TERIYAKI CHICKEN FOIL PACKETS (MEAL PREP)



Teriyaki Chicken Foil Packets (Meal Prep) image

These Teriyaki Chicken Foil Packets are filled with a sweet and savory Asian glazed chicken, broccoli, edamame, green beans, pineapple and bell peppers. Throw them on the grill or in the oven to cook and serve with some rice or your favorite side dish.

heavy duty foil (plus parchment paper if preferred)
4 boneless skinless chicken breasts (pounded to even thickness)
1 Tablespoon olive oil
salt and pepper (to taste)
1 cup broccoli florets
1/2 cup green beans
1/2 red bell pepper (chopped)
1/4 cup pineapple chunks (optional)
1 cup edamame beans (defrosted (optional))
3/4 - 1 cup teriyaki sauce (homemade recipe below or your favorite store-bought)
Lunch Containers
Your favorite side: quinoa, rice, or potatoes
1/4 cups low sodium soy sauce
4-5 Tablespoons honey (depending on how sweet you like it)
4 Tablespoons rice wine vinegar
1-1/2 teaspoons sesame oil (plus more for drizzling on vegetables)
3 garlic cloves (minced)
3/4 teaspoon grated or ground ginger
1 Tablespoon cornstarch
3 Tablespoons water
salt and black pepper (to taste)

Steps:

  • Preheat grill to medium-high heat or the oven to 425 degrees F.
  • Cut four 18 x 12-inch squares of foil* and layout on a flat surface.
  • If making the Homemade Teriyaki Sauce:
  • In a saucepan over medium heat, whisk together soy sauce, honey, vinegar, sesame oil, garlic, ginger, cornstarch, and water until combined. Bring to a simmer, stirring frequently, until sauce thickens and bubbles. Remove from heat and set aside.
  • Place one chicken breast in the middle of each piece of foil and divide the vegetables evenly into each packet, arranging them around the chicken.
  • Drizzle the chicken and vegetables with olive oil and season with salt and pepper to taste.
  • Brush teriyaki sauce on both sides of the chicken and vegetables - reserving enough for later.
  • Fold the foil over the chicken and seal to close off the packets.
  • If cooking on the grill
  • Place foil packets onto grill and grill for 7-8 minutes, then flip over and grill for an additional 6-8 minutes (depending on the thickness of the chicken) or until chicken is cooked through.
  • Remove from the grill and carefully open the foil packets.
  • If cooking in the oven Place foil packets on a baking sheet and cook for 25-30 minutes (or until chicken is cooked through, rotating tray once). Time varies depending on the thickness of the chicken. Remove baking sheet from oven.
  • Brush chicken with reserved sauce and top with sesame seeds and green onions (if desired) and serve immediately with quinoa, rice or your favorite side.
  • For meal prep Divide chicken and vegetables into lunch containers. Add your favorite side.

14 ounces skinless, boneless chicken breast meat - cut into bite-size pieces
½ cup oyster sauce
2 tablespoons soy sauce
3 tablespoons vegetable oil
2 cloves garlic, minced
1 large onion, chopped
½ cup water
1 teaspoon ground black pepper
1 teaspoon white sugar
1 (8 ounce) can sliced water chestnuts, drained
1 cup snow peas
1 small head broccoli, cut into florets
3 tablespoons cornstarch
¼ cup water

Steps:

  • Combine the chicken, oyster sauce, and soy sauce in a mixing bowl until the chicken is evenly coated with the sauce; set aside.
  • Heat the vegetable oil in a wok or large skillet over high heat. Stir in the garlic and onion; cook and stir until the onion is limp, about 1 minute. Add the chicken and marinade. Cook and stir until the chicken has browned and is no longer pink, about 10 minutes.
  • Pour in 1/2 cup of water; season with pepper and sugar. Add the water chestnuts, snow peas, and broccoli. Cover; boil until the vegetables are just tender, about 5 minutes. Dissolve the cornstarch in 1/4 cup of water. Stir into the boiling mixture; cook until thick and no longer cloudy.

1/3 cup dry sherry or 1/3 cup vermouth
3 tablespoons low sodium soy sauce
2 teaspoons sesame oil
1/4 cup green onion, finely chopped
1 teaspoon ginger, freshly grated
1 teaspoon garlic, finely chopped
4 boneless chicken breast halves, cut into 1/2-inch strips
1 red bell pepper, sliced
1 (10 ounce) package snow peas
1 (10 ounce) package broccoli florets
1 (5 ounce) can water chestnuts
aluminum foil, for packets

Steps:

  • Preheat oven to 450 degrees or the grill to medium-high.
  • Mix the sherry or vermouth, soy sauce, oil, onions, ginger, and garlic in a small bowl.
  • Add the chicken, pepper, peas, broccoli and water chestnuts to the mixture and toss until evenly coated.
  • Center 1/4 of the chicken mixture on each of four 12 inch X 18 inch sheets of heavy-duty aluminum foil.
  • Bring up sides of foil; double fold the top and ends to seal packets.

2 skinless, boneless chicken breast halves - cut into cubes
1 teaspoon ground ginger
1 teaspoon ground black pepper
1 teaspoon garlic salt
1 tablespoon sesame oil
1 cup broccoli florets
1 red bell pepper, sliced
½ cup sliced mushrooms
1 tablespoon cornstarch
½ cup water
1 tablespoon vegetable oil
½ cup cubed jicama
1 tablespoon brown sugar
1 tablespoon honey
1 tablespoon toasted sesame seeds
1 tablespoon chopped toasted peanuts

Steps:

  • Mix chicken with ground ginger, black pepper, garlic salt, and sesame oil in a bowl; cover and refrigerate for 30 minutes.
  • Bring a pot of salted water to a boil. Cook broccoli, bell pepper, and mushrooms in the boiling water until broccoli is just tender, about 3 minutes; drain.
  • Whisk cornstarch and 1/2 cup water together in bowl.
  • Heat vegetable oil in a large skillet or wok over medium-high heat. Cook and stir chicken until lightly browned, about 5 minutes.
  • Stir cooked vegetables, jicama, brown sugar, and honey into chicken. Add cornstarch mixture and continue cooking and stirring until chicken is no longer pink in the center, about 5 minutes more.
