I've been baking for years and enjoy seeing the smiles on family members' faces whenever they sample one of my treats...like these delicious muffins!

Yield 1 dozen.

Number Of Ingredients 14

1-1/3 cups all-purpose flour
1 cup quick-cooking oats
2/3 cup sugar
1 tablespoon baking powder
1-1/2 teaspoons ground cinnamon
1/2 cup milk
1/3 cup butter, melted
1/4 cup maple syrup
1 large egg, lightly beaten. room temperature
2 cups chopped peeled apples
12 pecan halves
GLAZE:
1/3 cup confectioners' sugar
2 tablespoons maple syrup

Steps:

  • In a large bowl, combine the flour, oats, sugar, baking powder and cinnamon. In a small bowl, mix milk, butter, syrup and egg; stir into dry ingredients just until moistened. Fold in apples. , Fill greased or paper-lined muffin cups three-fourths full. Top each with a pecan half. Bake at 400° for 18-20 minutes or until a toothpick comes out clean. Cool for 10 minutes before removing from pan to a wire rack to cool completely. , For glaze, mix confectioners' sugar and syrup; drizzle over muffins.

Grain-free apple muffins with a crunchy Maple Cinnamon Walnut Streusel topping! Made with a winning combination of almond flour and tapioca flour with lots of apple chunks in every bite, these healthy muffins can also be made sugar-free.

2 cups almond flour, (finely ground)
1/2 cup tapioca starch, ((tapioca flour))
1 tbsp ground cinnamon
1/2 tsp sea salt
2 tsp baking powder
1 tbsp lemon zest, (finely grated)
1/4 cup coconut oil or butter, (melted)
1/2 cup granulated sweetener, (Golden Monkfruit, coconut sugar, or brown sugar)
2 large eggs
1 tsp pure vanilla extract
1 1/2 cups apples, (peeled, cored and finely diced)
1/4 cup almond flour
1 tsp ground cinnamon
1/2 cup walnuts, (finely chopped)
1 pinch sea salt
2 tbsp granulated sweetener, (Golden Monkfruit, coconut sugar, or brown sugar)
1 tbsp + 1 tsp maple syrup
1/2 cup confectioner's sugar (or powdered Monkfruit or Swerve)
1 1/2 tbsp heavy cream, milk or plant-based milk
1/2 tsp pure vanilla extract

Steps:

  • In a small bowl, combine all streusel topping ingredients. Set aside.
  • Heat oven to 350°F.
  • Line muffin tins with paper or silicone liners.
  • In a medium bowl, combine melted and cooled butter (or coconut oil), sweetener, room temperature eggs and vanilla.
  • In a large bowl, combine almond flour, tapioca flour, cinnamon, salt, baking powder and lemon zest.
  • Add the wet ingredients to the dry ingredients, then gently stir in the diced apples.
  • The batter will be thick. Divide the batter evenly between the muffin cups. Top each with 2- 3 teaspoons of streusel mixture, pressing it gently into the batter.
  • Bake for 18-20 minutes or until toothpick comes out clean.
  • Cool completely before glazing with optional Vanilla Glaze.
  • Combine powdered sweetener with vanilla and cream, one teaspoon at a time until you've achieved desired consistency. The glaze should be just runny enough to spread.

1-1/4 teaspoons ground cinnamon
1/2 teaspoon baking soda
1 cup sugar
1/2 teaspoon salt
2 large eggs
1 cup sour cream
1/4 cup butter, melted
1-1/2 cups chopped peeled tart apples
TOPPING:
1/4 cup sugar
3 tablespoons all-purpose flour
1/4 teaspoon ground cinnamon
2 tablespoons cold butter

Steps:

  • In a large bowl, combine dry ingredients. In another bowl, beat the eggs, sour cream and butter. Stir into dry ingredients just until moistened. Fold in apples. Fill greased or paper-lined muffin cups two-thirds full. , For topping, combine sugar, flour and cinnamon. Cut in butter until mixture resembles coarse crumbs. Sprinkle a rounded teaspoonful over each muffin. , Bake at 400° for 18-20 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pans to wire racks. Serve warm.

4 cups Original Bisquick™ mix
3/4 cup granulated sugar
3 teaspoons ground cinnamon
2/3 cup chunky applesauce
1/2 cup milk
1/4 cup vegetable oil
2 eggs
3 tablespoons Original Bisquick™ mix
1/4 cup packed brown sugar
2 tablespoons butter or margarine, melted

Steps:

  • Heat oven to 400°F. Spray 12 regular-size muffin cups with cooking spray.
  • In large bowl, stir together 4 cups Bisquick mix, 1/2 cup of the granulated sugar and 2 teaspoons of the cinnamon; make well in center of mixture. In small bowl, mix applesauce, milk, oil and eggs; add to dry ingredients, stirring just until moistened. Divide batter evenly among muffin cups, filling almost full.
  • In small bowl, mix 3 tablespoons Bisquick mix, remaining 1/4 cup granulated sugar, remaining 1 teaspoon cinnamon and the brown sugar. Stir in butter until well blended. Sprinkle evenly over batter.
  • Bake 18 to 20 minutes or until toothpick inserted in center comes out clean and tops are golden brown. Cool 5 minutes. Remove from pan to cooling rack. Serve warm, if desired.
