- Pour chicken broth into a pot; bring to a simmer over medium-low heat.
- Heat olive oil in a large saucepan over medium heat. Cook and stir onion and garlic in the hot oil until slightly softened, about 2 minutes. Add Arborio rice; cook, stirring frequently, until coated with oil, about 4 minutes.
- Stir 1/2 cup of the hot chicken broth into the saucepan; cook and stir until the rice has absorbed the broth, about 2 minutes. Repeat this process 4 more times, stirring constantly, until rice is creamy and tender yet firm to the bite, about 15 minutes.
- Stir shrimp and asparagus into the remaining hot broth. Cook until shrimp turns pink, 2 to 3 minutes. Remove broth from heat.
- Stir shrimp and asparagus into the rice; cook for 1 minute. Stir Parmesan cheese and butter into the rice; cook until melted, about 1 minute. Remove rice from heat. Season with salt and pepper. Sprinkle parsley over each serving.

- Select saute setting on a 6-qt. electric pressure cooker. Adjust for medium heat; add oil. When oil is hot, add 3 minced garlic cloves; cook 1 minute. Add shrimp; cook and stir until shrimp begin to turn pink, about 5 minutes. Add 1 tablespoon butter and Italian salad dressing; stir until butter melts. Add asparagus; cook until tender, 3-5 minutes. Remove and keep warm., Warm the remaining 3 tablespoons butter until melted. Add diced onion; cook until tender, 4-5 minutes. Add remaining 6 minced garlic cloves; cook 1 minute. Add rice; cook and stir for 2 minutes. Stir in 1/2 cup wine; cook and stir until absorbed. Add remaining 1/2 cup wine, broth and 1/4 cup cheese. Press cancel. , Lock lid; close pressure-release valve. Adjust to pressure-cook on high for 8 minutes; quick-release pressure. Serve shrimp mixture over risotto. Season with salt and pepper. - Bring broth and water to a simmer in a medium saucepan. Add asparagus and simmer, uncovered, until just tender, about 4 minutes. Transfer asparagus with a slotted spoon to an ice bath to stop cooking, then drain. Keep broth barely simmering, covered.
- Cook onion in 2 tbsp butter with 1/4 tsp salt in a 4 qt heavy saucepan over medium heat, stirring occasionally, until softened, about 5 minutes.
- Add rice and cook, stirring constant;y, 1 minute. Add wine and simmer, stirring constantly until absorbed.
- Stir in 1/2 cup broth mixture and briskly simmer, stirring frequently, until absorbed. Continue adding broth, 1/2 cup at a time, stirring frequently and letting each addition be absorbed before adding the next, until rice is creamy and tender but still al dente (it should be the consistency of thick soup), about 18 minutes. There will be some left-over broth mixture.

- Cook frozen peas, asparagus, carrots and snow peas in large pot of boiling salted water until vegetables are crisp-tender, about 3 minutes. Drain. Transfer vegetables to bowl filled with ice water. Drain vegetables and set aside.
- Heat 3 tablespoons oil in heavy large skillet over medium-high heat. Add shrimp and sauté until pink and cooked through, about 1 1/2 minutes. Transfer shrimp to medium bowl. (Vegetables and shrimp can be prepared up to 1 day ahead. Cover each separately with plastic wrap and then refrigerate.)
- Heat remaining 3 tablespoons oil in heavy large pot over medium-high heat. Add onion and shallots and sauté until soft, about 5 minutes. Stir in couscous and tomatoes. Add wine and simmer until liquid is reduced by half, stirring often, about 10 minutes. Add vegetable stock and simmer until liquid is reduced by half and couscous is just tender, stirring often, about 8 minutes. Mix in reserved vegetables and whipping cream. Cook couscous over medium heat until mixture thickens and is creamy, about 3 minutes.
- Stir Parmesan, butter and parsley into risotto. Add shrimp and mix until heated through and butter and cheese are melted and well blended, about 2 minutes. Season risotto to taste with salt and pepper. Divide risotto among 8 bowls and serve.

- If using shrimp, use 2-3 large pieces per serving. Remove the tail, place in a small bowl and drizzle with a little olive oil, a splash of white wine, a squeeze of lemon juice, one small clove of freshly minced garlic, and a little salt and pepper and set aside. Heat chicken stock in medium saucepan. In a separate saucepan, heat garlic and and shallots in olive oil over medium-low heat, stirring frequently, until fragrant. Add rice and stir to coat for a few seconds. Add wine and a half cup of chicken stock. Stir frequently until liquid is mostly absorbed, then add another half cup of stock and saffron. Allow to absorb, and then add another half cup of stock, repeating the process until the stock has been mostly absorbed (about 20-25 minutes). Rice should be tender but slightly firm, and risotto should have a thick creamy consistency. Meanwhile (within 10 minutes of the risotto being ready): In a small skillet, heat about 1 Tbsp olive oil, and 1 small pat of unsalted butter. Saute the asparagus until just al dente--about 7 minutes. Set aside. In the same pan, cook the shrimp until pink-- about 2 minutes per side. Once the risotto is finished, remove from heat and stir in lemon juice**, lemon zest, parmigiano reggiano, asparagus and frozen peas. Add salt to taste. Garnish with grated cheese and lemon zest. Top with shrimp, if serving. **add about 1/2 the lemon juice, and taste. Add more, if you prefer for the lemon citrus taste to come through.

- Put asparagus into a large skillet of salted, boiling water.
- Return to a boil; boil about 3 minutes or until tender-crisp.
- Drain well; spread on paper towel to cool.
- Cut into 1-inch lengths; set aside.
- In a small saucepan, bring broth to a simmer; reduce to lowest heat and keep warm.
- In a larger saucepan, sauté shallot in olive oil over medium heat for about 3 minutes or until soft.
- Stir in rice to coat.

- Deglaze with white wine, stirring constantly.

- Blanch the asparagus and shock in ice water to stop the cooking process. Once cool, cut the asparagus into bite sized pieces and set aside.
- In 3-quart skillet, add the butter, olive oil, shallot, and garlic over low-medium heat. Gently saute for 2 minutes.
- Add arborio rice. Saute ingredients until the rice begins to turn translucent, leaving a white dot in the middle.
- Once the rice begins to turn translucent, add the white wine and sun-dried tomatoes, then saute on medium for 2 minutes.
- Slowly (1/4 cup at a time) add stock to the rice. Once the rice has soaked up the majority of the liquid in the skillet add more. This is a slow process, and can easily take 30 minutes (or more) to go through all the liquid. Warning: If you add too much liquid too quickly you may end up with a risotto that is not as creamy as it should be.
- When you've reached the point where you've added 3 1/2 cups of stock to the rice, add the asparagus, parmesan cheese, and red pepper flakes.
- Once the rice has become a nice, creamy, and tender texture (sample the rice, and it should be tender, without any crunch but still firm), add your shrimp with the last 1/4 cup of stock, and cook until shrimp are thoroughly cooked, but tender, and almost all liquid is absorbed. This should take 3-5 minutes. Also at this time, add the juice of one half of a lemon.
- Salt and pepper to taste.

- 1. SHRIMP In a medium bowl or large ziplock bag, add the raw, peeled shrimp. Set aside.
- 2. In a blender, add the honey, mustard, garlic, olive oil, lemon juice and salt n' pepper. Blend until smooth and combined. Pour the marinade over the shrimp, and place in refrigerator for at least an hour.
- 3. RISOTTO Warm the broth, and set aside....keep warm. In a large pot, over medium heat, saute the asparagus and mushrooms in a 1 tsp of olive oil, about 5-7 minutes. Transfer to bowl and set aside.
- 4. In same pot, add another tsp of oil and saute the onions and garlic for about 2 minutes. Add the rice and cook another 2 minutes, stirring constantly.
- 5. Add the wine and cook until wine has evaporated fully. In portions, begin to add the broth slowly; approximately 1/4 cup at a time. Cook until absorbed completely, stirring constantly. Then add more broth, repeating process until all broth is used and absorbed. This takes approximately 20 minutes.
- 6. Add the mushrooms, asparagus, parmesan cheese, lemon zest and juice. Gently stir to combine. Season with salt and pepper. Cover risotto and keep warm.
- 7. Meanwhile, skewer the shrimp, and heat the grill to medium. Grill shrimp for approximately 2 minutes per side.
- 8. Remove shrimp from skewer. Place risotto in a bowl, top with 4-6 shrimp, garnish with parsley, and serve. Enjoy!

RISOTTO WITH CHERRY TOMATOES, ASPARAGUS, ARTICHOKES, CORN, AND SHRIMP WITH A TOMATO MARMALADE

- risotto base -Bring stock to a low simmer in a medium pot. Heat oil in a medium saucepan over medium heat for 1 minute. Cook onion until translucent, about 3 minutes. Add rice and a pinch of salt. RISOTTO WITH SHRIMP, ASPARAGUS, AND PEAS

- In a saucepan over medium heat, bring the stock to a gentle simmer and maintain over low heat. In a large, heavy saucepan, heat the oil over medium heat. Add the onion and sauté until softened, about 4 minutes. Add the rice and stir until each grain is well coated with oil and translucent with a white dot in the center, about 3 minutes. Add the wine and stir until it is completely absorbed. Add the simmering stock a ladleful at a time, stirring frequently after each addition. Wait until the stock is almost completely absorbed (but the rice is never dry on top) before adding the next ladleful. After 10 minutes of cooking, add the asparagus. When the rice is almost tender and looks creamy, after about 20 minutes, add the peas and shrimp. (If a softer rice is desired, continue to cook and add broth until you reach the desired level of tenderness.) Cook a few more minutes, until the shrimp are pink and the peas are heated through; remove from the heat and stir in the Parmesan. Season to taste with salt and pepper and serve at once.
ASPARAGUS RISOTTO WITH PAN-SEARED SHRIMP

- In a 3 or 4 quart saucepan, heat 1 tablespoon butter on medium heat. Add the shallots and cook for a minute or two, until translucent. Add the rice and cook for 2 minutes more, stirring until nicely coated. While the shallots are cooking, bring the stock to a simmer in a saucepan. Add the wine. Slowly stir, allowing the rice to absorb the wine. Once the wine is almost completely absorbed, add 1/2 cup of hot stock to the rice. Continue to stir until the liquid is almost completely absorbed, adding more stock in 1/2 cup increments. Stir often to prevent the rice from sticking to the bottom of the pan. Continue cooking and stirring rice, adding a little bit of broth at a time, cooking and stirring until it is absorbed, until the rice is tender, but still firm to the bite, about 20-25 minutes. With the last ladle of stock, add the asparagus. Turn off the heat. (Note the stock amount given is approximate. You may need a little more or less. If you end up needing more stock and you find yourself without, just use water). Gently stir in the Parmesan cheese and the remaining 1 tablespoon butter. Add salt and pepper to taste. As the risotto is finishing up. Heat a pan over medium heat with 1/2 tablespoon butter and 1 tablespoon olive oil. Salt and pepper the shrimp then add the garlic and the red pepper flakes if you'd like. Sear the shrimp on each side (about two minutes or until they start to curl, forming a letter C). Plate the risotto with 3 pieces of shrimp on top and serve immediately. Serve with a slice of lemon to be squeezed over top for a nice touch of acidity.
ASPARAGUS BUTTER RISOTTO WITH SHRIMP

- To make the asparagus butter: Place 2 Tbs. butter, the asparagus stems, and the basil in a food processor fitted with a steel blade and puree. Set aside. To make the risotto: Place a large, straight-sided, non reactive stainless steel, nonstick, or lined copper saucepan over medium-high heat and, when it is hot, add the remaining 1 Tbs. butter. Add the garlic and leek and cook until they are transparent and soft, about 7 to 10 minutes. Add the rice and stir until it is well coated. Add the wine and cook until it has been absorbed. Add 2 cups chicken broth, 1 cup at a time, stirring with each addition, until all the liquid as been absorbed, about 10 minutes. Add the asparagus tips, shrimp, and remaining 2 cups chicken broth and cook until all the liquid has been absorbed. Add the asparagus butter, Parmesan cheese, salt and pepper, stirring well after each addition, and cook for 1 to 2 minutes. Divide the risotto among 4 shallow bowls and serve immediately, garnished with rosemary sprigs.

- Slice the shallots thinly then saute in a little of the olive oil slowly. Add the white wine and then add the rice while stirring with a spatula. Let the wine evaporate.
- Add a pinch of salt and the vegetable stock and cook over a slow fire for 18 minutes or so. Stir frequently.
- Cut the asparagus fine. [Save the tips to a nice size. You are going to garnish the recipe with cooked tips] Add it and the red pepper to the risotto. Cook for several minutes. Asparagus should be tender but not soft. Then add the cheese and the Stella Artois.
- Salt and pepper to taste.
- Cook the shrimp in a nonstick pan in olive oil. Saute on both sides. When cooked place on a small wooden skewer.
- Serve the shrimp beside the Risotto.
- Garnish with Asparagus tips.

- 1. Prepare a large bowl of ice water. In a pot, bring a couple of inches of salted water to a boil. Cook the asparagus for 2 minutes. Using a spider or slotted spoon, transfer the asparagus to the ice water to cool. Drain and pat dry. 2. In a medium saucepan, warm the stock and saffron over low heat. 3. In a round-bottomed saucepan, heat 2 tbsp. olive oil, two turns of the pan, over medium-high. When the oil begins to smoke, add the pancetta. Cook, stirring often, until the fat renders, about 2 minutes. Add the onion, 2 garlic cloves, and black pepper; season with salt. Cook, stirring often, until the onion is soft, about 2 minutes. Add the rice and stir until coated, about 1 minute. Add the wine and stir until absorbed, 1 to 2 minutes. Add the warm stock, a few ladlefuls at a time, stirring vigorously after each addition. From the time you start adding the stock, the risotto should take exactly 18 minutes to cook. 4. When the risotto has been cooking for 15 minutes, heat the remaining 2 tbsp. oil, two turns of the pan, in a medium skillet over medium-high to high. Add the shrimp; season with salt, the thyme, crushed red pepper, and the remaining 2 garlic cloves. Cook, tossing, until the shrimp are almost cooked through, about 3 minutes. Add the vermouth. Cook, swirling the pan, until the shrimp are cooked through, about 1 minute. Add the parsley, lemon juice, and 1 tbsp. butter. Remove from heat. 5. When the risotto has been cooking for 18 minutes, stir in the remaining 2 tbsp. butter, the Parm, and asparagus. Ladle the risotto into shallow bowls. Top with the shrimp.
LEMONY RISOTTO WITH ASPARAGUS AND SHRIMP
When life gives you lemons, make risotto. The clean, citrusy spark brightens both the asparagus and the shrimp (though you can omit the shrimp to turn this from a main course into a side dish).

Steps:
- Bring broth and water to a simmer in a medium saucepan. Add asparagus
- and simmer, uncovered, until just tender, about 4 minutes. Transfer asparagus
- with a slotted spoon to an ice bath to stop cooking, then drain. Keep broth at a bare simmer, covered.
- Cook onion in 2 tablespoons butter with 1/4 teaspoon salt in a 4-quart heavy saucepan over medium heat, stirring occasionally, until softened, about 5 minutes.
- Add rice and cook, stirring constantly,
- minute. Add wine and simmer, stirring constantly, until absorbed.
- Stir in 1/2 cup broth mixture and briskly simmer, stirring frequently, until absorbed. Continue adding broth, 1/2 cup at a time, stirring frequently and letting each addition be absorbed before adding the next,
- until rice is creamy and tender but still
- al dente (it should be the consistency
- of a thick soup), about 18 minutes.
- (There will be leftover broth mixture.)
- Stir in shrimp and cook until just cooked through, 2 to 3 minutes.
- Stir in asparagus, zest, remaining 2 tablespoons butter, parmesan, parsley, and pepper to taste. (Thin risotto with some of remaining broth if necessary.)
LEMON RISOTTO W/SHRIMP & ASPARAGUS
Steps:
- Pour the chicken stock into large saucepan & bring to boil over high heat. Reduce heat to low, cover & keep hot. Fill small saucepan w/water & heat over high heat until boiling. Lower heat, cover & keep hot. Place medium saucepan on stove & bring to boil. when the water is at rolling boil, add salt. Add asparagus & simmer, uncovered, until just tender, about 4 mins. Transfer asparagus with slotted spoon to ice bath to stop cooking, then drain. In another medium saucepan, heat oil with 1 tbsp butter over moderately high heat until butter foams. When foaming subsides, add shrimp & red pepper flakes. Season lightly with salt & cook, stirring occasionally, until shrimp are pink & opaque, about 6-8 mins. Transfer to medium mixing bowl using slotted spoon or spider. Set aside. Pour off all but 2 tbsp fat & return to saucepan to low heat. Add shallots & rice & cook, stirring constantly until rice is evenly coated w/fat & shallots are soft, about 3-4 mins. Increase heat to medium & add wine to rice. Cook until rice is almost dry, about 3-4 mins. Using a ladle, add about 1 cup of hot stock to the rice. Cook, stirring constantly with a wooden spoon, over medium heat until stock is almost fully absorbed. Add remaining stock, 1/2 cup at a time, stirring constantly & adding more stock only after previous addition has been absorbed, until the rice begins to pull away from sides of pan, about 16-20 mins. Adjust heat so rice simmers rapidly throughout the cooking. Use boiling water if stock has been used & rice requires more cooking time.The risotto is done when it is creamy & the grains are plump and tender with a slight resistance to the bite. Remove from heat & stir in remaining 1 tbsp butter, shrimp, asparagus, parmesan & lemon zest. Taste & season with salt, white pepper, & additional lemon zest as desired. If thick, use water to thin.
