Apple, Bacon and Cheddar Waffles image

The flavors in this unique sweet and savory waffle complement each other very well.

2 cups Bisquick™ Original pancake and baking mix
1 1/3 cups milk
2 tablespoons vegetable oil
1 egg
3/4 cup shredded sharp Cheddar cheese (3 oz)
1 cup crisply cooked and crumbled bacon (14 to 15 slices)
1/2 cup chopped apple
Warm maple syrup
Sliced green onions, if desired

Steps:

  • Heat waffle maker; lightly brush with vegetable oil, if necessary. In medium bowl, stir Bisquick™ mix, milk, oil and egg until mixed well. Mix in shredded cheese, 1/2 cup of the crumbled bacon and the chopped apple.
  • Pour 1/2 cup batter onto center of hot waffle maker. (Waffle makers vary in size; check manufacturer's directions for recommended amount of batter). Close lid of waffle maker. Bake according to manufacturer's directions or until steaming stops and waffle is golden brown; carefully remove waffle. Repeat with remaining batter.
  • Top each waffle with heaping tablespoonful bacon; serve warm with maple syrup. Garnish with sliced green onions.

2 large eggs
2 cups all-purpose flour
4 teaspoons baking powder
1 tablespoon sugar
1/4 teaspoon kosher salt
1 3/4 cups milk
1/2 cup vegetable oil
1/2 teaspoon vanilla extract
1/2 cup crumbled cooked bacon
1/2 cup shredded sharp Cheddar
Nonstick cooking spray, for the waffle iron
Butter, maple syrup and/or fried eggs with runny yolks, for serving

Steps:

  • Preheat a waffle iron.
  • In a small bowl, whisk the eggs until fluffy; reserve.
  • Next, in a large bowl, mix together the flour, baking powder, sugar and salt. In a third bowl, whisk together the milk, oil and vanilla extract. Add the wet ingredients into the dry ingredients and mix just until combined. Add the bacon, Cheddar and reserved whisked eggs and mix until combined.
  • Spray the waffle iron with nonstick spray. Pour in 1/4 cup of the batter and cook the waffles until golden brown. (The waffles can be kept in a low oven to keep warm while the others cook.) Repeat with the remaining batter. Serve the waffles with butter, syrup and/or fried eggs.

3 tablespoons butter or margarine
3 medium Granny Smith apples, peeled and coarsely chopped (3 cups)
3 tablespoons packed brown sugar
4 cups cubed firm bread
1 pound bacon, cooked and chopped
2 cups shredded sharp Cheddar cheese (8 ounces)
2 1/2 cups milk
1 teaspoon ground mustard
2 teaspoons Worcestershire sauce
1/4 teaspoon salt
1/8 teaspoon pepper
5 eggs

Steps:

  • Grease 2-quart casserole. In 10-inch skillet, melt butter over medium heat. Cook apples in butter 2 to 3 minutes, stirring occasionally, until crisp-tender. Stir in brown sugar; reduce heat to low. Cook 5 to 6 minutes, stirring occasionally, until apples are tender.
  • Layer half each of the bread, bacon, apples and cheese in casserole. Repeat with remaining bread, bacon, apples and cheese.
  • Mix all remaining ingredients; pour over cheese. Cover tightly and refrigerate at least 2 hours but no longer than 24 hours.
  • Heat oven to 350°F. Bake uncovered 40 to 45 minutes or until knife inserted in center comes out clean. Let stand 10 minutes before serving.

1 stick unsalted butter, melted and cooled slightly, plus more for the waffle iron
1 1/2 cups milk
2 large eggs
2 cups self-rising flour
1/4 cup confectioners' sugar
1 Gala apple, finely chopped
1 cup grated sharp cheddar cheese
1/3 cup pure maple syrup
2 teaspoons grainy mustard
1 5-ounce package mixed baby greens
1 tablespoon apple cider vinegar
1 tablespoon extra-virgin olive oil
Kosher salt and freshly ground pepper

Steps:

  • Preheat the oven to 225˚ F or 250˚ F (as low as your oven will go). Combine the melted butter, milk and eggs in a large bowl; whisk to combine. Add the flour and confectioners' sugar and stir to moisten, then add the apple and cheese and stir until well blended. Set aside.
  • Heat a waffle iron according to the manufacturer's instructions. Working in batches, lightly butter the waffle iron, then ladle in some of the batter.
