Although this dough has no color, it is light and airy, like the soft inside of a loaf of French bread. The other surprising part is there's no need to let it rise. You can go directly from making the dough to baking with no waiting around. Magic.

Number Of Ingredients 5

2 tablespoons unsalted butter, melted, plus more for the pan
1 1/2 teaspoons active dry yeast
1 1/2 teaspoons sugar
1 1/2 teaspoons kosher salt
2 2/3 cups all-purpose flour (see Cook's Note)

Steps:

  • Butter a 6-by-3-inch round pan and set aside.
  • Combine the butter, yeast, sugar, salt and 1 cup warm water in a stand mixer fitted with the dough hook attachment. With the mixer on low speed, add 1/2 cup of the flour at a time, waiting for each addition to be fully incorporated before adding more. Once all of the flour is added, knead on medium speed for 8 minutes.
  • Transfer the dough to the prepared pan, transfer the pan to a 6- to 8-quart slow cooker and cover with the lid. Cook on high until the internal temperature of the bread registers 200 degrees F, about 2 hours. Let cool in the pan for 5 minutes, then turn out onto a rack and let cool completely.

2 1/2 t. dry active yeast (1 packet)
1/2 C. warm water
3 Tb. sugar
1/2 C. apple butter
1 egg
1 1/2 t. salt
4 C. bread flour
4 T. melted butter
2 T. brown sugar (optional)

Steps:

  • Using an electric mixer with a bread hook, place the warm water (just barely over luke-warm, too hot will kill the yeast) and sugar in the mixing bowl. Sprinkle the yeast over the water and let it foam for 10 minutes. Then turn on the mixer and add the apple butter, egg and salt. Slowly add the flour. Once all the flour is in the bowl, add the melted butter. "Knead" the dough with the bread hook for 5-8 minutes. The dough will be smooth, but very tacky. Dump it out onto a floured work surface. Using a floured knife, cut the dough into 4 quarters. Then cut each quarter into 6 equal pieces, to make 24 small dough segments. Turn the ends of each dough segment under to create little balls. Then place a large piece of parchment paper in a 6 quart slow cooker, and press down. Arrange 12 dough balls in the slow cooker. Then carefully lift the parchment paper out, and repeat with the remaining dough balls and another piece of parchment, creating two separate batches. Place the lid on the crockpot and cover the additional dough balls on the counter, with plastic wrap. Allow them to rise for 1 hour at room temperature. *At this point the dough balls could be put in the fridge for up to a week, until ready to bake. Sprinkle the rolls with a little brown sugar. Turn the slow cooker on high and "bake" for 60-90 minutes, depending on your crockpot. To test, touch the top of the rolls. If they feel slightly firm and are no longer tacky, the rolls are ready. Repeat with the second batch of dough balls. Each batch will cook for 60-90 minutes, 3 hrs total.

What a wonderful experience that was, gathering my mother's and my own recipes plus those from friends and family. 2 tablespoons butter, melted
1/2 cup sugar
1 teaspoon ground cinnamon
1 large tart apple, peeled and thinly sliced
1/4 cup raisins
1 package (1/4 ounce) active dry yeast
3/4 cup warm water (110° to 115°)
1/4 cup sugar
1 teaspoon salt
2-1/4 cups all-purpose flour, divided
1 large egg, room temperature, lightly beaten
1/4 cup shortening

Steps:

  • Pour butter into a 9-in. square baking pan. Mix sugar and cinnamon; sprinkle over butter. Arrange apple slices in pan. Sprinkle with raisins. , In a bowl, combine yeast, water, sugar, salt and 1 cup flour; beat for 1-2 minutes. Add egg, shortening and remaining flour. Beat for 1 minute. Drop dough by spoonfuls over apples. Cover and let rise in a warm place until almost doubled, about 1 hour. , Bake at 350° for 30-35 minutes or until done. Invert pan on a serving platter.

These are so easy to throw together and have such a great flavor. They're flaky and not too sweet. Great for a quick brunch or as a wonderful snack and the apple cider glaze is just the right touch for these.

1 frozen puff pastry (thawed per package directions)
1/3 c caramel apple butter (or regular apple butter)
1 large egg (optional)
APPLE CIDER GLAZE:
1 c powdered sugar
2 Tbsp + 1 tsp apple cider

Steps:

  • 1. Preheat oven to 400 degrees F. Line baking sheet with parchment paper or spray with nonstick spray.
  • 2. Unroll thawed pastry dough on a floured surface. Spread apple butter to edges of puff pastry. Starting at side closest to you, roll dough jelly roll style.
  • 3. If desired, add 1 tsp water to whisked egg to make an egg wash. Brush on rolled dough. Cut rolled dough into 1 inch slices (you should get about 10 slices) and place cut side down on prepared pan leaving about 2 inches between each slice.
  • 4. Bake in preheated oven for about 15-18 minutes or until dough is flaky and golden.
  • 5. Combine powdered sugar and apple cider in a small bowl; stirring until smooth. Drizzle on warm rolls.

It is also quick because it requires only one rise; the second rise happens in the slow cooker. 1 cup lukewarm water
1 ½ teaspoons active dry yeast
2 ½ cups bread flour
1 ½ teaspoons salt
1 tablespoon lukewarm water, or more as needed

Steps:

  • Stir 1 cup water and yeast together in a small bowl until yeast is dissolved. Let sit until frothy or foamy, about 10 minutes.
  • Mix flour and salt together in a plastic container with a tight-fitting lid. Add yeast mixture and stir with a wooden spoon until evenly combined and no traces of flour remain. Add 1 to 2 tablespoons water and stir again; dough should be tacky but not wet.
  • Cover container with the lid. Let dough rise at room temperature for 1 hour.
  • Set slow cooker to High. Cut a piece of parchment paper to line the bottom of your slow cooker.
  • Dust a clean work surface with flour. Knead dough briefly with floured hands to get rid of any air pockets. Shape into a round or oval loaf depending on the shape of your slow cooker.
  • Sprinkle some of the sesame seeds on the bottom of the slow cooker. Sprinkle remaining seeds generously all around the loaf. Place dough in the slow cooker and cover with the lid.
  • Cook on High for 2 hours. Lift the lid a couple of times during cooking to release the steam. An instant-read thermometer inserted deep into the loaf should read between 200 and 210 degrees F (93 to 99 degrees C). The surface of the bread should be dry and no longer spongy. Remove the loaf and tap the bottom; it should sound hollow.
  • Remove loaf from the slow cooker. Transfer to a wire rack and let cool completely before cutting, at least 1 hour.

Steps:

  • Heat the oven to 350 degrees, and lightly grease a 9-by-5-inch loaf pan with nonstick cooking spray. In a medium bowl, whisk together the all-purpose flour, whole-wheat flour, baking soda, cinnamon, allspice, nutmeg and salt to combine. Set aside.

½ cup raisins
½ cup chopped walnuts

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 8x4x2-inch loaf pan.
