Tonight, I decided to try to re-create my mom's baked fish. I played with it and used some of the herbs my family love. Also, added white wine, because that makes everything taste good. I like to use wine when I cook, sometimes I even put it in the food. Just kidding!

1 1/2 to 2 lb white fish, such as cod or haddock
1 Tbsp olive oil, extra virgin
2 clove garlic, minced
1/2 c onions, chopped
1 c bell green pepper, chopped (or a combination of red, yellow & green)
1 (14.5 o can(s) diced tomatoes, drained
1/2 c white wine
1/2 tsp basil, dried
1/4 tsp oregano, dried
juice of 1/2 lemon
salt and pepper to taste
grated parmesan cheese (optional)

Steps:

  • 1. Preheat oven to 400'F. Spray bottom of a 9x13" baking pan with cooking spray.
  • 2. In a large skillet, heat olive oil over medium heat and add garlic, peppers and onions; cook on medium for about 2 minutes or until slightly softened.
  • 3. Add tomatoes and wine; continue to cook for 10 minutes or until liquid has evaporated and leaves a chunky sauce.
  • 4. Trim fillets by taking off any skin and removing any bones. (Usually they come trimmed and cleaned from the fish section of your grocery store.)
  • 5. Place fish fillets in the prepared baking pan in a single layer; sprinkle with lemon juice, then spoon the tomato mixture over the fish; sprinkle with Parmesan, if desired.
  • 6. Bake, covered, for 15-20 minutes or until fish is opaque all the way through and flakes easily with a fork. Serve immediately.

¼ cup fine dry bread crumbs
2 tablespoons grated Parmesan cheese
1 tablespoon cornmeal
1 teaspoon olive oil
½ teaspoon Italian seasoning
⅛ teaspoon garlic powder
⅛ teaspoon ground black pepper
4 (3 ounce) fillets cod fillets
1 egg white, lightly beaten

Steps:

  • Preheat oven to 450 degrees F (230 degrees C).
  • In a small shallow bowl, stir together the bread crumbs, cheese, cornmeal, oil, italian seasoning, garlic powder and pepper; set aside.
  • Coat the rack of a broiling pan with cooking spray. Place the cod on the rack, folding under any thin edges of the filets. Brush with the egg white, then spoon the crumb mixture evenly on top.
  • Bake in a preheated oven for 10 to 12 minutes or until the fish flakes easily when tested with a fork and is opaque all the way through.

Simple, fast, and delicious describes this baked cod recipe. Bake for two sets of 10 minutes each and you have the perfect ten dinner! This recipe was a favorite request from a local restaurant. They closed after years in business and we are happy to share a version of their most requested recipe. I serve this with rice pilaf and fresh spinach that has been lightly seared in olive oil and garlic. Yummy!

2 tablespoons butter
½ sleeve buttery round crackers (such as Ritz®), crushed
2 tablespoons butter
1 pound thick-cut cod loin
½ lemon, juiced
¼ cup dry white wine
1 tablespoon chopped fresh parsley
1 tablespoon chopped green onion
1 lemon, cut into wedges

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Place 2 tablespoons butter in a microwave-safe bowl; melt in microwave on high, about 30 seconds. Stir buttery round crackers into melted butter.
  • Place remaining 2 tablespoons butter in a 7x11-inch baking dish. Melt in the preheated oven, 1 to 3 minutes. Remove dish from oven.
  • Coat both sides of cod in melted butter in the baking dish.
  • Bake cod in the preheated oven for 10 minutes. Remove from oven; top with lemon juice, wine, and cracker mixture. Place back in oven and bake until fish is opaque and flakes easily with a fork, about 10 more minutes.
  • Garnish baked cod with parsley and green onion. Serve with lemon wedges.

Good olive oil
4 center-cut boneless, skinless cod fillets (6 to 8 ounces each)
Kosher salt and freshly ground black pepper
1/2 cup Ritz cracker crumbs (15 crackers; see Cook's Note)
1/3 cup panko (Japanese bread flakes)
2 tablespoons minced fresh parsley
2 teaspoons minced garlic (2 cloves)
1 teaspoon grated lemon zest
3 tablespoons unsalted butter, melted
1/4 cup dry white wine, such as Pinot Grigio
2 tablespoons freshly squeezed lemon juice
Lemon wedges, for serving

Steps:

  • Preheat the oven to 400 degrees F.
  • Pour 2 tablespoons olive oil in a 9 x 9-inch ceramic baking dish (it should be just big enough to hold the fish) and tilt the dish to coat the bottom with oil. Place the fish fillets in the dish and turn to coat both sides with the oil. Sprinkle the fish with 1 1/2 teaspoons salt and 1/2 teaspoon pepper and bake for 10 minutes.
  • Meanwhile, combine the cracker crumbs, panko, parsley, garlic, lemon zest, and 1 teaspoon salt in a small bowl. Add the melted butter and stir until evenly moistened. Set aside.
  • Remove the fish from the oven and pour the wine and lemon juice directly on the fillets. Pat the crumb mixture evenly onto the fillets, pressing gently to help them adhere. (Don't worry if some crumbs get into the sauce!)
  • Return the pan to the oven for 12 minutes, until the fillets are just cooked through in the center, depending on the thickness of the fish. Sprinkle with salt and serve hot with the pan juices and lemon wedges.

1 cup zesty Italian dressing (in bottles)
1 cup Italian style breadcrumbs
1 tablespoon granulated garlic

  • Preheat oven to 350 F.
  • If you are using Frozen cod defrost and drain all liquid from pouch.
  • Marinade cod in zesty Italian dressing set aside for 30 minute.
  • Combine all dry ingredients in bowl or ziplock bag.
  • Place cod in bowl or ziplock bag to coat.
  • Put cod in non greased baking dish
  • Bake for 35 minute or until done.

AUNT PHYL'S BAKED COD ITALIAN-STYLE RECIPE

Number Of Ingredients 8

6-8 firm fresh cod fish fillets (skin and bones removed)
1 med. red onion
3 T olive oil (more as needed to moisten)
1-2 loaves of day old Italian bread crumbled and oil drizzled over to moisten (not to excess)
2 C fresh Italian flat leaf parsley, finely chopped
8 cloves garlic, peeled and finely minced
salt and pepper to taste
2 C golden raisins, soaked in gin for 4 days (or 30 mins in water) to plump

Steps:

  • Preheat oven to 400. Using a blender or chopper, crumble day old bread to make fluffy bread crumbs, not too fine. In a saute pan, heat 2 T of oil and add onion and garlic. Season w/ salt and pepper, saute over low heat til the onion has wilted and started to turn translucent; be careful not to let it brown. Transfer to a large mixing bowl. Wipe the pan w/ paper towel to clean it, then place it back over low heat and add the remaining oil. Dump the breadcrumbs into the pan and stir to completely coat them w/ oil. Transfer the breadcrumbs to a large mixing bowl and let cool slightly. Mix in the chopped parsley and add the golden raisins to mixture. Salt and pepper. Lay fish fillets in a large foil baking pan and season w/ a bit s/p. Distribute the breadcrumb/herb/raisin mixture evenly on the top of the fish. Drizzle w/ olive oil to moisten. Cover and bake for 25 mins. Remove foil cover and bake for 15 mins longer to brown breadcrumbs.
