APPLE CIDER MAC-SLAW
I created this macaroni salad one day when I was cleaning our my refrigerator and had some cabbage, carrots, apples and apple cider dressing I had to use. Steps:
- 1. In a large bowl, combine the cooked macaroni, onion, celery, hard cooked eggs, cabbage, apple, peas and carrots. Toss gently to combine.
- 2. In a medium bowl, combine the apple cider dressing, Miracle Whip, sugar, salt and vinegar. Mix well. (If you can't find apple cider dressing .... I use Ken's ..... substitute apple juice concentrate and Miracle Whip and proceed as written)
- 3. Pour dressing over pasta mixture and toss to coat.
- 4. Cover and refrigerate for 1-2 hours before serving.
CIDER VINEGAR COLESLAW
Creamy coleslaw isn't for everyone. For this version, we toss shredded cabbage and carrots with a cider vinegar-based dressing that's flavored with a little sugar and celery salt for a tangy, sweet and sour kick. Parsley leaves and scallions are tossed in before serving for a refreshing finish.

- Whisk the vinegar, sugar and celery salt in a large bowl to dissolve the sugar. Whisk in the vegetable oil. Add the cabbage and carrots and toss to combine. Season with kosher salt and pepper.
- Cover the slaw and refrigerate at least 1 hour. Toss again and season with salt and pepper. Stir in the parsley and scallions.
