced yellow bell peppers or 1/4 cup red bell pepper
1/4 cup finely diced green bell pepper
1 finely diced jalapeno
1 tablespoon white vinegar
2 tablespoons lime juice
2 tablespoons brown sugar
1/2 tablespoon dried cilantro
1 teaspoon chili powder
1/2 teaspoon cumin
garlic powder, to taste
fresh ground sea salt, to taste

Steps:

  • Mix vinegar, lime juice, brown sugar and spices together in large bowl.
  • Add onion, tomatoes and peppers and blend well.
  • Add coarsely chopped banana and avocado and toss.
