4 salmon fillets (6 ounces each)
1 tablespoon butter
2 tablespoons brown sugar
2 tablespoons reduced-sodium soy sauce
2 tablespoons Dijon mustard
1 tablespoon olive oil
1/2 teaspoon pepper
1/8 teaspoon salt
1 pound fresh green beans, trimmed

Steps:

  • Preheat oven to 425°. Place fillets in a 15x10x1-in. baking pan coated with cooking spray. In a small skillet, melt butter; stir in brown sugar, soy sauce, mustard, oil, pepper and salt. Brush half of the mixture over salmon., Place green beans in a large bowl; drizzle with remaining brown sugar mixture and toss to coat. Arrange green beans around fillets. Roast until fish just begins to flake easily with a fork and green beans are crisp-tender, 14-16 minutes.

Beautifully seasoned salmon on a bed of veggies which I also served on a bed of Shirataki (Pronounced SHE-RAH-TAH-KEE)fettuccine noodles that LOW CARB FOOD!: containing 3g of carbohydrate per serving. LOW CALORIE: 20 cal / 4 oz. NO CHOLESTEROL, NO SUGAR, GLUTEN-FREE, DAIRY-FREE, CONTAINS 10% CALCIUM. The only added oil in this recipe is the teaspoon of sesame oil keeping it low in fat. Yes salmon is high in fat but it's a great fat so do eat and enjoy this healthy meal! This is a quick moving recipe so have all ingredients prepared as called for.

1/3 cup sweet onion, diced
1/2 teaspoon ginger paste
2 -4 garlic cloves, minced
1 teaspoon sesame oil
1 teaspoon soy sauce
1 tablespoon honey
2 lbs salmon fillets (cut into 8 fillet slices)
1 teaspoon cornstarch
1/2 cup water
1 teaspoon sesame oil
1/2 lb fresh french beans (trimmed and microwave for 4 minutes, place in ice bath)
1 green pepper (sliced)
1 small onion (sliced)
2 garlic cloves, Minced
1 teaspoon soy sauce
2 tablespoons hoisin sauce
rice (optional) or noodles (optional)

Steps:

  • Place all marinade ingredients in large zip lock bag and mix.
  • Add fillets and toss to coat. Place in refrigerator for 1 hour.
  • Mix cornstarch and water set aside.
  • Heat grill pan and large wok or large pan to medium high heat.
  • Remove salmon from marinade reserving the marinade for the beans.
  • In heated non stick grill pan sear salmon 2 minutes.
  • Meanwhile in a large heated wok add sesame oil, beans, peppers, onion and garlic stir fry for 2 minutes.
  • Flip salmon and cook till desired.
  • To the beans add reserved marinade, soy sauce and cornstarch/water mixture. Stir frying for 2 more minutes then add hoison sauce toss to coat.
  • Remove beans to serving plate and top with salmon.
  • Optional:.
  • If serving on a bed of cooked rice or the noodles as I suggested toss them in the pan that the beans were cooked in, to coat the noodles from the sauce that remained in the pan adding a touch of water to the pan if needed.
  • Plate then top with beans and salmon.
  • Garnish with sesame seeds if desired.

ASIAN-STYLE SALMON OR TOFU



Asian-Style Salmon or Tofu image

Came from my nutritionist. When you're running really short on time, you can substitute the from-scratch sauce with your favorite Asian dressing (just check the ingredients to make sure there's no high fructose corn syrup!). You can substitute the salmon fillets for firm tofu. If you do that, make sure you marinate the tofu in the dressing for about 2 hours.

1 small bok choy, thickly sliced
1 red bell pepper, thinly sliced lengthwise
24 ounces salmon fillets, preferably 4 fillets each at 6 ounces
1/2 teaspoon pepper
3 scallions, thinly sliced diagonally
3 tablespoons low sodium soy sauce
1 1/2 teaspoons rice vinegar
1 1/2 teaspoons sesame oil
2 teaspoons grated gingerroot

Steps:

  • Heat oven to 400.
  • Tear off four 15-inch squares of parchment paper. Arrange them evenly on baking sheets.
  • Divide the bok choy and bell pepper evenly on the squares.
  • Place the salmon (or tofu) on top of the vegetables and sprinkle with pepper. Top each square with scallions.
  • In a small bowl, combine soy sauce, rice vinegar, sesame oil, and ginger. Spoon the mixture over the salmon or tofu.
  • Top with another 4 squares of parchment paper and fold the edges over several times to seal.
  • Bake for 15 minutes. When done baking, slit the parchment paper to open and serve, being cautious of the hot steam.
  • For Vegetarian use only the Tofu.

I originally was going to make an Asian Salmon recipe that I saw on Barefoot Contessa, however after reading the reviews, I decided against it. Instead, I improvised by changing some of the ingredients, cooking time and style. It ended up coming out fabulous! I love this since it's healthy, full of flavor and incredibly easy.

1 1/2 lbs fresh salmon
1/3 cup soy sauce
1/4 cup teriyaki sauce
2 tablespoons olive oil (sesame preferred) or 2 tablespoons sesame oil (sesame preferred)
2 tablespoons honey
1 tablespoon chili-garlic sauce
2 scallions, chopped thin
1 teaspoon ground ginger

Steps:

  • Add Tinfoil to baking dish, place Salmon in baking dish.
  • Mix all other ingredients in a bowl.
  • Pour ingredients over Salmon and fridge/marindate for 20 minutes.
  • Pre-heat oven to 425.
  • Cook Salmon, uncovered for 12-15 minutes, basting the fish with the sauce at least once.

Hummus-Crusted Alaskan Wild King Salmon Over a Bed of French Beans, Red Onion, and Cucumber Salad with Lemon Oil image

For the lemon oil
2 lemons, scrubbed
4 garlic cloves, sliced
2 tablespoons sliced shallots
1 1/4 cups olive oil
1/4 teaspoon kosher salt
Pinch of coarse grind black pepper
For the hummus
1 1/4 cups canned chickpeas, rinsed and drained
1 teaspoon minced garlic
2 tablespoons tahini
1 tablespoon lemon juice
1/4 teaspoon kosher salt
Pinch of coarse grind black pepper
1/4 cup olive oil
For the salad
1 cucumber, peeled, seeded, and sliced
1/2 red onion, cut into thin half-moons
1/4 pound haricots verts (thin green beans), blanched and refreshed in cold water
4 teaspoons chopped fresh parsley
For the fish
5 tablespoons fine-ground cornmeal
2 tablespoons all-purpose flour
1/2 teaspoon fine sea salt
4 (9- to 10-ounce) wild king salmon fillets, skin on
Soybean oil
Kosher salt
4 teaspoons panko or coarse dry bread crumbs

Steps:

  • To make the Lemon Oil:
  • Cut the lemons in half and squeeze the juice into a small saucepan. Drop in the juiced lemon halves and add the garlic, shallots, oil, salt, and pepper. Bring to a boil, then reduce the heat and simmer gently for 30 minutes. Transfer to a bowl and cool to room temperature, then cover and refrigerate overnight. (If you haven't planned ahead, just let the oil sit at room temperature for 30 minutes.) Strain the oil, pressing down hard on the solids before discarding them. Taste for salt. Lemon oil will keep, covered and refrigerated, for 2 weeks.
  • To make the Hummus:
  • Put the chickpeas, garlic, tahini, lemon juice, salt, and pepper into a food processor and pulse until the chickpeas are coarsely chopped. Scrape down the sides of the bowl. Turn the processor on again and drizzle in the oil. Process until the hummus is smooth, scraping down the sides of the bowl as needed. Scrape the hummus into a bowl, cover it, and set it aside at room temperature until needed, or cover and refrigerate for up to 1 day. Bring the hummus back to room temperature before you use it.
  • To make the Salad:
  • Combine the cucumber, onion, and haricots verts in a bowl. Cover and refrigerate until needed.
  • To make the Fish:
  • Position an oven rack 6 inches from the broiler and heat the broiler. Brush a baking sheet with oil and slide it under the broiler to heat for 5 minutes.
  • Put the cornmeal, flour, and sea salt in a shallow bowl and whisk to combine. Dip the skin side of the salmon into the breading mix and set it, skin side down, on the baking sheet. Brush the fish with oil and salt it lightly. Broil the fish for 1 1/2 minutes. Change the oven setting to 500°F and bake the fish for 7 1/2 minutes.
  • Remove the baking sheet from the oven. Adjust the oven rack so it's about 3 inches from the broiler and turn the broiler back on. Spread the top of each fillet with one-quarter of the hummus. Use the back of a spoon to make peaks in the hummus (the uneven surface will give you better browning), and sprinkle each fillet with 1 teaspoon panko. Slide the baking sheet back into the oven and broil until the hummus is browned, about 2 1/2 minutes.
  • To serve, divide the salad among 4 dinner plates, spreading it out in the center of each plate. Sprinkle each salad with 1 teaspoon parsley and drizzle with 1/4 cup lemon oil. Set the salmon on top of the salad and serve.
