CINNAMON APPLE QUESADILLAS

One of my favorite quick, breakfast treats. You can make it gluten-free by using corn tortillas! Top this delicious quesadilla with honey, maple syrup, powdered sugar, or whipped topping. Serve as either breakfast or dessert!

1 Honeycrisp apple, diced
2 tablespoons light corn syrup
1 tablespoon honey
1 tablespoon maple syrup
1 pinch ground cinnamon, or more to taste
1 pinch brown sugar
2 11-inch flour tortillas

Steps:

  • Heat a large skillet over medium-low heat. Cook apple, corn syrup, honey, maple syrup, ground cinnamon, and brown sugar in hot skillet, stirring every few minutes, until apples are slightly softened and caramelized, 8 to 10 minutes. Transfer apple mixture to a bowl.
  • Place 1 tortilla in the same skillet over medium-low heat; spread apple mixture on top of tortilla. Top with remaining tortilla. Cook until the bottom tortilla is golden brown, 1 to 3 minutes. Carefully flip the quesadilla and cook until the other tortilla is golden brown, 1 to 3 minutes more.

4 flour tortillas (6 inches)
2/3 cup unsweetened applesauce
2/3 cup shredded cheddar cheese
Cinnamon-sugar, optional
1 tablespoon butter, melted

Steps:

  • Place two tortillas on an ungreased baking sheet. Spread each with applesauce; sprinkle with cheese and cinnamon-sugar if desired. Top with remaining tortillas. Brush tops with butter. Sprinkle with cinnamon-sugar. Bake at 400° for 7-8 minutes or until lightly browned. Cut each into eight wedges.

After tasting the pure apple flavor of this homemade sauce, you just might never go back to the store-bought kind. Supermarket applesauce can be loaded with added sweeteners and flavorings. We use only a little sugar, plus lemon juice, salt and cinnamon, providing a balanced flavor and the perfect amount of sweetness.

4 pounds assorted apples, such as Golden Delicious, Gala, Honeycrisp or McIntosh (about 8), peeled, cored and chopped
1/4 cup sugar
Kosher salt
1 tablespoon freshly squeezed lemon juice
1/4 teaspoon ground cinnamon

Steps:

  • Combine the apples, sugar, 1 cup water and 1/2 teaspoon salt in a large pot. Bring to a simmer over medium-high heat, stirring occasionally. Reduce the heat to medium-low. Cover with a tight-fitting lid and cook until the apples are very soft, 18 to 20 minutes.
  • Stir in the lemon juice and cinnamon. Let cool for 5 minutes or so, then transfer the apple mixture to a blender, filling no more than halfway. Remove the center cap from the lid and place it on the blender. Cover the lid with a folded kitchen towel to catch splatters and pulse until smooth. Alternatively, puree in the pan with an immersion blender.
  • Transfer the applesauce to a bowl and refrigerate until cool, about 1 hour. Store leftover applesauce in an airtight container in the refrigerator for up to 5 days.
