½ cup margarine
⅔ cup white sugar
2 eggs
1 ½ cups all-purpose flour
1 teaspoon ground cinnamon
1 teaspoon ground allspice
2 teaspoons baking powder
½ teaspoon baking soda
1 cup applesauce

Steps:

  • Preheat oven to 350 degree F (175 degrees C). Line a mini muffin pan with paper liners.
  • In a large bowl, cream together the butter or margarine and sugar. Add eggs, and beat until smooth. Blend in cinnamon, allspice, baking powder, and baking soda. Alternately add in a half cup of applesauce, one cup of flour, remaining applesauce, and remaining flour. Stir until just blended together. Pour batter into muffin cups 2/3's of the way full.
  • Bake in preheated 350 degree F (175 degrees C) oven for 17 minutes.

2 cups all-purpose flour
3 teaspoons baking powder
1-1/4 teaspoons ground cinnamon
1/2 teaspoon baking soda
1 cup sugar
1/2 teaspoon salt
2 large eggs
1 cup sour cream
1/4 cup butter, melted
1-1/2 cups chopped peeled tart apples
TOPPING:
1/4 cup sugar
3 tablespoons all-purpose flour
1/4 teaspoon ground cinnamon
2 tablespoons cold butter

Steps:

  • In a large bowl, combine dry ingredients. In another bowl, beat the eggs, sour cream and butter. Stir into dry ingredients just until moistened. Fold in apples. Fill greased or paper-lined muffin cups two-thirds full. , For topping, combine sugar, flour and cinnamon. Cut in butter until mixture resembles coarse crumbs. Sprinkle a rounded teaspoonful over each muffin. , Bake at 400° for 18-20 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pans to wire racks. Serve warm.

Number Of Ingredients 14

2 large golden Delicious apples, peeled and chopped
1/2 cup butter, cubed
3 cups All-Bran
1 cup boiling water
2 cups buttermilk
2 eggs, lightly beaten
2/3 cup sugar
1 cup raisins
2-1/2 cups all-purpose flour
2-1/2 teaspoons baking soda
2 teaspoons ground cinnamon
1 teaspoon ground nutmeg
1/2 teaspoon ground cloves
1/2 teaspoon salt

Steps:

  • In a skillet, saute apples in butter until tender, about 10 minutes. Combine cereal and water in a large bowl; stir in buttermilk, eggs, sugar, raisins and apples with butter. Combine dry ingredients; stir into apple mixture just until moistened. Refrigerate in a tightly covered container for at least 24 hours (batter will be very thick). Fill greased or paper-lined muffin cups three-fourths full. Bake at 400° for 20-25 minutes or until muffins test done. Cool in pan 10 minutes before removing to a wire rack.

1 cup bran flakes (I sometimes use raisin bran)

Steps:

  • preheat oven to 375. grease muffin tin.
  • Combine sour cream, butter and egg. Add bran flakes, let stand till softened.

  • (As with most muffin recipes, you could fold in 1/2 cup chopped nuts here as well).

1/2 tsp cinnamon
1/4 cup butter
1/2 cup flour
1 tbsp granulated sugar
Pinch of salt
1 1/2 cup flour
1/2 cup butter
1/2 cup brown sugar
3 tbsp honey
2 eggs
1/2 cup sour cream or plain whole milk yogurt
1 tsp baking powder
1 tsp soda
1 tsp cinnamon
1 tsp nutmeg
1/2 tsp salt
1/4 cup buttermilk
1 tsp lemon juice
2 medium apples, peeled
1 tsp sugar
1/2 tsp nutmeg
1/4 tsp salt
1 tbsp lemon juice

Steps:

  • Preheat the oven to 400 degrees and begin making the crumble topping.
  • In a small mixing bowl, add together the brown sugar, cinnamon, and salt. Using a fork, stir together, breaking up any lumps from the brown sugar.
  • In a microwavable bowl, melt 4 tablespoons or ¼ cup of butter (about 30 seconds). Pour over the sugar mixture with a small spatula and stir until smooth.
  • Add one tablespoon at a time of 1/2 cup of flour and lightly stir with the fork. Sprinkle granulated sugar over the crumble topping, lightly toss with a fork, and set aside.
  • In a large bowl, combine the flour, baking soda, baking flour, salt, cinnamon, and nutmeg and whisk well for 30-60 seconds.
  • In a medium-sized bowl, combine the butter, brown sugar, and vanilla and beat using a hand mixer or stand mixer until smooth.
  • Add the eggs and honey, continuing to beat.
  • Finally, add the sour cream, buttermilk, and lemon juice until smooth. Set aside.
  • Using your peeled apples, dice into small squares.
  • In a small bowl, toss with sugar, nutmeg, salt, and lemon juice. Set aside.
  • Combine your wet and dry ingredients using a spatula or rubber scraper to create the muffin batter without over mixing it. Add half of your apple filling and gently fold into the batter.
  • Using an ice cream scooper, spoon the muffin batter into a degreased muffin tray (you should have about four muffins worth of batter leftover). Spoon the remaining apples onto the tops of the muffin batter and gently press down.
  • Using a tablespoon, sprinkle your crumble mixture over the tops of the muffins.
  • Once you've put your muffins into the oven, immediately lower the temperature to 350 degrees.
  • Bake for 14-17 minutes, rotating tray once halfway. Move the muffins to a cooling rack as soon as they're ready, let cool, and enjoy!

1 teaspoon vanilla extract
1 cup all-purpose flour
1 cup 100% all-bran cereal
2 teaspoons baking powder
1 teaspoon baking soda
2 teaspoons pumpkin pie spice
1/4 teaspoon salt
1/2 cup raisins
2 cups unpeeled apples, coarsely chopped

Steps:

  • Preheat oven to 400 degrees.
  • Line muffin tin with paper cupcake liners.
  • Cream butter with both sugars in a large mixing bowl until fluffy.
  • Add egg, egg whites, sour cream, yogurt, molasses, and vanilla - mixing until well combined.
  • Add flour, bran cereal, baking powder, bakng soda, pumpkin pie spice, salt, raisins and apple pieces until just barely combined. Don't overmix - batter will be lumpy.
  • Spoon into prepared muffin tin. Bake about 15 minutes if using gem sized muffin cups or 20 minutes if using regular sized muffin cups. Tops of muffins will spring back when lightly touched.

1 cup miller's bran (available at natural foods stores, specialty foods shops, and some supermarkets)

Steps:

  • In a large bowl with an electric mixer cream together the butter and the brown sugar until the mixture is light and fluffy, beat in the egg, the sour cream, and the molasses, and stir in the raisins. In a bowl whisk together the flour, the baking soda, the salt, and the bran, add the mixture to the sour cream mixture, and stir the batter until it is just combined. (The batter will be lumpy.) Spoon the batter into 12 well-buttered 1/3-cup muffin tins and bake the muffins in the middle of a preheated 400°F. oven for 15 to 20 minutes, or until they are golden brown and springy to the touch. Turn the muffins out onto a rack and let them cool.

Steps:

  • Set oven to 350°F.
  • Set oven rack to second-lowest position.
  • Butter 12 muffin tins or line with paper liners.
  • For muffins: in a small bowl mix together first 7 dry ingredients.
  • In another large bowl whisk together eggs and brown sugar until well combined.
  • Add in melted butter whisking continuously until mixture is creamy.
  • Stir in applesauce.
  • Fold in flour mixture until JUST combined.
  • Stir in nuts.

2/3 cup unsweetened apple juice
1/4 cup canola oil
1-1/2 cups grated peeled apples

Steps:

  • In a large bowl, combine the first 7 ingredients. In another bowl, whisk the eggs, apple juice and oil. Stir into dry ingredients just until moistened. Fold in apples., Fill 12 greased or paper-lined muffin cups three-fourths full. Bake at 400° for 18-20 minutes or until a toothpick inserted in the center comes out clean. Cool for 5 minutes before removing from pan to a wire rack. Serve warm., Freeze option: Freeze cooled muffins in tightly sealed freezer containers.
