2-1/2 teaspoons salt, divided
1/2 pound fresh asparagus, trimmed and cut into 1-1/2-inch pieces
4 cups uncooked bow tie pasta (about 12 ounces)
3 tablespoons olive oil, divided
1 can (14 ounces) water-packed quartered artichoke hearts, well drained
2 garlic cloves, minced
1 cup crumbled goat cheese
2 tablespoons minced fresh parsley
1 tablespoon grated lemon zest
2 to 3 tablespoons lemon juice
1/3 cup grated Parmesan cheese

Steps:

  • Fill a 6-qt. stockpot three-fourths full with water; add 2 teaspoons salt and bring to a boil. Add asparagus; cook, uncovered, 1-2 minutes or just until crisp-tender. Remove asparagus and immediately drop into ice water. Drain and pat dry., In same pot of water, cook pasta according to package directions for al dente. Drain, reserving 1 cup pasta water. Return pasta to pot., Meanwhile, in a large skillet, heat 1 tablespoon oil over medium-high heat. Add artichoke hearts; cook and stir 3-4 minutes or until lightly browned. Add garlic; cook 1 minute longer. Add to pasta., Add asparagus, goat cheese, parsley, lemon peel, lemon juice and the remaining salt and oil; toss to combine, adding enough reserved pasta water to coat. Heat through. Serve with Parmesan cheese.

Artichoke, Anchovy and Lemon Pasta image

This recipe is a love letter to one of my favorite restaurants in Brooklyn. The chef does a play on pasta c'anciuova e muddica atturrata, which is Sicilian-style pasta with anchovies and toasted breadcrumbs, but he adds fish sauce for an intense umami boost. I first made this dish during the summer, when I crave pasta al limone, so this recipe became a hybrid of the two. The addition of the artichokes helps brighten it up even more.

Kosher salt
1 pound your favorite long pasta, such as bucatini
2 tablespoons unsalted butter
2 flat anchovy fillets packed in olive oil, drained and finely chopped
1/4 cup panko
Zest from 3 lemons
Two 14-ounce cans quartered artichoke hearts, drained and patted dry (see Cook's Note)
2 tablespoons olive oil, preferably from the anchovy jar or tin
Kosher salt
5 tablespoons unsalted butter
6 flat anchovy fillets packed in olive oil, drained and finely chopped
5 cloves garlic, finely grated
2 lemons, juiced
Chopped flat-leaf parsley, optional

Steps:

  • For the pasta: Bring a large pot of water to a boil. Season the boiling water with salt so it tastes as salty as a broth; it is important that the pasta water it is not too salty because it will help season the sauce. Add the pasta and cook for 2 minutes less than the package directions for al dente pasta.
  • For the breadcrumbs: Put the butter and anchovies in a small nonstick pan and cook over medium-high heat, swirling the butter and stirring the anchovies until the butter starts to brown, about 3 to 4 minutes. Add the panko and cook, stirring continuously and tossing, until the breadcrumbs are golden, about 3 minutes. Transfer to a small bowl, stir in the lemon zest and set aside.
  • For the artichokes: Line a plate with paper towels. Heat a large saute pan or braiser over medium-high heat. Add the olive oil and artichokes, cut-side down, and cook until the artichokes have a dark, golden brown crust, about 5 minutes. Transfer to the prepared plate and sprinkle with salt.
  • Put the butter in the same pan and cook over medium heat until melted. Add the garlic and anchovies and cook, stirring frequently, until the anchovies start to turn dark brown and the garlic is very fragrant, 2 to 3 minutes. Add 1/2 cup of the pasta water and stir to emulsify. Add the pasta and cook, stirring frequently, until the sauce coats the pasta and the flavors come together, 2 minutes. Remove from the heat, add the lemon juice and toss to coat.
  • Divide the pasta into bowls and top with the artichokes, parsley if using and breadcrumbs.

PASTA WITH TUNA, SUN-DRIED TOMATOES, ARTICHOKE HEARTS, LEMON, AND WHITE WINE

Bold flavors in a very light sauce: substantial and satisfying, good warm-weather alternative to spaghetti bolognese. You might think the sauce too thin the first time you make it (almost a thick broth), but it will be full of flavor. Quantities of tuna, sun-dried tomato, and artichoke are variable to preference, just be sure to provide an overall robust combination, always mindful of potential saltiness (esp. regarding the sun-dried tomatoes). Also, fresh oregano or lemon thyme could be substituted for thyme. This should go without saying: please don't put any cheese on this pasta.

1 (16 ounce) package linguine pasta
¼ cup olive oil, divided
½ cup diced onion
2 tablespoons chopped fresh thyme
1 ½ pounds fresh tuna steaks, cubed
½ cup dry white wine
2 cups chicken stock
¼ cup fresh lemon juice
1 tablespoon lemon zest
½ cup chopped oil-packed sun-dried tomatoes
¾ cup sliced marinated artichoke hearts
salt and freshly ground black pepper to taste

Steps:

  • Bring a large pot of lightly salted water to a boil. Add linguine pasta, cook for 8 to 10 minutes, until al dente, and drain.
  • Heat 2 tablespoons olive oil in a large saucepan over medium-high heat, and cook the onion 4 minutes, until tender. Mix in the thyme, and continue cooking 2 minutes, until onion is golden brown. Set aside onion and thyme. Place the tuna in the saucepan, and cook 2 to 3 minutes, until browned. Set aside, and keep warm.
  • Heat the remaining oil in the saucepan. Return the onion and thyme to saucepan, and stir in the white wine. Cook until reduced by about 1 tablespoon. Mix in the chicken stock, lemon juice, and lemon zest. Reduce heat to medium, and continue cooking 10 minutes, until reduced to about 3/4 cup.
  • Mix the sun-dried tomatoes and artichoke hearts into the saucepan, and cook just until heated through. Return tuna to the saucepan, and cook to desired doneness. Toss the cooked pasta into the saucepan. Season with salt and pepper.

zest and juice 1 lemon
3 tbsp olive oil
50g freshly grated parmesan
100g artichoke heart from a jar
handful black olive
100g bag wild rocket

Steps:

  • Boil the pasta. While it cooks, mix together the lemon zest and juice, oil and Parmesan.
  • Drain the pasta, reserving 3 tbsp of the cooking water, then return to the pan with the lemon mix, cooking water, artichokes and olives. Heat through briefly, season well, stir through the rocket, then serve.

1 lb Chicken Breast, boneless, skinless, cubed (or chicken thights if you prefer)
1 Spaghetti Squash, large, cut in half lengthwise (get a BIG one)
12-15 Artichoke Hearts, cut in half (I used jarred artichokes that were in olive oil for more flavor)
1/3 cup Organic Walnuts
4-5 Tbsp Extra Virgin Olive Oil
4-5 Tbsp Vegetable Broth
2 clove Garlic, minced
1/2 cup Parsley, fresh
1/2 cup fresh Basil
1 Lemon, juice only
Salt and Pepper, to taste
3-5 cup Spinach, optional

Steps:

  • Preheat oven to 405 degrees (not 450, stop questioning me) Cut the squash in half lengthwise, place cut side down on a baking sheet and bake for 30-35 minutes or until squash gives when you poke the outside of it. Use a spoon to remove the excess seeds then a fork to thread the strings from the squash. To make spaghetti, duh. But while the squash is baking, make the pesto and chicken. Place a large pan over medium-high heat, add a splash of fat and 1 minced garlic clove. As soon as the garlic becomes fragrant, add the halved artichokes. Sprinkle with salt and pepper and let cook until slightly browned and tender on all sides. Once artichokes are browned, add them to a food processor along with the walnuts, olive oil, vegetable broth, and second garlic clove. Puree until smooth. Then add the parsley, basil, lemon, and salt and pepper. Puree once more until smooth. Taste and add more lemon and salt and pepper to your preference. Once pesto is done pureeing, add the chicken to the same pan that you sautéed the artichokes in. Cook chicken over medium-high heat until browned on all sides. Sprinkle with a bit of salt and pepper. Once chicken is cooked through, add in about ¼ of a cup of the pesto to the chicken along with the spinach, in the pan and mix well to coat. Cover and let cook for 2-4 minutes or until spinach is wilted. Then add the threads of spaghetti squash to the pan (or a large mixing bowl if you need more room). Mix spaghetti squash, pesto, and chicken all together. Serve with some fresh basil on top.

8oz Dreamfields pasta
2 Tablespoon extra virgin olive oil
2 large chicken breasts, cut into 2″ pieces ( 1 Rotisserie Chicken)
2 T flour
salt & pepper
1 cup chicken broth
1/2 teaspoon lemon zest
1 can quartered artichoke hearts in water, drained
2 Tablespoons capers, rinsed
1/4 teaspoon red chili pepper flakes
1/4 cup sun-dried tomatoes- dried, not the ones in oil- chopped
juice of 1/2 a lemon
1 Tablespoon butter

Steps:

  • 1. Take ¼ cup of dried sun dried tomatoes and soften them up in some water per package directions. 2. Heat extra virgin olive oil in a large skillet over medium-high heat. Add flour, salt & pepper and whisk to make a nice roux. Don't let it get too brown. 3. Add chicken broth and lemon zest to the same skillet and cook for 2-3 minutes, or until the chicken broth has reduced a bit. Add artichoke hearts, capers, chili pepper flakes, (drained) sun-dried tomatoes, lemon juice and butter. 4. Cook pasta in salted boiling water until al dente. Drain and return to hot pot. 5. Continue to cook the sauce over medium high heat until the sauce has thickened and add the chicken - cook until chicken is warmed through. 6. Combine artichoke mixture with pasta, toss and serve immediately

12 oz spaghetti
3 slice bacon
2 boneless, skinless chicken breasts, halved and pounded to 1/4 in thickness
1/4 c all purpose flour
salt and pepper to taste
4 oz can or jar of artichoke hearts, drained and quartered
2 tsp capers, drained
1/2 c white wine
1 c chicken broth
1/3 c lemon juice
1/3 c heavy cream
1 Tbsp butter

Steps:

  • 1. Cook pasta according to package instructions. Drain and set aside.
  • 2. In large fry pan, cook bacon until crsip, setting aside, but leaving rendered fat in pan.
  • 3. Whisk together the flour, salt and pepper in a shallow plate. Dredge chicken in flour mixture and shake off any excess.
  • 4. Add chicken to the fry pan and cook over medium heat until golden brown, about 5 minutes per side. Transfer chicken to a paper towel and let rest.
  • 5. To the fry pan, add the artichokes, capers and wine, scraping up any brown bits from the bottom of the pan.Cook for 2 minutes. Add broth and lemon juice and cook for another 2 minutes. Add the cream and butter, stirring until the butter has melted. Season with salt and pepper to taste.
  • 6. Slice the chicken into 1/2 inch slices and add to the pan. Crumble the bacon, add to pan. Add the pasta and gently toss the entire mixture. Serve immediately.

4 ounces marinated artichoke hearts, drained and sliced
1/2 lemon, juiced and zested
1 ounce parmesan cheese, finely grated

4 garlic cloves, minced
2 tablespoons vegan margarine
1/4 cup extra virgin olive oil
1/2 cup vegetable broth
12 ounces artichoke hearts, quartered
1/4 cup capers, rinsed and drained
1 large lemon, juice and zest
1/3 cup soymilk, unsweetened
2 teaspoons oregano
2 teaspoons italian seasoning
1/4 cup vegan parmesan cheese (I use Almesan - Vegan Parmesan)
salt and pepper, to taste
crushed red pepper flakes, to taste
extra vegan parmesan cheese, for serving

Steps:

  • Bring large pot of water to boil for pasta.
  • In a large saute pan, heat oilive oil and margarine over medium heat.
  • Add minced garlic and dried oregano and italian seasoning.
  • When garlic is fragrant, add artichike hearts, lemon zest, half the lemon juice, capers and veggie broth.
  • Simmer sauce while pasta cooks.
  • Stir in soy milk, remaining lemon juice and "parmesan".
  • Drain pasta and add to sauce.
  • Mix well and serve. Top with crushed red pepper (my favorite) and extra "parmesan" if you like.
