Easy Beef Stir Fry image

Beef stir fry is the perfect stir fry recipe to make at home.

2 tablespoons vegetable oil (divided)
1 pound flank steak (thinly sliced)
2 tablespoons cornstarch
4 cups mixed vegetables
3 cloves garlic (minced)
1 teaspoon minced ginger
⅓ cup orange juice
⅓ cup water
¼ cup low sodium soy sauce
3 tablespoons brown sugar
1 ½ teaspoons sesame oil
1 tablespoon cornstarch

Steps:

  • Season steak with salt & pepper. Toss with cornstarch and set aside while you prepare the vegetables.
  • Place 1 tablespoon of oil in a pan or wok. Cook the beef in 2 small batches over medium high until browned, about 2-3 minutes (beef does not need to be cooked through). Remove from pan and set aside.
  • Add vegetables to the pan and cook about until tender crisp, 4-5 minutes. Remove from pan and set aside with the beef.
  • Combine sauce ingredients except corn starch in a bowl and stir well.
  • Turn the heat up to medium-high and add the sauce. Bring to a simmer. Combine cornstarch with 3 tablespoons water (or broth) and add it the sauce a little bit at a time while whisking to reach desired consistency. Let simmer 2 minutes. Add vegetables, beef (and any juices) to the pan and cook until heated through.
  • Serve with noodles or over rice.

Easy Classic Chinese Beef Stir Fry image

Made with a classic Chinese stir fry sauce, this is a great recipe to use up whatever leftover greens you have in the fridge! Instead of making this Sauce, you can use my All Purpose Stir Fry Sauce (see Note 1) If using economical beef, consider tenderising it the Chinese way ("velveting", simple, highly effective, see Note 5!)

3 tsp cornstarch / corn flour*
2 tbsp + 1/3 cup water (, separated)
2 tbsp soy sauce ((Note 2)*)
1 tbsp oyster sauce*
2 tbsp Chinese cooking wine OR Mirin ((Note 3)*)
1 tsp white sugar*
1/2 tsp sesame oil ((optional)*)
Dash of black pepper*
2 tbsp peanut oil
1 garlic clove (, crushed)
7 oz / 200 g beef (, good quality, thinly sliced (Note 4))
1/2 small onion (, sliced (yellow, brown or white))
1/2 red bell pepper / capsicum (, sliced)
1 small carrot (, halved lengthwise and sliced thinly on the diagonal)
3 baby pak choy / bok choy (, quartered lengthwise)
2 stems scallion / shallots (, cut into 1.5"/3cm pieces)
Steamed white rice
Sesame seeds ((optional))
Fresh cilantro / coriander ((optional))

Steps:

  • Combine the cornstarch and 2 tbsp of water in a small bowl, mix until smooth.
  • Mix in remaining Sauce ingredients EXCEPT the 1/3 cup water.
  • Place the beef and 2 tbsp of Sauce in a bowl and mix gently. Set aside for 15 minutes.
  • Add 1/3 cup water into the remaining Sauce. Set aside.
  • Heat oil in wok over high heat. Add garlic and cook for 15 seconds.
  • Add onion and cook for 1 minute.
  • Add the beef and cook until it changes colour from red to light brown but not cooked through.
  • Add bell pepper and carrots and stir fry for 30 seconds.
  • Add Sauce and cook for 30 seconds.
  • Add pak choy and scallions/shallots and cook for a further 1 minute until the Sauce is thickened.
  • Remove from heat immediately.
  • Serve immediately with rice - or for a low carb, low cal option, try Cauliflower Rice! Garnish with sesame seeds and cilantro, if using.

But how do you keep your beef tender when stir-frying? Read on, my friends! My secret ingredient will supercharge your beef stir-fry and keep that steak juicy and succulent.

2 x 250g (9 oz) striploin steaks (sirloin, rib-eye, scotch fillet or rump steaks are also fine to use)
2 tbsp vegetable oil
3 garlic cloves, roughly chopped
1 onion, sliced
2 capsicums (bell peppers), deseeded and cut into bite-sized pieces
2 spring onions (scallions), finely chopped
Marinade:
1 tbsp soy sauce
1 tbsp Chinese Shaoxing wine*
½ tsp baking soda
3 tsp cornflour (cornstarch)
Stir-fry sauce:
3 tbsp oyster sauce
3 tbsp Chinese Shaoxing wine*
2 tbsp soy sauce
½ tsp dark soy sauce
2 tsp sugar
1½ tsp ground black pepper
2 tsp white vinegar

Steps:

  • Step 1.Slice the steaks against the grain and at a diagonal to form wide strips that are no more than 0.5 cm (0.2 inches) thick.
  • Step 2.Whisk together the marinade ingredients in a large bowl. Add the beef and mix well with your hands to make sure each piece of beef is coated. Set aside to marinate for 10 minutes.
  • Step 3.To make the stir-fry sauce, mix the ingredients in a small bowl.
  • Step 4.Heat the vegetable oil in a large non-stick frying pan over high heat. Add the garlic and then the onion and stir-fry for 30 seconds. Push the onion and garlic to the sides of the pan and add the beef strips into the centre. Spread the beef out as much as possible and allow to sear for about 2 minutes. Then stir-fry and combine all the ingredients. Before the beef is cooked through, add the capsicum. Stir-fry for another 30 seconds or until the beef is just cooked. Add the stir-fry sauce and stir-fry for another 10 seconds or until everything is well coated. Turn the heat off and toss through the spring onions.
  • Notes: - Chinese Shaoxing wine is a type of cooking rice wine. It's available in the Asian aisle of some major supermarkets or from an Asian grocery store. If you'd rather leave it out, simply replace with beef stock.

Steps:

Steps:

1/4 cup beef broth
1 1/2 teaspoons soy sauce
2 teaspoons dry sherry
1 teaspoon sugar
1 1/2 lbs boneless beef sirloin
2 teaspoons salad oil
1 garlic clove, minced
2 teaspoons chipped fresh gingerroot
3 green onions, sliced
1 teaspoon cornstarch
1 teaspoon water
1 (6 ounce) can water chestnuts
1 (6 ounce) can la choy crunchy chow mein noodles
1 (6 ounce) can baby corn
2 cups broccoli, steamed

Steps:

  • Combine broth, soy, sherry and sugar, set aside.
  • Cut beef with the grain into strips.
  • Place wok over med-high heat.
  • Add 1 tbsp of oil.
  • Add garlic and ginger.
  • Stir-fry for about 30 seconds.
  • Turn heat to high.
  • Add half the beef and onion and stir-fry until meat is lightly browned.
  • Remove from wok.
  • Repeat using remaining beef and onion.
  • Return cooked meat to wok.
  • Pour in broth mixture.
  • Cover and simmer for 3 minutes.
  • Mix cornstarch and water and gradually stir into wok.
  • Cook until slightly thickened, stirring to coat meat.

This simple, delicious recipe for a spicy beef stir-fry comes from Leela Punyaratabandhu, a cookbook author who adapted it from Soei, a family-run restaurant in Bangkok. Using thinly sliced beef tenderloin means the dish is ready in just minutes, and you can adjust the heat to taste by reducing or increasing the number of fresh bird's-eye chiles. Made with fresh holy-basil leaves, the classic Thai dish is known as phat ka-phrao. If you can't find holy basil at a Thai market, Indian market or health food store, you could swap in more widely available Thai sweet basil (pictured), and make a dish of phat bai hora-pha. The dish could be one part of a larger meal or stand alone with some jasmine rice and a fried egg.

1 tablespoon Thai thin soy sauce, or light soy sauce
1 tablespoon oyster sauce
1 teaspoon fish sauce
1/4 cup chicken stock
1 packed teaspoon grated palm sugar, or light brown sugar

4 to 8 fresh bird's-eye chiles
1 1/2 tablespoons lard, or neutral oil
1 1/2 pounds beef tenderloin, sliced against the grain into 2-inch-long, 1/4-inch thick strips
3 to 4 makrut lime leaves, lightly bruised and torn into pieces (optional)
1 1/2 cups loosely packed fresh holy-basil leaves or sweet Thai basil leaves, sweet Thai basil leaves or other fragrant basil

Steps:

  • If you're making rice with this dish, get it started. In a small bowl, stir together the soy sauce, oyster sauce, fish sauce, chicken stock and sugar. In a mortar or small food processor, grind together the garlic and chiles into a coarse paste.
  • Heat the lard in a wok or large skillet over medium-high heat. Add the garlic-chile paste, and stir until fragrant, about 1 minute. Before the garlic starts to brown, add the beef, and stir-fry to separate the pieces and coat with fat. Add the liquid mixture, making sure not to leave any behind in the bowl, and cook until the beef is only barely pink, about 2 minutes. Add the lime leaves, and continue to cook until no pink remains on the beef, about 1 minute. Add the basil leaves, and stir until they are just starting to wilt, then remove from heat and serve with rice. (You can fish out the large pieces of makrut leaves before serving or put them aside as you eat.)
