WARM RICE, ARTICHOKE, SPINACH, AND CHICKEN SALAD
This is a recipe I came up with after looking at a few other recipes and not finding the perfect combination for what I wanted. This uses a rice cooker so please make it easy on yourself and buy one if you don't already own one; they're completely amazing.

Steps:
- Heat oil in a pot over medium-high heat. Saute onion and garlic in hot oil until onion softens, 5 to 7 minutes. Stir pine nuts into onion mixture; saute until fragrant and golden, 2 to 3 minutes. Stir lemon zest, vegetable bouillon, and turmeric into onion mixture; saute until fragrant, about 1 minute. Add rice to mixture and cook until fragrant, 2 to 3 minutes more.
- Pour rice mixture in a rice cooker and add water. Set the rice cooker to the regular white rice cycle, and select Start. Fluff cooked rice with a fork and top rice with green onion and basil. Close rice cooker and steam green onion and basil until tender, about 5 minutes.
- Stir mushrooms into rice and place spinach on top. Close rice cooker again and steam until spinach wilts slightly, about 5 minutes more. Add chicken, artichoke hearts, and Parmesan cheese; stir to combine. Season with black pepper.

JERUSALEM ARTICHOKE NICOISE SALAD WITH ROASTED CHICKEN
Steps:
- For the roasted Jerusalem artichokes and chicken breast: Place the chicken and pineapple juice in a baking dish. Marinate for a minimum of 30 minutes in the refrigerator, or a maximum of 24 hours.
- Preheat the oven to 350 degrees F.
- Heat the oil in large cast-iron pan over medium to high heat. Once the oil is hot, add the Jerusalem artichokes to the pan and sprinkle with salt and pepper. Cook the Jerusalem artichokes until golden brown, about 3 minutes. Turn the Jerusalem artichokes over and cook until golden brown, about 3 minutes. Remove from the pan and set aside. Add the chicken to same hot pan, skin-side down. Once the skin is crisp, golden and lightly charred, about 4 minutes, flip over. Add the reserved Jerusalem artichokes to the pan and place in the oven until the chicken is cooked through and reaches an internal temperature of 165 degrees F on an instant-read thermometer, about 25 minutes. Remove from the oven and allow the chicken to rest for 10 minutes before slicing.
- For the Jerusalem artichoke nicoise salad: Place the roasted Jerusalem artichokes and the green beans on a plate. Scatter the tomatoes, onions and olives over the green beans and Jerusalem artichokes. Place the sliced chicken breast in the center. Place the hard-boiled eggs around the chicken. Whisk the olive oil, lemon juice, salt and pepper in a bowl. Drizzle over the salad and serve.
CHICKEN SALAD WITH ORZO AND MARINATED ARTICHOKE HEARTS
This is a chicken salad with a Mediterranean flair! The ingredient amounts for the dressing can be adjusted, but start with listed amounts, all other amounts for this recipe can be increased if desired. The capers and currants are optional, but I like to add them in. This is the perfect salad to serve to company, it has lots of flavor! If you are serving more than 4 people then double the recipe. Plan ahead the salad needs to chill for 2 hours before serving. Can use leftover turkey in place of chicken.

- Boil the orzo pasta in boiling salted water until JUST firm-tender; drain and rinse with cold water.
- In a small bowl combine oil, vinegar, lemon juice and mustard; whisk to combine, then season with salt and pepper.
- Place the chicken pieces in a large bowl and mix in about 1/4 cup dressing; toss to combine.
- Add in cooked orzo, halved cherry tomatoes, artichoke hearts, olives and capers (if using) mix to combine.
- Add in the remaining dressing and mix.

GRILLED CHICKEN PASTA SALAD WITH ARTICHOKE HEARTS
Use canned artichoke hearts but make sure to rinse them thoroughly. I've also used this recipe with turkey sausage or pepperoni instead of the grilled chicken and both make fun substitutions. This travels well! If you want to cut down on oil, try subbing half chicken broth.

- Light the grill or heat the broiler. Coat the chicken with 1 tbsp of the oil and season with 1/4 tsp salt, 1/4 tsp garlic powder and 1/4 tsp pepper.
- Grill or broil until just done, 4-5 minutes per side. Let the chicken rest for 5 minutes and then cut crosswise into 1/4-inch slices.
- In a large pot of boiling salted water, cook the fusilli until just done. Drain, rinse with cold water, and drain thoroughly.
- In a large bowl, toss the pasta with 1 tbsp olive oil. Make sure to coat all the pasta thoroughly, so it won't stick together.
- Add the chicken, artichoke hearts, scallions, parsley, remaining 5 tbsp oil, the vinegar, remaining 1 tsp salt, 1/4 tsp pepper, and the Parmesan to pasta and toss well.
- Serve with additional parmesan and Enjoy!

- Combine artichoke heart, mushroom, olive, onion& bell pepper in a large bowl.

ROASTED CHICKEN, ARTICHOKE, FETA AND ORZO SALAD
Colorful and easy salad to make in advance to serve chilled or room temperature. Using rotisserie chicken limits cooking to boiling pasta. Transports easily. Has a "Greek" flavor, but not traditional. Easily modified for size of group or individual tastes. Add other vegetables (mushrooms, zucchini) as desired. I'm always asked where I bought the salad, I'm assuming that's a compliment.

- Boil orzo pasta in salted water until al dente. Drain reserving some pasta water.
- Place orzo (warm pasta will absorb more of the dressing) and shredded chicken in a large bowl. Add 4 TB of dressing and toss to coat.

PANTRY CAESAR CHICKEN & ARTICHOKE PASTA SALAD
This is a great way to use up some of those items that were tucked away in the pantry for "just in case." A caesar pasta salad kit, a can of tender chicken breast chunks, a can of artichoke hearts and some mayo come together to make a great meal that can be on the table in half an hour, tops, and can be served either warm or chilled. Don't skip the crushed crouton topping. It adds a great crunch.

- Gather and prep ingredients.
- Bring 2 to 3 quarts water to boiling; add about 1/2 to 1 teaspoon salt. Add the package of rotini pasta; return to boil, reduce heat to medium-high and gently boil pasta for 12 minutes, stirring occasionally to prevent sticking.
- While pasta is boiling, mix together 1 tablespoon water and the seasoning packet from the salad kit. Add 1/3 to 1/2 cup mayonnaise, stirring to blend well. Set aside.
- Drain cooked pasta (do not rinse if you want a warm salad, rinse with cold water for cold salad.)
- Add drained pasta to bowl with seasoned mayonnaise mixture; mix gently until pasta is evenly coated.
- Add chicken and artichokes, mixing gently until evenly coated with the mayonnaise mixture. Add more mayonnaise if needed, especially after refrigerating.
- Just before serving, lightly sprinkle with crushed seasoned croutons and grated parmesan cheese.

WARM ARTICHOKE AND CHICKEN LIVER SALAD

- Sauté chopped bacon and chopped shallots in large skillet over medium heat until shallots are golden, about 8 minutes. Add chicken stock and Madeira, then vinegar to skillet. Boil liquid until reduced to 2/3 cup, about 4 minutes. Remove from heat. Whisk in 2 tablespoons olive oil and tarragon.
- Heat 1 tablespoon olive oil in another large skillet over medium-high heat. Add artichoke hearts and sauté until golden, about 5 minutes. Transfer artichoke hearts to plate. Add remaining 2 tablespoons olive oil to skillet. Add chicken livers and sauté until brown outside and just pink inside, about 3 1/2 minutes. Remove skillet from heat. Season to taste with salt and pepper.
- Place greens in large bowl. Toss with enough dressing to coat. Divide greens among 4 plates. Top with chicken livers and artichokes. Serve warm.

- Drain artichoke hearts thoroughly, pressing to remove excess liquid. Mash artichokes; stir in mayonnaise or salad dressing. Parmesan cheese, lemon juice and garlic powder. ARTICHOKE CHICKEN SALAD TARTS

- Tart Shells 1. Preheat oven to 375 degrees F. 2. Flatten bread slices using a rolling pin. Trim crust off bread slices using a pizza cutter, sorming squares. Cut a 1/2-inch slit in each side of bread slices. 3. Place butter in a prep bowl; microwave on HIGH 20-30 seconds or until melted. 4. Brush butter evenly over both sides of bread. Carefully press bread into cups of 12-cup muffin pan. 5. Bake 18-20 minutes or until golden brown; remove from oven and cool completely. Salad 1. Coarsely chop artichokes. 2. So, I decided to recreate it with my own twists, and I think it's even better than the original. The salad is a combination of slightly smoky grilled chicken, tangy seasoned & marinated artichoke hearts, hickory smoked bacon and a mayo salad dressing. This croissandwich is quick and easy, yet elegant and divinely delicious. It's perfect for a special lunch, brunch buffet or busy-day dinner alongside a cool salad or warm bowl of soup. - *NOTE: You may use grilled, rotisserie or roasted chicken or turkey meat (any part/s of the bird,) though grilled has the best flavor, in my opinion.
- Gather and prep all ingredients (remove skin, debone and chop chicken; drain artichokes and chop after removing any tough outer leaves; wash lettuce; split croissants.)
- Add chicken to an average size mixing bowl; sprinkle with 1/4 tsp salt; toss to distribute salt.
- Add Miracle Whip salad dressing; mix with large spoon to coat chicken well.
- Add chopped artichokes and 1/8 cup real bacon bits (do not use imitation; omit bacon if none is available;) mix well.
- Place lettuce leaves on bottom half of croissants; spoon chicken mixture onto lettuce; place croissant tops on top of chicken salad. Serve immediately, or wrap/place in airtight container and refrigerate until served.
- Cover and refrigerate any leftovers.
