SWEET TEA MOJITO

- Steep 4 or 5 black tea bags, 2 cups turbinado sugar and 2 handfuls of fresh mint in 3 cups simmering water for 5 minutes, stirring to dissolve the sugar. Strain into a pitcher; add the juice of 3 limes, 1 1/2 cups light rum, 1 cup cold water and another handful of mint. Stir vigorously, crushing the mint with a wooden spoon; chill. Serve over ice with lime and more mint.
GREEN TEA MOJITO

- Muddle mint leaves and ice in a cocktail shaker. Add green tea, lime juice and simple syrup into the shaker and shake well. Pour into a glass and top off with club soda. Garnish with a sprig of mint. Serve with a big smile!
MOJITO ICED TEA
This cold-brewed iced tea comes from Maricel Presilla, who serves it at her Latin restaurant Zafra in Hoboken, N.J. Oolong tea scented with osmanthus flowers, or with a sliced peach and its pit, suggests the sweet aroma of white rum. Fresh mint, lime and lemon balm are added and it sits for at least 4 hours or overnight. Sweeten with sugar and serve over ice.

- Place 6 cups water, mint sprigs, slices of 1 lime, tea, lemon balm and peach with pit, if using, in a large bowl or pitcher. Let rest for at least 4 hours or preferably overnight. Strain into a clean pitcher and sweeten with sugar to taste. Stir in ice and serve garnished with mint sprigs and lime slices.

- Place tea bags and mint sprigs in a large heat-proof measuring cup. Pour boiling water over tea bag mixture and cover measuring cup with a small plate. Steep tea until desired strength is reached, 15 to 20 minutes. Pour steeped tea through a strainer into a large mason jar, squeezing excess liquid from tea bags. Discard mint and tea bags.n
- Stir sugar into tea until dissolved; add lemon juice, lime juice, and vanilla extract. Stir cold water into tea mixture. Place lid on the jar and refrigerate until completely chilled, 2 hours to overnight.n

- 1.Muddle (crush) together the mint leaves, lime wedges and sour apple schnapps in a glass using the handle of a wooden spoon. Add lemon rum and pineapple juice; shake well and pour over ice. Top with club soda.
THE REAL MOJITO
This is an authentic recipe for mojito. I sized the recipe for one serving, but you can adjust it accordingly and make a pitcher full. It's a very refreshing drink for hot summer days. Be careful when drinking it, however. If you make a pitcher you might be tempted to drink the whole thing yourself, and you just might find yourself talking Spanish in no time! Tonic water can be substituted instead of the soda water but the taste is different and somewhat bitter.

- Place mint leaves and 1 lime wedge into a sturdy glass. Use a muddler to crush the mint and lime to release the mint oils and lime juice. Add 2 more lime wedges and the sugar, and muddle again to release the lime juice. Do not strain the mixture. Fill the glass almost to the top with ice. Pour the rum over the ice, and fill the glass with carbonated water. Stir, taste, and add more sugar if desired. Garnish with the remaining lime wedge.
