INDIANA AMISH SHOO FLY PIE
This recipe was given to me by an Amish friend at the Farmer's Market in South Bend many years ago. This pie is very rich and sweet. Its an Amish tradition.

Steps:
- 1. Preheat oven to 375 degrees. Place pastry in a 9 inch pie shell. With a fork or pastry blender mix together flour, brown sugar, and margarine to make a crumb-like mixture. Set aside 1/2 cup of this mixture for topping the pie.
- 2. Combine molasses, 3/4 cup hot water, and soda dissolved in another 1/4 cup hot water. Mix well. Stir in crumbs (those not set aside). Pour the resulting filling into pie shell. Top with the reserved 1/2 cup crumbs. Bake at 375 for 35 minutes. Serve pie warm or cool in small slices as it is rich. You may serve it with ice cream or whipped cream.

Steps:
- Crumb Mixture: Mix ingredients together thoroughly in a bowl until crumbs are formed.
- Syrup Mixture: In a separate bowl, mix syrup ingredients thoroughly.
- Pour half of the syrup mixture into unbaked pie crust-lined 8-inch pie plate, then add half of crumb mixture.
- Repeat with the other pie plate.
- Bake at 400 degrees for 10 minutes.
- Then reduce heat to 350 degrees and continue baking 50 minutes more.
- Cool before eating.
