Literally means "angry". This is a spicy sauce with crushed red pepper flakes. Traditionally served over penne rigate, but use your favorite cooked pasta.

1 tsp olive oil
1 c chopped yellow onion
4 clove garlic, minced
3/8 c red wine
2 Tbsp brown sugar
2 Tbsp chopped fresh basil
1 tsp crushed red pepper flakes
2 Tbsp tomato paste
1 Tbsp lemon juice
1/2 tsp italian seasoning
1/4 tsp ground black pepper
2 can(s) (14.5 oz each) crushed tomatoes, undrained
2 Tbsp chopped fresh parsley

Steps:

  • 1. Heat oil in a large skillet or saucepan over medium heat. Saute onion and garlic in oil for 5 minutes.
  • 2. Stir in wine, sugar, basil, red pepper flakes, tomato paste, lemon juice, Italian seasoning, black pepper and tomatoes; bring to a boil. Reduce heat to medium, and simmer uncovered about 15 minutes.
  • 3. Stir in parsley.
  • 4. Serve over the hot cooked pasta of your choice.

PATRICK'S ARRABIATA SAUCE

A low-cost spicy sauce with strong flavours and a silky texture. It does take a little time to make but the quantities yield 8 servings so that you can refrigerate or freeze the rest. Works great with dried pasta! It is the outcome of three years of trial and error, and I feel like I no longer need to experiment with the ingredients and method. If you're looking for a basic sauce which will allow for the taste of fresh pasta to be more up front, then this sauce might not be for you. To be served on a bed of your favourite pasta, topped with a few fresh basil leaves.

1 cup olive oil
¼ cup unsalted light butter
6 large cloves garlic, thinly sliced
5 yellow onions, sliced 1/4-inch thick
1 cup red cooking wine
15 Italian plum tomatoes, coarsely chopped
20 leaves fresh basil
5 tablespoons double concentrated tomato paste
1 tablespoon smoked paprika
1 tablespoon white sugar
2 teaspoons cayenne pepper
2 teaspoons salt, or to taste

Steps:

  • Place olive oil, butter, and garlic in a large pot; turn heat to high until garlic begins to sizzle, about 2 minutes. Turn heat down to medium; stir in onions and cook and stir until onions are translucent, 2 to 3 minutes. Pour wine over onion mixture; simmer until wine is partially evaporated, about 10 minutes.
  • Place tomatoes and basil in the bowl of a food processor; pulse to blend until tomatoes are chunky. Pour tomatoes into onion mixture; cook, stirring about every 5 minutes, until sauce darkens to a deep red color, about 40 minutes. Turn off heat.
  • Working in batches, pour the sauce into a food processor and blend until smooth. Stir tomato paste, smoked paprika, sugar, and cayenne pepper into tomato mixture; season to taste with salt.

1 (28-ounce can) crushed tomatoes
1 small onion, coarsely chopped
2 cloves garlic, peeled and crushed
1 tablespoon capers, drained and rinsed
1 (3-inch long) serrano or Thai chile, stemmed, 1/2 of the seeds removed, and coarsely chopped
1 tablespoon sugar
2 teaspoons smoked paprika, plus extra for seasoning
2 teaspoons kosher salt, plus extra for seasoning
2 (1 pound) rib-eye steaks, each about 1-inch thick
2 tablespoons extra-virgin olive oil
Salt and freshly ground black pepper

Steps:

  • For the sauce: In a food processor, combine the tomatoes, onions, garlic, capers, chile, sugar, paprika, and salt. Process until slightly chunky. Pour the sauce into a medium saucepan and bring to a simmer over medium heat. Cook for 25 minutes until thickened. Season with salt and smoked paprika, to taste.
  • For the steaks: Place a grill pan over medium-high heat or preheat a gas or charcoal grill. Drizzle the steaks on both sides with olive oil. Season on both sides with salt and pepper. Grill for 5 to 6 minutes each side for medium-rare. Let the steaks rest for 5 minutes.
  • Slice the steaks across the grain into 1/4-inch thick slices and serve with the sauce.

1/4 c evoo (or to taste)
4 garlic cloves, diced
1 c onion, diced
1 celery salk, diced
1/3 c prosciutto, diced
1/2 t dried red chile flakes
1 28 oz. can chopped tomatoes with liquid
6 fresh basil leaves, torn
3 T fresh parsley, chopped
S & P to taste

Steps:

  • In large skillet, combine olive oil, garlic onion, celery, prosciutto and chile flakes. Cook on medium for six minutes. Add chopped tomatoes and bring to boil. Cook on low for 20 minutes. Add basil, parsley, salt and pepper and 1/4 c water from pasta. Drain pasta and add to skillet. Cook on medium stirring well to mix until watere evaporates.

1/4 cup thinly sliced green pepper
1/2 cup chopped onion
2 large cloves garlic, minced
A 28-ounce can plum tomatoes, well-drained and crushed
1/2 teaspoon dried oregano
1 tablespoon minced fresh basil
Generous pinch hot red pepper flakes
Freshly ground black pepper

Steps:

  • Heat one tablespoon of the oil in a saucepan and lightly saute the red and green peppers and the onion. Stir in the garlic.
  • Add the tomatoes and cook about 15 minutes, until thick. Season with oregano, basil, red pepper flakes and black pepper.
  • Just before serving stir in the remaining two tablespoons of oil.

2 tablespoons olive oil
1 tablespoon garlic, minced
1 medium onion, chopped
1 (8 ounce) can tomato paste
1 (28 ounce) can crushed tomatoes
1/8 cup red wine
2 teaspoons salt (or to taste)
1 1/2 teaspoons pepper (or to taste)
1 tablespoon crushed red pepper flakes (or to taste)

Steps:

  • Heat olive oil in a large skillet.
  • Add garlic, sauté until flavor is released, about a minute.
  • Sauté onion until softened.
  • Stir crushed tomatoes, tomato paste, red wine, salt, pepper, and red pepper flakes into crockpot.
  • Add onion.
  • Cook on low heat 4 hours. (I'm recommending four hours as a median time. It can be cooked more or less--I've made it in two hours, as well as let it cook for up to eight, and it was delicious each time. The original recipe calls for preparation over a stove with the instruction to "simmer until you can't stand it"--so it's really up to you.).

~1 1/2 - 2 lbs New Girl tomatoes or similar - in season
1 v lge clove garlic (or more to taste)
chili - I used ~ 1/3 red thai (v hot) chili
fresh basil leaves - maybe around 6-7?
good olives - I used from olive bar at whole foods, mix of greek, olives with chili, olives with herbs - maybe around 15?
splash of red wine - I used old, probably vinegary
little olive oil
salt & pepper to taste
pasta - ~ 8 oz?
fresh parmesan cheese to serve

Steps:

  • chop tomatoes fairly small. Do not use all the juice and seeds. chop chili very finely (don't use seeds). cut olives into ~4-6 pieces for lge olives. tear basil leaves Heat a little olive oil, then add garlic & chili & cook for a couple of minutes. Add tomatoes, and cook uncovered for a couple of minutes. Add wine & cook for a couple of minutes more to boil off a little juice. Add olives and seasoning. Add basil leaves only a minute or two before serving.

100g milk
For the Arrabiata:
70g pancetta cubes
4 finely chopped shallots
1 can 400g plum tomato
1tsp oregano
1tsp basil
1tsp parsley
1tsp coriander
pinch salt
pinch garlic powder
3 tbsp chili pesto (recipe below)
1 chicken bouillon cube
1 cup of water
1 cup red wine
For the Chili Pesto:
70g tin of tomato puree
1 red chilli, deseeded and roughly chopped
25g pine nuts (or almonds)
1 plump garlic clove, crushed
Handful fresh flatleaf parsley leaves
125ml extra-virgin olive oil, plus extra for storing
20g Parmesan (or Pecorino), finely grated; extra to taste

Steps:

  • 1. Make the Chili Pesto Put the tomatoes, chilli, nuts, garlic, parsley and oil into a food processor and blend to a paste. Season well and transfer to a bowl. 2. Prepare Chicken Whisk milk & egg in one bowl Mix breadcrumbs, herbs & flour in another bowl Dip chicken in milk mix and then dip in second bowl to cover with breadcrumb mixture 3. Prepare Arrabiata Heat saucepan to medium heat Add pancetta to grease the pan Add shallots, cook till just translucent Add can plum tomato Add all herbs Add water Break up tomato in pan with wooden spoon Add chicken bouillon Add wine Reduce, occasionally stirring - at least 30 mins 4. 3 Tbsp olive oil
6 clove garlic
1 medium onion
2 can(s) diced tomatos
4 Tbsp crushed red pepper flakes
1/2 c roughly chopped basil
1 1/2 Tbsp salt
1/2 Tbsp black pepper

Steps:

  • 1. Heat olive oil in a saucepan over low to medium heat. Add crushed red pepper flakes and saute for about a minute and a half, then add chopped onions and saute until softened and translucent. Add minced garlic and saute until fragrant.
  • 2. Now add tomatoes and stir properly to combine everything. Cook the sauce and break the diced tomatoes with a spatula or spoon (or you can use a masher) until the sauce hit a low simmer. Continue to cook the sauce and turn the flame to medium and cook for the next 15 to 20 minutes, stirring occasionally. Cook until the sauce thickens up and attain your desired consistency.
  • 3. Mix in fresh herbs (parsley or basil), salt, and crushed black pepper. Combine everything properly and taste the arrabbiata sauce and season with salt or pepper as per your preference.
  • 4. Serve the spicy sauce immediately or let the sauce cool and then refrigerate it in an airtight container.

1 to 2 tablespoons olive oil
1 tablespoon crushed red pepper flakes
3 to 4 cloves garlic, minced
1 small to medium onion, chopped
1/2 cup white wine (or chicken broth)
Two 15-ounce cans crushed tomatoes
2 tablespoons Italian seasoning
Pinch sugar
Salt and freshly ground black pepper

Steps:

  • Add a tablespoon or so of olive oil to a hot pan over medium-high heat, throw in the red pepper flakes, garlic and onions and give them a stir. Add the wine (or chicken broth), whisking to deglaze the bottom of the pan. Cook until the liquid reduces by half. Add the crushed tomatoes and Italian seasoning and stir to combine. Add a pinch of sugar and some salt and pepper to taste. Reduce the heat to low and simmer for 30 minutes.
  • Let cool, then portion into 4 freezer bags and freeze.

The Classic Arrabiata Sauce or Sugo all'arrabiata, made with sweet San Marzano tomatoes, garlic and lots of red pepper flakes!

1 medium yellow onion (minced)
6 cloves garlic (minced)
2 tsp red pepper flakes + more to your taste buds
2 X 28 oz can San Marzano Tomatoes (whole)
1/4 c extra virgin olive oil
1 bay leaf
sea salt to taste
15 leaves basil (torn)
1 lb penne pasta or spaghetti

Steps:

  • In a large heavy bottom cast iron pan heat up the olive oil and saute the onion with a pinch of sea salt until translucent, about 10 minutes. Add the garlic and red pepper flakes and let it cook only for a few seconds until you can smell it and doesn't get any color on it.
  • In a large bowl crush the tomatoes with your hands but leave a few smaller chunks in there. Transfer them to the pot with the onions and garlic and brig to a simmer. Add the bay leaf and partially cover with a lid. Allow the sauce to simmer away on low flame for about 1 hour until thick and concentrated in flavor. Make sure to stir often, every 10 minutes or so, making sure the sugars in the tomatoes do not burn.
  • Turn off the flame and season to your taste with the sea salt. Stir in the fresh basil leaves and finish it with a drizzle of extra virgin olive oil. Serve with pasta or meats or some fresh crusty bread.
  • Meanwhile bring a large pot of water to a rolling boil. Season with sea salt, you want this to taste like sea water. Cook the penne pasta or spaghetti until al dente, according to the directions on the package. Toss to coat well in the arrabiata sauce and serve with a drizzle of olive oil and extra red pepper flakes.
