- Preheat the oven to 375 degrees.
- Unroll each pastry sheet onto a clean work surface. Take a chopped asparagus piece and measure out a little less than the width of it on the pastry sheet and cut the sheet into long, thin strips. Divide the strips into 3-inch pieces.
- To assemble, wrap the dough around the asparagus piece. Press the seam with your fingers to seal, and then set it seam side down on a baking sheet greased with cooking spray.
- Add 2 tablespoons of water to the beaten eggs and whisk quickly to combine. Using a pastry brush, brush each asparagus piece with the egg wash, then bake in the oven until the puff pastry is cooked and golden brown, about 15 minutes.

- Heat oven to 375. Divide dough into 4 equal pieces. On a lightly floured surface with lightly floured hands flatten the 4 pieces of dough to about 1/4" thick.Make 4 gundles of asparagus, 2 or 3 stalks to a bundle. Cut them in half crosswise. (You'll have 4 to 6 pieces per bundle.) Lay each asparagus bundle along one side of a piece of dough. Cover asparagus with a tomato slice, then layer cheese over it. Roll dough, starting with side closest to fillings to form the blanket, ending seam side down. Line a baking sheet with parchment paper or foil lightly coated with olive oil. - Preheat Oven to 400˚F with the rack in the center. Butter a 9x13 casserole dish. Arrange trimmed asparagus in prepared casserole dish, packing it down for a fairly flat and even surface.
- Place a saucepan over medium heat. Melt in 3 Tbsp butter then add 2 1/2 Tbsp flour and whisk constantly for 3 minutes or until butter just starts to turn golden in color. Whisk in 2 cups half and half, 2 tsp garlic salt and 1/4 tsp black pepper. Whisk until sauce just starts to thicken then remove from heat. Sprinkle in 1/2 cup parmesan and whisk until cheese is melted and incorporated.
- Pour sauce evenly over the asparagus, leaving about 1" space on the long sides of the casserole dish. Bake uncovered at 400˚F for 15-18 minutes (depending on thickness of asparagus), or until asparagus reaches desired tenderness.
- While the casserole is baking, make the topping: in a small mixing bowl, melt 1 Tbsp butter. Mix in 1/2 cup bread crumbs, stirring until evenly moistened, then stir in 1/2 cup remaining parmesan cheese. Halfway through baking, sprinkle the bread crumb topping evenly over the casserole then return it to the oven to finish baking.
- When asparagus has reached desired doneness, set oven to broil for 2-3 minutes or until bread crumbs are golden brown. Remove from oven and serve.

- 2. Spread each slice generously with hollandaise or mayonnaise.
- 3. Place 2 asparagus spears diagonally on each and sprinkle with shredded cheese.
