Super easy Apricot Balls made with just 5 ingredients.

15 dried apricots
6 medjool dates, pitted
25 grams (1/4 cup) almond meal
25 grams (1/4 cup) desiccated coconut, plus extra for rolling
1 tablespoon coconut oil

Steps:

  • To a food processor, add apricots, dates, almond meal, coconut and coconut oil. Mix on high for 1 minute or until mixture is finely processed - it's ok if it's a little bit chunky.
  • Roll tablespoons of apricot mix into small balls, using your hands, until smooth. Dip each ball in extra coconut and place on a plate. Repeat with remaining apricot mixture.
  • Place balls in the fridge for at least 30 minutes to set. Store balls in fridge.

6 ounces semisweet chocolate
1/2 cup brandy
3 tablespoons light corn syrup (Karo preferred)
2 1/2 cups all-bran cereal, crushed
1 cup dried apricot, finely minced
1/2 cup confectioners' sugar
unsweetened cocoa powder or confectioners' sugar, for dusting truffles

Steps:

  • Melt chocolate in top of double boiler over hot (not boiling) water; remove from heat.
  • Stir in brandy and corn syrup.
  • Combine cereal, apricots and 1/2 cup confectioners' sugar in a large bowl.
  • Add chocolate mixture; stire together until well blended and let stand at room temperature about 30 minutes.
  • Form into 1/2" balls; roll in cocoa or powdered sugar.
  • Place in candy cups in a covered container; let mellow several days before serving.

  • Grind apricots.

4-1/2 cups water, divided
2 tea bags
1 cup sugar
1 cup apricot brandy
3/4 cup thawed orange juice concentrate
3/4 cup thawed lemonade concentrate
EACH SERVING:
1/4 cup lemon-lime soda

Steps:

  • In a large saucepan, bring 1 cup water to a boil; remove from heat. Add tea bags; steep, covered, 3-5 minutes according to taste. Discard tea bags. Stir in sugar until dissolved. Cool., Stir in apricot brandy, juice concentrates and remaining water. Transfer to a 2-qt. freezer container. Freeze, covered, 6 hours or overnight., For each serving, scoop 3/4 cup slush into a rocks glass. Pour soda into glass. Serve immediately.

1 1/2 lbs dried apricots
1 quart vodka
1 lb sugar

Steps:

  • Place ingredients (DO NOT MIX) in a 1/2 gallon flat topped glass jar.
  • Turn jar twice a day for 8 days (allowing jar to sit on its top for half a day).
  • Batch is ready.
  • You may use the same apricots, more sugar, and vodka added to make another batch, but let second batch sit for 12 to 14 days.

1 box (11 oz) vanilla wafers
1 cup chopped nuts (pecans, walnuts, hazelnuts and/or almonds)
3/4 cup powdered sugar
2 tablespoons unsweetened baking cocoa
1/2 cup brandy
2 1/2 tablespoons light corn syrup
Additional powdered sugar or unsweetened baking cocoa

Steps:

  • In food processor, process vanilla wafers into fine crumbs. Pour crumbs into large bowl. Add nuts, 3/4 cup powdered sugar and 2 tablespoons cocoa; stir to combine.
  • In small bowl, stir together brandy and corn syrup until well combined. Add to dry mixture; stir until dough-like mixture forms.
  • Roll mixture into 1-inch balls. Roll each ball in additional powdered sugar. If desired, place each in mini paper baking cup. Store in airtight container up to 2 weeks.

4 cups fresh apricots, washed,pitted and mashed
1 1/2 cups granulated sugar
1/2 cup honey
750 ml vodka or 750 ml brandy

Steps:

  • Use only fully ripened, unblemished fruit.
  • Wash and remove pits.
  • Chop and mash fruit.
  • Place in a plastic container or large glass bottle.
  • Dissolve sugar in the vodka or brandy.
  • Pour over the fruit.
  • Cover and let sit for 4 to 6 months in a cool, dark place.
  • Strain out the fruit, and bottle.
  • Your fruit brandy is ready to drink!

1 cup sweetened flaked coconut
1/4 cup sweetened condensed milk

  • In a food processor chop apricots and coconut until thoroughly combined.
  • Add the 1/4 cup sweetened condensed milk; process until combined.
  • Pour the mixture into a dish; refrigerate until firm (about 30-45 minutes).
  • Place wax paper on a baking sheet; set aside.
  • Place additional coconut or finely chopped pecans in a shallow bowl.
  • Shape apricot mixture into balls (about 1-inch in diameter).
  • Roll in coconut; place on wax paper.
