1 bag egg noodles, cooked and drained (al dente)
1 can Campbell's Cream of Mushroom Soup
1 can Campbell's condensed cream of chicken soup
1 can chicken (about the size of the large tuna fish container)
1/4 package Velveeta cheese, cubed

Steps:

  • This dish can be made 2 ways.
  • Quickest and easiest: Heat soups, chicken and cheese in pan on stove until cheese is melted, add noodles, heat through.
  • Casserole method: Combine all ingredients in greased casserole, top with croutons, bake at 350 for about an hour.
  • If you like it cheesier, add more.
  • If it looks a little dry, you can add milk to it.

The original recipe calls for the cream to be scalded (heated to just below the boiling point), but I don't see the necessity for this. By all means do it if you like.

2 cups macaroni, uncooked
boiling salt water
1/2 tablespoon butter
1/2 tablespoon flour
1/2 cup cream
1 cup cream cheese, cut up (8 ounces)
3 tablespoons pimiento, finely chopped
1 cup chicken broth, heated
2 cups cooked chicken, diced
salt
pepper

Steps:

  • Preheat oven to 350°F.
  • Cook macaroni in boiling salted water according to package directions. Drain.
  • Melt butter in a skillet.
  • Stir in flour.
  • Add cream and stir until slightly thickened, about 3 minutes.
  • Add cream cheese, pimiento, and chicken broth, and stir until cream cheese melts.
  • Add chicken and macaroni. Stir well.
  • Pour into a lightly greased casserole dish and season with salt and pepper.
  • Bake for 30-45 minutes, or until bubbly.

This is another of my Mom's recipes, another favorite of mine. This dish can be covered with foil and froze until ready to use. Just pop it out of the freezer and sprinkle cheese and top. Bake for about 45 minutes at 375*

1 3 - 4lb chicken cooked (or you can use breast)
1 pkg wide egg noodles
1 can(s) cream of mushroom soup
1 can(s) mushrooms
2 c chopped celery
1/2 lb cheese, shredded
1/2 c chopped onions
1 green pepper, chopped
1 can(s) pimento

Steps:

  • 1. Cook Chicken until tender, shred in small chunks. Drop noodles in boiling water and cook 10 minutes or until tender and drain.
  • 2. Cook onions, pepper, and celery in chicken broth until tender. Cook the vegetables in enough chicken broth to cover...this will keep them from drying out while baking. Mix chicken noodles, 3/4 of the cheese, mushroom soup and mushrooms.
  • 3. Salt & Pepper to taste. Place in Baking dish and bake for 45 minutes in a 375* preheated oven. Stir occasionally. Just before serving sprinkle with remainder of cheese, returning to oven until the cheese has melted

1/3 cup flour
1 teaspoon salt
1/4 teaspoon pepper
1/4-1/2 teaspoon poultry seasoning
3 lbs frying chickens, cut up
1 cup shortening

Steps:

  • In a plastic bag, combine flour, salt, pepper and poultry seasoning.
  • Shake chicken, a few pieces at a time, in flour mixture to coat.
  • Heat oil in large skillet over medium heat; brown chicken.
  • Reduce heat cover and simmer 30 minutes or until chicken is fork tender and juices run clear, removing cover last 10 minutes to crisp chicken.

I got this recipe from a co-worker. This has to be one of the easiest recipes ever. Chicken is roasted in a flavorful orange sauce. It is great with chicken thighs or breasts, bone-in or not. You can't go wrong!

1 cup orange juice
1 tablespoon soy sauce
1 (1 ounce) envelope dry onion soup mix
½ teaspoon garlic powder, or to taste
8 chicken thighs

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • In a small bowl, stir together the orange juice, soy sauce, onion soup mix and garlic powder; set aside. Rinse chicken, and pat dry. Place chicken thighs into a 9x13 inch glass baking dish. Pour the orange juice mixture over.
  • Bake, uncovered, for 1 hour and 30 minutes in the preheated oven, basting every half hour. If using boneless chicken, reduce cooking time to 1 hour.

Comes from 'Adventures in Wine Cookery' (1965), a collection of recipes from California wine makers. As the contributor suggests, it's great party fare. You don't have to tell that there's cream of mushroom or chicken soup in it. This is worth the effort for a special potluck or buffet dinner party. It saves time to cook the chicken the night before making the rest of the recipe, giving the broth time to defat in the fridge. Then you can cut up the cold chicken while you cook the macaroni.

2 (2 -3 lb) chicken
1 cup white wine
salt & pepper
1 1/2 cups small shell pasta
1/2 cup green pepper, chopped
1/2 cup chopped pimiento
2 (4 ounce) cans button mushrooms, drained
1 (10 1/2 ounce) can cream of mushroom soup or 1 (10 1/2 ounce) can cream of chicken soup
4 -5 dashes Tabasco sauce
1 cup cheese cracker crumbs
1 cup cheddar cheese, grated

Steps:

  • Cook chicken in wine and enough water to cover until tender, seasoning with salt and pepper.
  • Pour off and reserve liquid; remove fat; add enough water to make 1-1/2 cups.
  • Cook macaroni and green pepper in chicken liquid for 10 minutes. Drain, reserving liquid.
  • Remove chicken from bones and cut into bite-sized pieces.
  • In a large mixing bowl, combine chicken, cooked macaroni, green pepper, drained mushrooms, soup, chicken liquid, and Tabasco sauce.
  • In an 8x12-in baking dish, layer half the chicken mixture followed by half the cracker crumbs and cheese. Repeat layers, ending with cheese.
  • Bake at 350 degrees until cheese has melted.
