12 ounces salad greens (spring mix)
1/2 cup dried cherries
1/2 cup pecan halves
6 ounces blue cheese chunks
2 whole apples, cored and sliced very thin
1/4 cup olive oil
1 tablespoon (heaping) Dijon
1 tablespoon maple syrup
1 teaspoon apple cider vinegar (or more to taste)
Salt and freshly ground black pepper

Steps:

  • Add the greens, cherries, pecans, cheese and apples into a large salad bowl.
  • Mix the olive oil, Dijon, maple syrup and vinegar in a small jar and sprinkle with and salt and pepper. Put the lid on the jar and shake well to mix.
  • Pour a little of the salad dressing over the top of the salad and toss to combine. Taste the salad and add more dressing to taste.

1 1/2 pounds red beets, tops removed and scrubbed
8 ounces baby Chioggia beets, tops removed and scrubbed
Coarse salt and freshly ground pepper
2 tablespoons grapeseed or safflower oil
3 tablespoons pure honey
5 tablespoons extra-virgin olive oil
1 lemon plus 3 tablespoons fresh lemon juice, divided
1 green apple
4 ounces fresh goat cheese, coarsely crumbled (about 3/4 cup)
2 cups sprouts or microgreens, for garnish

Steps:

  • Preheat oven to 350 degrees. Place red beets in a baking dish just large enough to hold them in a single layer and add enough water to come three quarters of the way up sides of beets. Sprinkle with 1 tablespoon salt and drizzle with grapeseed oil. Cover with foil and bake until tender and easily pierced with a knife, about 1 hour. Transfer beets to a cutting board. When just cool enough to handle, remove skins, cut into 1/4-inch slices, and transfer to a bowl.
  • Meanwhile, place baby beets in small saucepan and cover with 2 inches cold water. Add 1 teaspoon salt and bring to a boil. Reduce heat and simmer until tender and easily pierced with a knife, about 25 minutes. Drain beets; when just cool enough to handle, remove skins; cut into halves or wedges, depending on size; and transfer to another bowl.
  • Whisk together honey, olive oil, and 3 tablespoons lemon juice; add 1 teaspoon salt and season with pepper. Reserve 1/4 cup dressing; divide remaining dressing between bowls of warm beets; toss beets to coat.
  • Halve lemon and squeeze juice into a bowl of cold water; drop lemon halves in it. Peel apple, cut into small pieces (you should have about 1 cup), and submerge in lemon water. When ready to serve, drain apple and blot dry. Arrange beets on a serving platter and drizzle with reserved dressing. Top with apple, goat cheese, and sprouts and serve immediately.

Steps:

  • Make the dressing: Whisk together vinegar, shallot, mustard, salt, and pepper in a bowl. Add oil in a slow, steady stream, whisking until emulsified.
  • Make the salad: Preheat oven to 350 degrees. Place baguette slices on a baking sheet, and toast until golden, 8 to 10 minutes.

2 stalks celery, trimmed, strung with a vegetable peeler
1 Fuji apple
2 lemons
3/4 cup dried apricots, torn into bite-size pieces
1/4 cup unsalted pistachios, coarsely chopped, plus 1 tablespoon for garnish
1 tablespoon extra-virgin olive oil
1/2 teaspoon salt
1/8 teaspoon freshly ground pepper
1 four-ounce log fresh goat cheese

Steps:

  • Trim tops and bottoms of fennels; peel outer layer. Slice lengthwise as thinly as possible. Transfer to large bowl. Cut celery on diagonal into very thin slices; add to bowl. Quarter and core unpeeled apple. Cut each quarter lengthwise into very thin slices. Place in small bowl; squeeze juice from one lemon over apples; toss. Add to fennel. Steps:

  • For the pecans: Combine the butter, salt, cinnamon, ground red pepper, and a dash of hot sauce in a medium bowl. Add the pecans, stirring to coat.

2 tablespoons raspberry vinegar or 2 tablespoons red wine vinegar (I like to use balsamic vinegar)
1/2 teaspoon Dijon mustard
1 clove garlic, minced
1/2 teaspoon salt
1/2 teaspoon pepper
1/3 cup olive oil
1 tablespoon chopped fresh parsley leaves
3 Belgian endive, cored and separated into leaves
1 bunch watercress or 1 bunch spinach, washed
1 granny smith apple, sliced
4 ounces mild goat cheese (small log)
1/4 cup chopped walnuts (I like to toast them)

Steps:

  • Using a glass jar with a tight lid, combine the vinegar, mustard, garlic, salt, and pepper, and shake well to blend.
  • Add the oil and parsley and shake.
  • On 4 plates, arrange the endive leaves like spokes around each plate.
  • Arrange the watercress or spinach in the center.
  • Preheat the broiler, and arrange the sliced apples slightly overlapping in 4 fan shapes, place in broiler pan.
  • Cut the cheese into 4 slices and top each apple fan with slices of cheese.
  • Broil until golden for approximately 5 minutes.
  • Using a spatula, carefully place the apple slices and cheese on top of the endive.
  • Drizzle the dressing over the salads and sprinkle with walnuts.
  • Enjoy!

Adapted from a recipe I found on the UKTV FOOD website. This is a great lunch box alternative to sandwiches, and one that children could easily make for themselves. Except perhaps mixing the yoghurt with the cinnamon and honey. Or you could enjoy this as light meal or as a side-salad. I'd suggest Granny Smiths or Fuji apples. For some reason, Zaar wouldn't allow me to include this information in the ingredients. I left intact - from the original recipe - the virtuous low fat natural yogurt alternative but if you're more interested in flavour than in being totally virtuous, especially if you've never tried it, use divinely creamy Greek yoghurt and don't forget the cinnamon and honey! Anyway, if you were totally virtuous, you undoubtedly wouldn't be eating cheese at all!

1/4 cup Sherry wine vinegar or red wine vinegar
1 tablespoon chopped fresh thyme or 1 teaspoon dried
1/2 cup plus 1 tablespoon olive oil
6 cups mixed baby greens
3 cups trimmed watercress
1 Belgian endive, sliced
1 1/2 pounds Golden Delicious apples, peeled, cored, cut into 1/2-inch-thick slices
1 tablespoon sugar
1 cup crumbled Roquefort cheese
1/2 cup chopped toasted walnuts

Steps:

  • Combine vinegar and thyme in small bowl. Gradually whisk in 1/2 cup oil. Season to taste with salt and pepper.
  • Combine greens, watercress and endive in large bowl. Heat remaining 1 tablespoon oil in large nonstick skillet over medium-high heat. Add apples and sugar and sauté until apples are almost tender, about 8 minutes. Increase heat to high and sauté until golden brown, about 5 minutes longer. Place atop greens in bowl. Sprinkle salad with Roquefort and walnuts. Toss with enough dressing to coat. Serve, passing remaining dressing separately.

3 3/4 pounds small brussels sprouts, quartered through stem ends
1/4 cup Sherry wine vinegar
3 tablespoons mayonnaise
1 cup olive oil
9 large red-skinned apples, quartered, cored, cut into 1/2-inch pieces
1 1/2 cups chopped celery leaves
3 3/4 cups crumbled blue cheese
3 cups walnuts toasted, coarsely chopped
Radicchio leaves

Steps:

  • Steam brussels sprouts in batches until just tender, about 12 minutes. Transfer to colander; cool. Transfer to large bowl.
  • Mix vinegar and mayonnaise in small bowl. Gradually mix in oil. Season with salt and pepper. (Brussels sprouts and dressing can be made 1 day ahead. Cover; chill.) Add apples and celery leaves to brussels sprouts. Add dressing; toss to combine. Mix in cheese and walnuts. Season with salt and pepper. Line large bowls with radicchio leaves. Add salad; serve.

Beet, Apple and Goat Cheese Salad With Orange Shallot Dressing image

I love roasted beets and goat cheese in salads and this one is a wonderful blend of flavors that complement each other nicely. From "At Home Entertaining" by Jorj Morgan, my favorite new cookbook!

2 lbs red beets
salt & freshly ground black pepper
olive oil, for drizzling
1 lb granny smith apple
12 cups boston lettuce, washed, dried & torn into 1-inch pieces (6 heads)
4 shallots, minced (about 1/4 cup)
1/3 cup orange juice, freshly squeezed (juice of 1 medium orange)
2 tablespoons red wine vinegar
1 teaspoon granulated sugar
1/3 cup olive oil
6 ounces goat cheese, crumbled

Steps:

  • Preheat the oven to 400 degrees. Roast the beets by placing them on a sheet of aluminum foil. Season with salt and pepper and drizzle with olive oil. Wrap the foil around the beets and place onto a baking sheet. Bake for 60 minutes or until the beets are tender. Cool.
  • Peel the beets and slice into thin strips.
  • Cut the apples into thin slices.
  • Place the lettuce into a large salad bowl. Toss in the beets and apples.
  • Whisk together the shallots, orange juice, red wine vinegar and sugar in a small bowl. Slowly whisk in the olive oil. Season with salt and pepper to taste.
  • Drizzle the salad dressing over the salad and toss until the leaves are just moistened. Top with crumbled goat cheese and serve.
