1 sheet puff pastry
1 handful handful pecans, chopped
2 tablespoons butter, melted
1 teaspoon brown sugar
1 apple, cut into 8 segments
2 teaspoons cinnamon
1 teaspoon nutmeg
1 teaspoon ground ginger
½ teaspoon allspice

Steps:

  • Stir all of the 'spice mix' ingredients together.
  • Roll the puff pastry out and cut some rough isosceles triangle shapes from it.
  • Take a thick slice of apple, dip it into the melted butter and place on the end of the pastry.
  • Scatter a teaspoon of brown sugar over the pastry. Pour some roughly chopped pecans on top of that. Sprinkle 1 teaspoon of spice mix over all of that.
  • Starting at the apple segment, roll the pastry until everything is wrapped into a neat little package.
  • Bake in the centre of a pre-heated oven for 25-30 minutes - 180°C (350°F) Gas Mark 4.
  • Allow to cool for 3-5 minutes before eating because the contents are hot!
  • Enjoy!

2 apples, peeled and diced
2 tablespoons white sugar
1 ½ tablespoons ground cinnamon, divided, or more to taste
1 tablespoon melted butter
1 egg white
20 wonton wrappers

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Combine apples, sugar, 1 tablespoon cinnamon, and butter in a bowl.
  • Wet all edges of wonton wrappers with water. Place 1 tablespoon of apple mixture in center of each wonton. Fold all 4 corners of wonton to the middle. Squeeze together.
  • Brush egg white onto the wonton wrappers and sprinkle with remaining cinnamon. Place wontons on a baking sheet.
  • Bake in the preheated oven until golden brown, about 15 minutes.

⅓ cup almond butter
¼ cup maple syrup, or honey
1 teaspoon vanilla extract
1 ½ cups rolled oats
1 teaspoon cinnamon
1 pinch of salt

Steps:

  • In a medium bowl, combine the grated apple, almond butter, maple syrup, and vanilla, and stir until smooth.
  • Add the oats, cinnamon, and salt, and mix until evenly distributed.
  • Chill in the refrigerator for 30 minutes.
  • Use a tablespoon to scoop out the mixture, then roll into balls with your hands.

We used mini-muffin cups and Pillsbury™ Pie Crust to make these mini caramel apple pie bites. Ready in 35 minutes, it's as easy as, well, apple pie.

1 crust from 1 box (14.1 oz) refrigerated Pillsbury™ Pie Crusts (2 Count), softened as directed on box
1/3 cup canned apple pie filling, apples chopped into small pieces
1/3 cup caramel topping

Steps:

  • Heat oven to 450°F.
  • Unroll pie crust on work surface. Using rolling pin, roll out slightly. Using 2 1/2- to 3-inch round cookie cutter, cut 16 rounds from pie crust. Press rounds into 16 ungreased mini muffin cups, folding edges if needed. Generously prick each crust with fork.
  • Bake 4 to 6 minutes or until light brown. Cool 2 minutes in pan before removing to cooling rack to cool completely.
  • Fill each cooled cup with 1 teaspoon pie filling. Drizzle 1 teaspoon caramel sauce over top of each. Serve immediately.

I've seen dozens of different recipes for these quick snacks, and this is just one way of making this alternative to that famous all-American treat....mom's apple pie. It's super easy to prepare, and they make such a welcome addition to nearly any picnic or party. Once baked, they travel well, too. Most apples are OK to use....

1 tsp ground cinnamon
1/2 tsp ground nutmeg
1/4 tsp ground allspice
1/8 tsp ground cloves
1 (8-oz) pkg refrigerated crescent rolls
3 Tbsp unsalted butter, melted
1/4 cup light brown sugar, packed
1 medium baking apple, cored and cut in 8 slices (each about 1/2 inch wide) - good varieties to use are granny smith or honeycrisp

Steps:

  • 1. Preheat oven to 375°F. Line a baking sheet with parchment paper; set aside.
  • 2. In a small bowl, thoroughly blend the cinnamon, nutmeg, allspice and cloves; set aside.
  • 3. Open package of rolls, and place all 8 crescent rolls on the lined baking sheet, with the wide ends facing you.
  • 4. Brush a light layer of butter on the surface of each crescent roll. Spread about 1 1/2 teaspoons (or so) of brown sugar on each crescent roll.
  • 5. Roll apple slices in the cinnamon/nutmeg/clove spice blend until well coated. Place one apple slice at the tip (wide end) of each crescent roll. Starting with the wide end, roll each crescent roll, pinch the tip end to seal. If needed, turn each so that the tip is on the bottom (to avoid unrolling during baking). Brush a little butter over each rolled Apple Bite Bite, and dust the tops with a generous pinch (or more) of remaining cinnamon/nutmeg/cloves spice mix.
  • 6. Bake 10 to 12 minutes or until lightly browned. Remove baking sheet from oven and serve immediately with a scoop of vanilla ice cream, or let cool completely and enjoy later as a quick snack.

PHYLLO CUP INGREDIENTS:
2 tablespoons Smart Balance® Buttery Spread Original
6 sheets frozen phyllo dough, thawed

Steps:

  • TO MAKE PHYLLO CUPS:
  • Preheat oven 350 degrees F
  • Place buttery spread in a small microwave safe bowl and cook on high setting 20 seconds or until just melted
  • Work with one sheet at a time; keep the remaining sheets covered in plastic wrap or a slightly damp paper towel

1/4 teaspoon nutmeg
1/2 teaspoon cinnamon
1 (8 ounce) package vanilla pudding mix
1 cup water
4 cups graham cracker crumbs
1/2 cup whipped cream topping
1 cup powdered sugar

Steps:

  • In a large saucepan, mix apples, water, gelatin, nutmeg and cinnamon until it reaches a boil. Reduce heat. Cover and simmer for 4 to 6 minutes. Mix dry pudding mix and 1 cup water. Combine with apple mixture. Cook until thick. Remove from heat. Pour graham cracker crumbs on bottom of a 9 x 9 dish. Even out. Pour filling over the crumbs. Top with whipped cream and powdered sugar. Chill for at least 3 hours before cutting into bite sized pieces.
