2 tablespoons mayonnaise
1 teaspoon Dijon mustard
4 slices sourdough bread
2 slices Swiss cheese
2 slices cheddar cheese
2 slices sweet onion
1 medium tomato, sliced
6 cooked bacon strips
2 tablespoons butter, softened

Steps:

  • Combine mayonnaise and mustard; spread over 2 bread slices. Layer with cheeses, onion, tomato and bacon; top with remaining bread. Spread outsides of sandwiches with butter., In a small skillet over medium heat, toast sandwiches until cheese is melted, 2-3 minutes on each side.

6 tablespoons butter, softened, divided
8 slices sourdough bread
3 tablespoons mayonnaise
3 tablespoons finely shredded Manchego or Parmesan cheese
1/8 teaspoon onion powder
1/2 cup shredded sharp white cheddar cheese
1/2 cup shredded Monterey Jack cheese
1/2 cup shredded Gruyere cheese
4 ounces Brie cheese, rind removed and sliced

Steps:

  • Spread 3 tablespoons butter on 1 side of bread slices. Toast bread, butter side down, in a large skillet or electric griddle over medium-low heat until golden brown, 2-3 minutes; remove. In a small bowl, mix together mayonnaise, Manchego cheese, onion powder and remaining 3 tablespoons butter. In another bowl, combine cheddar, Monterey Jack and Gruyere. , To assemble sandwiches, top toasted side of 4 bread slices with sliced Brie. Sprinkle cheddar cheese mixture evenly over Brie. Top with remaining bread slices, toasted side facing inward. Spread mayonnaise mixture on the outsides of each sandwich. Place in same skillet and cook until bread is golden brown and cheese is melted, 5-6 minutes on each side. Serve immediately.

4 slices yellow American cheese
Salted butter, softened

Steps:

  • Preheat the griddle to medium heat.
  • Build the sandwiches with 1 slice of white cheese on 4 pieces of bread and 1 slice of yellow cheese on the other 4 slices of bread. Close the sandwiches and butter both sides. Place on the griddle; cover with a metal bowl and let the sandwiches get a nice golden brown, 2 to 3 minutes. 2 slices white sandwich bread, such as country white bread
4 teaspoons salted butter, at room temperature
4 slices American cheese

Steps:

  • Preheat a griddle or nonstick skillet to medium-low. Spread 2 teaspoons of the butter on one side of a bread slice. Repeat with the remaining butter and bread. Place one of the slices butter-side down and shingle the cheese on top, covering the entire surface. Top with the other slice of bread, butter-side up.
  • Place the sandwich on the griddle and cook until the bottom is golden brown and crisp, 3 to 4 minutes. If the bread is browning too quickly, shift the griddle off the heat. Flip the sandwich, then cover with a small metal bowl and cook until the bottom is golden brown and the cheese is melted, 3 to 4 minutes. Once golden brown on both sides, toast the edges of the sandwich, if desired. Transfer to a cutting board, cut in half on the bias and serve immediately.

8 (1/2-inch-thick) slices sourdough sandwich bread, such as Pullman
3 tablespoons unsalted butter, room temperature
3 tablespoons mayonnaise
6 slices American cheese (3 ounces)
3 ounces sharp cheddar cheese, shredded (1 cup)

Steps:

  • Arrange bread in a single layer on a clean work surface. Stir together butter and mayonnaise. Spread mixture evenly onto one side of every slice (1 scant tablespoon per slice).
  • Heat a large skillet, preferably cast iron, over medium. Flip over bread on work surface (so it's plain-side up). Place 1 1/2 slices American cheese on 4 slices, and 1/4 cup cheddar on remaining 4 slices. Carefully sandwich together.
