1 teaspoon lemon juice
1 granny smith apple, peeled, cored and finely chopped
8 ounces light cream cheese, softened
1 teaspoon brown sugar
1 tablespoon low-fat milk
1/2 cup grated carrot
1/4 cup golden raisin
1/4 cup finely chopped pecans
1/4 teaspoon cinnamon
wheat bread, crusts removed

Steps:

  • In a small bowl, toss the lemon juice with the finely chopped apple.
  • Add the softened cream cheese, brown sugar and milk and beat well.
  • Stir in all remaining ingredients; mix well.
  • Spread onto crustless bread, sandwich and cut into squares or triangles.

1 loaf cinnamon raisin bread
8 ounces cream cheese frosting (1/2 can)
8 ounces softened cream cheese
1 cup grated carrot
1/4 cup walnuts or 1/4 cup pecans

Steps:

  • Trim crusts off of bread.
  • Combine frosting, cream cheese, carrot and nuts.
  • Spread filling evenly on bread, top with another slice of trimmed bread to create sandwiches.
  • Slice sandwiches into quarters, and be creative with the shapes, long fingers, squares, triangles, or use cookie cutters to create other fun shapes.
  • Chill for at least an hour before serving.

2 cups shredded carrots
1 Granny Smith apple, cored and shredded
½ cup chopped fresh parsley
¼ cup lemon juice
2 tablespoons apple cider vinegar
1 tablespoon white sugar
1 clove garlic, minced
1 teaspoon salt
½ teaspoon ground black pepper
2 tablespoons safflower oil

Steps:

  • Heat a skillet over medium heat; pour sesame seeds into the hot skillet. Cook, stirring often, until sesame seeds are lightly browned and fragrant, 3 to 5 minutes. Remove from heat.
  • Mix carrots, apple, toasted sesame seeds, and parsley together in a bowl.

1-1/2 cups diced carrots (about 6 medium)
2 cups water
1 tablespoon butter
1/4 cup packed brown sugar
1 tablespoon lemon juice
1/8 teaspoon ground cinnamon
1 cup diced peeled apple
1 tablespoon cornstarch
2 tablespoons cold water

Steps:

  • In a saucepan, cook carrots in water until crisp-tender; drain. Add butter, brown sugar, lemon juice and cinnamon; mix well. Stir in apple. Cover and simmer for 10 minutes, stirring occasionally.
