Steps:
- Remove peel and pith from the grapefruit using a sharp paring knife. Carefully cut between membranes to remove segments, and place in a medium bowl. Peel the papaya, cut in half, and remove seeds. Slice into pieces about 2 1/2 inches by 1/2 inch thick. Add to the bowl, and toss to combine.
- Slice the avocados lengthwise into 1/2-inch slices and pour the lemon juice over them. Add to the fruit mixture.
- In a small saucepan, warm the maple syrup and lime juice, whisking to combine; set aside to cool.
- Toss the fruits together, and drizzle with the dressing. Serve seasoned with pink pepper, if desired.
GRILLED LOBSTER SALAD WITH AVOCADO AND PAPAYA

- Prepare barbecue (medium-high heat). Place smoke chips in 8 x 6-inch foil packet with open top. Set atop coals 5 minutes before grilling lobsters. Bring large pot of salted water to boil. Working in batches, drop lobsters headfirst into water. Cover; boil 2 minutes. Transfer lobsters to work surface. Immediately split in half lengthwise, using heavy large knife. Crack claws.
- Arrange lobsters, cut side up, on grill. Cover; grill 6 minutes. Turn lobsters over and grill until just cooked through, about 5 minutes. Remove from heat. Remove lobster meat from shells. Cool. Cut meat into 1/2-inch pieces. Transfer to large bowl.
- Whisk oil and next 5 ingredients in medium bowl to blend. Season with salt and pepper. (Can be made 1 day ahead. Cover lobster and dressing separately; chill. Rewhisk dressing before continuing.)
- Add avocados, tomatoes and papaya to lobster in bowl. Pour 1/2 cup dressing over; toss. Season with salt and pepper.
- Toss greens in another large bowl with enough remaining dressing to coat.
- Divide greens among plates. Spoon lobster mixture atop greens and serve.

- Place some the dressing in a large bowl and gently toss the watercress with the dressing, lightly shaking off excess. Remove to a serving dish. Toss the chayote with some dressing and add on top of the watercress. Repeat this process with the papaya, and then the avocado, tossing them in the remaining dressing. Season with salt and pepper and top with fried plaintain slivers.
- In a glass jar with a tight-fitting lid, add all the ingredients and shake vigorously to blend. Refrigerate until ready to use.
SALMON EN PAPILLOTE WITH PAPAYA, MANGO, AND AVOCADO SALAD
Steps:
- Preheat the oven to 350 degrees F.
- In a large bowl, gently toss the salmon fillets with the zest and juice of 1 lemon, lime zest, lime juice, and a pinch of salt. Place 1 salmon fillet in the middle of a piece of parchment paper and top each fillet with equal parts chopped pepper and chopped cilantro. Fold in 2 sides of the parchment paper, then fold in the other sides so that all the edges meet at the top, then twist the edges together to seal. Wrap each piece into a little package. Place the packages onto a sheet pan and cook in the oven for 10 to 15 minutes.
- Meanwhile, to assemble the salad: In a large bowl, combine the mixed greens, avocado, papaya, mango, and fennel. In a small bowl, whisk together the olive oil, remaining lemon juice, Anaheim pepper, and sesame and poppy seeds. Season the salad with salt, and pepper, to taste. Pour the dressing over the fruit and greens and toss to coat.
- Remove the salmon filets from the parchment and serve each filet on top of a mound of salad.
SEARED SHRIMP SALAD WITH AVOCADO, PAPAYA AND GRAPEFRUIT
Steps:
- For shrimp: Combine soy sauce, ginger, garlic, sugar, and red pepper flakes in shallow bowl. Add shrimp, toss to coat. Cover and refrigerate 1 hour. For dressing: Combine lemon juice, vinegar, beaten egg, ginger and garlic in blender or processor and blend. With machine running, add olive oil through top in thin, steady stream and blend until dressing is emulsified and smooth. Mix in sesame oil. Season with salt. Transfer to small bowl. Stir in chives. Taste and adjust seasoning. Heat heavy large nonstick skillet over medium heat. Add shrimp and cook until lightly browned, about 2 minutes. Turn and sear other side, about 1 minute. Cover and keep warm. For salad: Toss greens with enough dressing to coat lightly. Mound in center of 4 large plates. Halve, pit, and peel avocado. Cut each half lengthwise into 8 slices. Arrange avocado and papaya atop greens, alternating in pinwheel design. Arrange 6 shrimp in overlapping cluster in center of each salad; drizzle shrimp lightly with dressing. Arrange grapefruit sections around rims of plates. Serve, passing remaining dressing separately.
AVOCADO AND PAPAYA SALAD
Steps:
- Layer salad with arugula and tarragon, then avocado, papaya and onions. Finally drizzle with vinaigrette.
- To a saucepan add orange juice, split vanilla bean and scrape seeds into juice. Add vanilla bean to juice, bring to a simmer and reduce liquid by 2/3. Meanwhile, smash garlic clove with a pinch of salt using flat side of a knife. Allow orange juice reduction to cool, remove vanilla bean, then add garlic puree, rice wine vinegar and olive oil. Stir well and season with salt and pepper.
FLORIDA LOBSTER SALAD WITH AVOCADO, PAPAYA, AND JADE DRESSING
This mix of lobster, avocado, and papaya is a luxurious alternative to your everyday salad. It's sweet and creamy, perfect in the summer on a hot day. With the exception of cutting the avocado, all of the ingredients for the salad can be prepared ahead of time. Then, assembling the salad becomes a quickie. Leftover jade dressing will keep covered in the refrigerator for up to two days and is fantastic with grilled lamb chops.

- To cook the lobster tails, fill a medium pot three-quarters of the way with water. Add 1 tablespoon salt, the shallot, Old Bay, and bay leaf; bring to a boil over medium-high heat. Carefully put the lobster tails into the boiling water and cook until the shells turn orange, 5 minutes. Using tongs, remove the tails from the pot and put them on a cutting board to cool.
- Turn the lobster tails with the underside (the soft shell side) facing up. With kitchen scissors, cut lengthwise down the center of the shell and pull out the meat. Cut the lobster meat into 1/2-inch chunks. Transfer to a bowl, cover, and refrigerate.
- In a mixing bowl, combine the watercress, avocado, and papaya. Drizzle with the dressing, tossing with your hands to dress the salad lightly and evenly. Season with salt and pepper. Divide the salad equally among 4 large chilled plates. Top with the pickled onions, lobster chunks, and nuts.
- Combine all the ingredients in a blender. Puree on high speed until thick and creamy and the color of jade, roughly 1 minute.
PAPAYA, SHRIMP AND AVOCADO SALAD

- Combine marinade ingredients. Marinate shrimp, refrigerate for two hours. Mix all dressing ingredients in blender or food processor. Chill Arrange greens on 6 individual plates. Remove shrimp from marinate and arrange on top of leaves with alternating slices of papaya, avocato and cucumber in a pinwheel. Sprinkle with walnuts and drizzle with dressing.
