This simple recipe takes the headache out of holiday baking. There are only three ingredients, and no basting or constant checking is required.

1 (12 pound) whole turkey - thawed, neck and giblets removed
¼ cup vegetable oil, or as needed
5 apples, cored and quartered
5 pounds whole unpeeled apples

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • If necessary, unbind legs of turkey. Rinse and dry turkey with paper towels. Place turkey into a roasting pan with a lid, and rub the oil all over the turkey, inside and out. Stuff the body and neck cavities of the turkey with the apple quarters; arrange whole apples around the turkey in the roasting pan. Scatter any extra apple quarters into the pan. Cover the roasting pan.
  • Roast in the preheated oven until the skin is browned and the meat is beginning to separate from the legs, 2 1/2 to 3 hours. Remove lid in last 20 minutes of roasting if needed to brown skin. Use pan drippings for gravy, if desired.

1 can (14-1/2 ounces) reduced-sodium chicken broth
1/2 cup unsweetened apple juice, divided
1/2 teaspoon salt, divided
1 cup uncooked long grain brown rice
1/3 cup raisins
1/2 cup chopped celery
1/2 cup chopped onion
1 tablespoon butter
1 cup chopped tart apple
1 teaspoon poultry seasoning
1/4 teaspoon pepper
1 turkey (10 to 12 pounds)

Steps:

  • In a saucepan, combine the broth, 1/3 cup apple juice and 1/4 teaspoon salt. Bring to a boil. Stir in the rice and raisins. Return to a boil. Reduce heat; cover and simmer for 40-50 minutes or until rice is tender., Meanwhile, in a nonstick skillet, cook celery and onion in butter for 2 minutes. Add apple; cook and stir for 3 minutes or until vegetables are tender. Combine the rice mixture, apple mixture, poultry seasoning, pepper and remaining apple juice and salt. , Just before baking, loosely stuff turkey. Skewer turkey openings; tie drumsticks together. Place breast side up on a rack in a roasting pan. Bake, uncovered, at 325° for 2-3/4 to 3 hours or until a thermometer reads 180° for the turkey and 165° for the stuffing. (Cover loosely with foil if turkey browns too quickly.), Cover turkey and let stand for 20 minutes. Remove stuffing and carve turkey, discarding skin. If desired, thicken pan drippings for gravy.

I heard of this recipe on the radio one morning (CBC radio one: Edmonton am) and found it on their website and the website said that the recipe is from Alberta Turkey Producers. I haven't tried it yet but I will soon!! EDIT: I did try it and it was fantastic!! I'm glad that I kept this recipe on here so I can keep it somewhere safe! It's fantastic for Thanksgiving for two people...that's what I made it for.

1 (1 -2 lb) skinless boneless turkey breast
1/4 cup apple juice
2 tablespoons butter
1/4 cup onion, finely diced
1/4 cup celery, finely diced
2 tablespoons butter
1 small apple, peeled cored and finely chopped
1/2 teaspoon dried thyme
1/2 teaspoon sage
1/2 teaspoon salt
1/4 teaspoon pepper
2 cups bread cubes, day old
1/4 cup turkey broth or 1/4 cup chicken stock
1 cup turkey broth or 1 cup chicken stock
2 teaspoons cornstarch

Steps:

  • To Prepare Stuffing: Sauté onion and celery in butter for 2 to 3 minutes.
  • Add apple and seasonings and sauté 1 to 2 minutes longer.
  • Remove from heat and add to bread cubes.
  • Moisten with turkey or chicken stock and set aside to cool.
  • To Prepare Turkey Breast: Pre-heat the Oven at 350°F.
  • Place turkey breast flat on a cutting surface and slice through meat with knife parallel to cutting board. Leave last inch intact and open up turkey breast like a book.
  • Cover turkey with plastic wrap and pound to even thickness with a meat mallet.
  • Spoon stuffing onto one side of the breast.
  • Fold other side over and secure with skewers or toothpicks along cut edge.
  • Place in greased roasting pan.
  • Combine apple juice with melted butter.
  • Brush over turkey.
  • Tent turkey breast with foil and bake at 350 F for 40 minutes.
  • Uncover and baste with remaining apple mixture.
  • Bake 30 to 40 minutes longer or until juices run clear.
  • Remove from oven and let sit 5 minutes before slicing.
  • To Prepare Sauce: Combine turkey or chicken stock with cornstarch and add to drippings.
  • Stir and cook until thick and clear.
  • Spoon sauce over thick slices of stuffed turkey breast.
  • Served with mashed potatoes and vegetables.

I found this terrific recipe a few years back and tried it our on some friends at a dinner party. Everyone enjoyed the combination of flavors and unique ingredients. It has become my "staple". 3 medium onions, chopped
3 medium tart apples, chopped

2 teaspoons grated lemon zest

1 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon fennel seed, crushed
1/2 cup butter
1-1/2 cups slivered almonds, toasted
1/2 cup dried currants
1 cup turkey or chicken broth
1/2 cup apple juice
1 turkey (14 to 16 pounds)

Steps:

  • Cut bread into 1/2-in. cubes and place in a single layer on ungreased baking sheets. Bake at 225° for 30-40 minutes, tossing occasionally until partially dried. , Meanwhile, in a skillet, saute the next 10 ingredients in butter until onions and apples are tender, about 15 minutes. , Transfer to a large bowl. 5 lb skinless; boneless turkey breast
2 tablespoons olive oil
1/2 cup sliced green onions
1/4 cup diced celery
2 granny smith apples peeled, cored and chopped
1 cup cooked long-grain rice; cook with out fat/salt
1 cup cooked wild rice; cook with out fat/salt
1/3 cup apricot, apple or other fruit and jam plus 1 tablespoon extra set aside
2 tablespoons minced fresh parsley
1/4 teaspoon ground cinnamon; divided,
-Plus
1/8 teaspoon ground cinnamon
1/4 teaspoon ground cloves; divided
-Plus
1/8 teaspoon ground cloves
1/4 teaspoon ground allspice; divided
-Plus
1/4 teaspoon ground allspice
3 tablespoons unsweetened orange juice
1 watercress sprigs; optional

Steps:

  • Trim fat from turkey; remove tendons. Place turkey breast, bone-side up on plastic wrap. Slice horizontally through the thickest part of each side almost to, but not through the outer edge. Flip cut piece over to enlarge breast. Place plastic wrap over turkey; flatten to an even thickness using a meat mallet. (Place loose piece of turkey over thinner portions.) Set aside. Add the oil to a nonstick skillet and place over medium-high heat until hot. Add onions and celery; saute until tender. Remove from heat. Add rice, 1 tablespoon apricot spread, parsley and teaspoon each of cinnamon, cloves, apples and allspice; stir. Spread rice mixture down center of turkey breast to within 2" of sides; roll up, jellyroll fashion, starting with short side, to an 11 X 16" roll. Secure at 2" intervals with heavy string. Place turkey roll, seam-side down on a rack coated with cooking spray; place rack in a shallow roasting pan; set aside. Combine remaining 1/3 cup apricot spread, 1/8 teaspoon cinnamon, 1/8 teaspoon cloves, 1/8 teaspoon allspice and orange juice; stir well and set aside. Brush turkey with apricot mixture. Bake uncovered at 325 F for 2 hours, basting often with apricot mixture. Place turkey roll on a serving platter, and let stand 10 minutes; remove string. Garnish with watercress sprigs.
