1/2 cup peanut oil
1/3 cup reduced-sodium soy sauce
1/3 cup rice vinegar
1 tablespoon sugar
1 tablespoon oriental sesame oil
1/2 teaspoon dried crushed red pepper
12 ounces cooked peeled deveined medium shrimp
2 red bell peppers, cut into 1/2-inch pieces
2 large broccoli stalks, stems peeled and thinly sliced, florets reserved
12 ounces bow-tie pasta
8 green onions, chopped

Steps:

  • Whisk first 6 ingredients in small bowl to blend. Season dressing to taste with salt and pepper.
  • Transfer half of dressing to large bowl. Mix in shrimp and bell peppers; let marinate 15 minutes.
  • Cook broccoli stems and florets in large pot of boiling salted water until crisp-tender, about 2 minutes. Using slotted spoon, transfer broccoli to sieve and drain. Cook pasta in same pot of boiling water until just tender but still firm to bite. Drain; rinse with cold water until cool and drain again.
  • Add broccoli, pasta and green onions to shrimp mixture. Toss with enough additional dressing to coat. Serve at room temperature, or cover and refrigerate up to 6 hours and serve cold.

1 lb medium shrimp, peeled & deveined
9 ounces angel hair pasta, cooked & drained
1/4 cup low sodium soy sauce
1/4 cup rice wine vinegar
2 teaspoons sesame oil
6 green onions, chopped
8 ounces water chestnuts, drained
1 teaspoon dried cilantro
2 tablespoons minced bottled gingerroot
2 garlic cloves, minced
1 teaspoon olive oil
2 tablespoons lime juice
1/2 teaspoon pepper
2 tablespoons dry roasted peanuts

Steps:

  • .Place cooked pasta in a large bowl. Stir together soy sauce, vinegar, and sesame oil. Drizzle over pasta. Add green onions, water chestnuts, & cilantro to pasta; toss.
  • Sauté ginger & garlic in hot oil 1-2 minutes, do not let it turn brown. Add shrimp, lime juice, & pepper. Cook & stir 3-5 minutes, just until shrimp turn pink. Add to pasta; toss well.
  • To serve, top with peanuts.

1/2 cup orange marmalade
2 tablespoons creamy peanut butter
1/2 cup water
4 tablespoons soy sauce
1 tablespoon cornstarch
1 teaspoon red pepper flakes
1 lb jumbo shrimp, raw & shelled
1 medium red bell pepper, chopped in 1-inch pieces
8 ounces bow tie pasta, uncooked

Steps:

  • In a small saucepan stir together marmalade, peanut butter, water, soy sauce, cornstarch and crushed red pepper.
  • Bring to a boil, reduce heat and cook for 2 minutes; remove from heat.
  • On 6 skewers, alternately thread shrimp and bell peppers.
  • Grill kabobs on the rack of an uncovered grill directly over medium heat for 5-7 minutes or until shrimp turn pink, turning once.
  • While grilling kabobs, cook pasta according to package directions; drain.
  • Return pasta to pan, cover and seat aside.
  • To serve, add shrimp and peppers to cooked pasta.
  • Add the sauce; toss gently to coat.
