The recipe for this flavorful cake has been handed down in my husbands' family for four generations.

1 cup chopped mixed candied fruit
1 cup finely chopped pecans
1 cup finely chopped walnuts
1 cup raisins
1/2 cup chopped dried apricots
1/2 cup chopped dried apples
2-1/2 cups all-purpose flour, divided
1 cup butter, softened
2 cups sugar
2 large eggs
2 cups applesauce
2 teaspoons vanilla or rum extract
2 teaspoons baking soda
2 teaspoons ground cinnamon
1 teaspoon salt
1 teaspoon ground nutmeg
1 teaspoon ground cloves
1 teaspoon ground allspice

Steps:

  • In a bowl, combine the first six ingredients; add 1 cup flour. Stir to coat. In a bowl, cream butter and sugar; add eggs and mix well. Add the applesauce and vanilla extract. Combine the baking soda, cinnamon, salt, nutmeg, cloves, allspice and remaining flour; stir into applesauce mixture. Stir in fruit mixture. Pour into a greased and floured 10-in. tube pan. , Bake at 325° for 60-65 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack to cool completely.

Number Of Ingredients 16

1 ½ cups white sugar
1 cup shortening
2 eggs
3 ¼ cups all-purpose flour
1 ½ teaspoons baking soda
2 teaspoons ground cinnamon
1 teaspoon ground allspice
1 teaspoon ground cloves
½ teaspoon salt
1 ½ cups chopped walnuts
1 ½ cups raisins
1 ½ cups dates, pitted and chopped
½ cup maraschino cherries, coarsely chopped
2 cups applesauce
6 maraschino cherries, halved
6 pecan halves

Steps:

  • Preheat oven to 325 degrees F (160 degrees C). Grease a 10 inch tube pan. Line bottom with parchment paper and grease again.
  • In large bowl, cream sugar and shortening until light and fluffy. Add eggs and blend well.
  • Lightly spoon flour into measuring cup; level off. Combine 1/2 cup of flour with nuts, raisins, dates and 1/2 cup cherries, stir until coated. Set aside.
  • Add remaining 2 3/4 cups flour, baking soda, cinnamon, allspice, cloves and salt to egg mixture. Blend at low speed until moistened, then beat 2 minutes on medium speed.
  • Fold fruit and nut mixture and applesauce into batter. Pour batter into a 10 inch tube pan. Arrange cherry halves and pecans on top.
  • Bake at 325 degrees F (160 degrees C) for 1hour and 15 to 45 minutes, or until toothpick inserted in center comes clean. Cool upright in pan 5 minutes. Turn upright onto wire rack and remove pan and parchment paper. Cool completely.

2 cups sugar
1 cup shortening
3 cups unsweetened applesauce
4 teaspoons cinnamon
1 teaspoon clove
1 teaspoon nutmeg
4 teaspoons allspice
1 tablespoon jam (any fruit)
4 cups flour
1/2 teaspoon salt
2 teaspoons baking soda
2 eggs
1/2 lb candied pineapple
1/2 lb candied cherry
1 lb mixed candied fruit
1 lb dates, chopped
1 cup raisins
2 cups walnuts, chopped

Steps:

  • Combine all ingredients except fruits and nuts and mix until smooth.
  • Stir in fruits and nuts.
  • Line the bottom of two large loaf pans or one tube pan with well-greased and floured double-thickness brown paper.
  • Bake at 300 degrees for one hour (test for doneness with a toothpick).

2 c applesauce, unsweetened
1 c shortening
2 c sugar
1 lb pitted dates, chopped
1 lb raisins
1 lb nuts, chopped
1 jar(s) maraschino cherries, drained and chopped
1 can(s) crushed or chunk pineapple, drained
4 1/2 c all purpose flour
4 tsp baking soda
1 tsp nutmeg
2 1/2 tsp cinnamon
1 1/2 tsp ground cloves
1 tsp salt

Steps:

  • 1. Preheat oven to 250 degrees. In medium saucepan combine applesauce, shortening and sugar. Boil for 5 minutes, stirring occasionally. Remove from heat and cool.
  • 2. Meanwhile, stir together dates, raisins, nuts, cherries and pineapple in a large bowl. Add the cooked mixture to the fruit and nuts. Then add dry ingredients and mix well.
  • 3. Prepare pan of your choice (tube pan, loaf pans) by greasing well and line bottom with waxed paper which you then also grease. Fill prepared pan 2/3 full. Bake at 250 for 2 hours or until cake tests done.
  • 4. Cool completely. Remove from pan(s) and remove waxed paper. Wrap in foil and store in refrigerator or cool place.

6 cups all-purpose flour
4 teaspoons baking soda
2 teaspoons baking powder
1 teaspoon salt
1 1/2 cups dates, chopped
4 cups walnuts, chopped
2 cups sugar
1 cup white grape juice
1 teaspoon clove
1 teaspoon nutmeg
1 teaspoon cinnamon
4 lbs candied fruit
2 cups raisins
1 cup butter
4 eggs
3 cups applesauce

Steps:

  • Sift together flour, baking soda, baking powder, salt and spices.
  • Measure out fruit and nuts, dates and raisins in a very large bowl.
  • Cream together butter and sugar, add eggs and beat well.
  • Alternately add dry ingredients and grape juice to creamed mixture, beating well after each addition.
  • Mix into fruit, nuts and applesauce.
  • Pour into prepared pans weighing about 2 lb. each.
  • Bake at 275F about 2 hours, or until pick comes out clean.

4 c all purpose flour
6 Tbsp cocoa powder
2 c sugar
2 Tbsp cornstarch
4 tsp soda
2 tsp cinnamon
1 tsp cloves
1 tsp nutmeg
1 c candied fruit
2 c raisins (may use half dark and half golden)
2 c chopped nuts
3 c applesauce
1 c mazola corn oil
2 tsp vanilla
topping
2 c powdered sugar
2 Tbsp butter, room temperature
2 Tbsp bourbon, brandy, spiced or plain rum

Steps:

  • 1. Mix in order. I mix by hand as it is hard to mix. But do it in order so that fruit and raisins will be coated with dry ingreidents.
  • 2. Pour into pans but grease and flour them. You can use a bundt pan also. When giving as gifts, I use small loaf pans. (Mini) and give 1 per person.
  • 3. Heat oven to 350 degrees. Bake 1 hour and 10 mins. Toothpick test should be slightly damp. Otherwise cake is dry.
  • 4. Remove from pans. Cool. May brush with same as you used above, (bourbon, brandy, spiced rum, or plain rum.) lightly on all sides with a small paint brush or pastry brush. Store wrapped in plastic wrap and then heavy foil.
  • 5. When serving, stir topping ingredients together and drissel on top. If giving as gifts, Mix topping and put enough in a snack zip lock baggie. Scotch tape to ribbon on top and put on card to snip 1 corner of baggie and drissel over cake. May also add the receipe.

1-1/2 cups KRAFT Shredded Sharp Cheddar Cheese
1/2 cup (1 stick) butter, softened
1 cup granulated sugar
2 eggs
1 cup applesauce
4 oz. (1/2 of 8-oz. pkg.) PHILADELPHIA Cream Cheese, softened
3 Tbsp. milk
1 tsp. brandy extract
2-1/2 cups sifted powdered sugar

Steps:

  • Preheat oven to 325°F. Combine flour, baking powder, cinnamon, salt and nutmeg; set aside. Mix pecans, dates and cherries in large bowl. Add 1 cup of the flour mixture and the cheddar cheese; mix well. Set aside.
  • Beat butter and granulated sugar in large bowl with electric mixer on medium speed until light and fluffy. Add eggs, one at a time, mixing well after each addition. Add remaining flour mixture alternately with the applesauce, beating until well blended after each addition. Gently stir in the Cheddar cheese mixture. Pour into well-greased 12-inch tube pan or fluted tube pan.
  • Bake 1 hour 10 min. Cool in pan 10 min; remove from pan to wire rack. Cool completely. Beat cream cheese, milk and extract in medium bowl with electric mixer until well blended. Gradually add powdered sugar, beating until light and fluffy after each addition. Spread over the cake.
