Asian Chicken Mandarin Salad w/Almonds image

2 large boneless chicken breast,cut into bite-sized pieces
2 bag of salad mix-romaine mix
1 small raw pea pods
1 small bag spinach
2 can(s) mandarin orange segments,drained
ASIAN DRESSING
1 c rice vinegar
3 Tbsp soy sauce
1-2 tsp jar diced garlic
1/2 c canola oil
3 green onion,chopped

Steps:

  • 1. Cook chicken in a large,non- stick Skillet over med.-High Heat until no longer pink. Set aside to cool.
  • 2. In a large bowl that will hold 2 bags of salad,add small bag of leaf spinach,chicken,pea pods,and drained mandarin oranges. Toss thoroughly to combined.
  • 3. Secure a glass pyrex to mix dressing ingredients. Wisk all dressing ingredients together,and pour over prepared salad. Toss & Serve. Add Almonds to each induvidual bowl. Almonds may get soft if you add to dressed salad

1 head romaine lettuce - rinsed, dried and chopped
2 (11 ounce) cans mandarin oranges, drained
6 green onions, thinly sliced
2 tablespoons white sugar
½ cup sliced almonds
¼ cup red wine vinegar
½ cup olive oil
1 tablespoon white sugar
⅛ teaspoon crushed red pepper flakes
ground black pepper to taste

Steps:

  • In a large bowl, combine the romaine lettuce, oranges and green onions.
  • Heat 2 tablespoons sugar with the almonds in saucepan over medium heat. Cook and stir while sugar starts to melt and coat almonds. Stir constantly until almonds are light brown. Turn onto a plate, and cool for 10 minutes.
  • Combine red wine vinegar, olive oil, one tablespoon sugar, red pepper flakes and black pepper in a jar with a tight fitting lid. Shake vigorously until sugar is dissolved.
  • Before serving, toss lettuce with salad dressing until coated. Transfer to a decorative serving bowl, and sprinkle with sugared almonds.

1 pound boneless skinless chicken breasts, cut into 1/2-inch cubes
1/2 cup water
1/3 cup vinegar
3 tablespoons brown sugar
3 tablespoons vegetable oil, divided
1 tablespoon soy sauce
2 chicken bouillon cubes
1/3 to 1/2 cup mayonnaise
2 tablespoons honey
2 tablespoons lemon juice
2 teaspoons minced parsley
2 teaspoons ground mustard
1/4 teaspoon dried minced onion
1 package (10 ounces) ready-to-serve salad or 4 cups torn lettuce
1 can (11 ounces) mandarin oranges, drained
1 cup chow mein noodles
1 green onion, thinly sliced
2 tablespoons sliced almonds

Steps:

  • In a skillet, combine chicken, water, vinegar, brown sugar, 1 tablespoon oil, soy sauce and bouillon. Cook and stir over medium heat for 15-20 minutes or until chicken is tender and liquid has evaporated. , Meanwhile, for dressing, whisk mayonnaise, honey, lemon juice, parsley, mustard, onion and remaining oil until blended. Arrange salad greens on a platter. Top with oranges, chicken mixture and chow mein noodles. Sprinkle with green onion and almonds. Serve with dressing.

2 tablespoons light mayonnaise
1 1/2 tablespoons rice vinegar
2 teaspoons brown sugar
1 1/2 teaspoons sesame oil
1 1/2 teaspoons soy sauce
1 pinch garlic powder
2 boneless skinless chicken breast halves
5 cups romaine lettuce
2 cups mixed greens
5 ounces carrots, shredded
1 tablespoon sesame seeds, toasted, salted
1 cup canned mandarin oranges, packed in juice and drained
1/2 cup red cabbage, shredded
1/2 cup chow mein noodles (optional)
1/2 cup sliced almonds, roasted (optional)

Steps:

  • Add the dressing ingredients in a mixing bowl and blend with a mixer until combined. Chill before serving.
  • As the dressing chills, add chicken breasts to a pot of boiling water. Reduce the heat, cover and simmer for 25 minutes or until cooked.
