PROSCIUTTO BRUSCHETTA

8 slices crusty sourdough bread, cut on the diagonal from a 1-pound loaf
Extra-virgin olive oil
1 clove garlic
8 thin slices fresh mozzarella
8 thin slices prosciutto
8 fresh basil leaves

Steps:

  • Preheat the broiler.
  • Brush the bread on both sides generously with oil and place on a baking sheet. Broil until golden and crispy, 2 minutes per side.
  • Remove, let cool slightly, and rub the garlic all over one side of each slice. Place a slice of cheese on each piece of bread, then top each with a slice of prosciutto. Return to the oven until the cheese is melted and golden, 2 minutes.
  • Garnish with a basil leaf and serve.

8 plum tomatoes, seeded and chopped
1 cup chopped sweet onion
1/4 cup grated Romano cheese
1/4 cup minced fresh basil
2 ounces thinly sliced prosciutto, finely chopped
1 shallot, finely chopped
3 garlic cloves, minced
1/3 cup olive oil
1/3 cup balsamic vinegar
1 teaspoon minced fresh rosemary
1/4 teaspoon pepper
1/8 teaspoon hot pepper sauce, optional
1 French bread baguette (10-1/2 ounces), cut into 1/4-inch slices

Steps:

  • In a large bowl, combine the first seven ingredients. In another bowl, whisk the oil, vinegar, rosemary, pepper and pepper sauce if desired. Pour over tomato mixture; toss to coat., Place bread slices on an ungreased baking sheet. Broil 3-4 in. from the heat for 1-2 minutes or until golden brown. With a slotted spoon, top each slice with tomato mixture.

1/4 cup olive oil
1/2 cup chopped walnuts
2 tablespoons grated Parmesan cheese
2 tablespoons minced fresh rosemary
1 loaf (12 ounces) focaccia bread
8 thin slices prosciutto
1 medium apple, sliced
6 ounces Brie cheese, rind removed and sliced

Steps:

  • In a blender, combine the oil, walnuts, cheese and rosemary; cover and process until blended and nuts are finely chopped. With a bread knife, split focaccia into two horizontal layers. Spread rosemary mixture over cut sides of bread. , On bottom of bread, layer the prosciutto, apple and Brie; replace bread top. Cut into quarters. , Cook on an indoor grill for 2-3 minutes or until bread is browned and cheese is melted. To serve, cut each wedge in half.

Slow-roast late summer tomatoes to make them extra sweet and flavourful. Serve with ricotta and prosciutto for a brilliant bruschetta

250g mixed heritage tomatoes , halved
2 tbsp extra virgin olive oil , plus extra to serve
3 thyme sprigs
120g ricotta
40g grated parmesan
1 lemon , zested and sliced
3 large slices sourdough , halved and sliced
100g prosciutto

Steps:

  • Heat the oven to 140C/120C fan/gas 1. Put the tomatoes, cut-side up, on a large baking sheet lined with baking parchment. Sprinkle over 1 tsp sea salt, drizzle with 1 tbsp oil, and scatter over the thyme. Roast for 1½-2 hrs, or until the tomatoes are wrinkled and a touch charred but still juicy. Leave to cool.
  • Combine the ricotta, parmesan and lemon zest. Season. Heat a griddle pan over a high heat. Brush the bread with the remaining oil and griddle for 2-3 mins on each side, or until lightly toasted. Top with the ricotta mixture, tomatoes, prosciutto and a drizzle of olive oil.

8 thick slices crusty Italian bread
350 g marinated feta
1 garlic clove, halved
2 tablespoons parsley, chopped
8 thin slices prosciutto
1 delicious apple, cored, finely sliced
1 tablespoon olive oil
1 tablespoon balsamic vinegar

Steps:

  • Preheat grill to high heat.
  • Place bread on baking tray.
  • Drain feta, reserve oil.
  • Brush both sides of bread with reserved oil.
  • Grill bread for 1 minute each side or till golden.
  • Rub cut side of garlic over i side of bread.
  • Crumble feta in bowl, add parsley, combine well.
  • Spread feta over garlic side of bread.
  • Top with prosciutto and apple.
  • Whisk together oil and vinegar, drizzle over bruschetta.
  • Season to taste.
