ANNA'S WALNUT-RUM WAFERS
"I love the combination of salty, sweet, and nutty," Anna Kovel says, and this cookie captures the flavors of a walnut tart her mother used to make. Anna hand-chops the nuts and uses dark rum for a festive note. Her perfect pairing? A scoop of vanilla ice cream.

Steps:
- Preheat oven to 375 degrees with racks in the lower and middle positions. Finely chop 1 1/2 cups walnut pieces.
- Beat butter and sugar until pale and fluffy. Beat in egg and rum. Stir in flour and salt, scraping down sides of bowl. Mix in chopped walnuts.
- Drop dough (about 2 teaspoons per cookie) onto parchment-lined baking sheets, spacing about 3 inches apart. Bake for 4 minutes; remove from oven, and top with remaining 3/4 cup walnut pieces. Rotate sheets, and return to oven. Bake until golden brown around edges, 8 minutes more. Transfer cookies on parchment to wire racks. Let cool slightly, about 10 minutes.
NANAS RUM BALLS
I know there are plenty of recipes for rum balls on here but my recipe box just wouldnt be right if I didnt add nana's. They are the most requested treat from the adults during the holidays. lol I wonder why...

Steps:
- 1. Crush vanilla wafers in processor.
- 2. Add crushed nuts. Then add remaining ingredients (except powdered sugar for rolling) and mix well.
- 3. Form into 1 inch balls and roll in powdered sugar to completely coat. (you can also roll them in cocoa or dip them in melted chocolate)
- 4. Store in airtight container. FYI: the longer they sit the stronger they become
CHOCOLATE-WALNUT RUM BALLS
These dense, moist treat are irresistible. Wrapped in a pretty box, they make a great gift, too.

- Stir chocolate in top of double boiler set over simmering water until melted and smooth. Remove from over water. Whisk in 1/2 cup sugar and corn syrup, then the rum. Mix vanilla wafers and walnuts in medium bowl to blend; add chocolate mixture and stir to blend well.
- Place remaining 1/2 cup sugar in shallow bowl. For each rum ball, roll 1 scant tablespoon chocolate mixture into generous 1-inch ball. Roll balls in sugar to coat evenly. Cover and refrigerate at leas overnight and up to 5 days.
