20 Brussels sprouts
6 tablespoons sweet butter (3/4 stick)
1 clove fresh pressed garlic
1 teaspoon grated parmesan cheese (No Kraft junk)
1/2 teaspoon paprika
1 bay leaf
1 pinch cayenne pepper
1/2 teaspoon black pepper
1 teaspoon finely minced white onion (if you have a bit handy)
1/2 teaspoon oregano

Steps:

  • Blanch the Brussels sprouts in boiling water, with some salt, and a bit of fresh garlic, for 2 minutes.
  • Remove, and steam them for 10 minutes.
  • If you don't have a steamer, boil them for 7-10 minutes .
  • Meantime, in a saucepan, on simmer, melt the butter, with garlic, parmesan cheese, paprika, bayleaf, cayenne pepper, black pepper, onion, and oregano. If you wish, melt and clarify the butter, before adding the other ingredients.
  • Stir, occasionally.
  • Remove, and drain the brussel sprouts.
  • Place in a bowl, or a service plate, and add the butter sauce, and toss.
  • Season with salt, and pepper, and sprinkle with parmesan cheese.
  • Serve.
  • Deadly.
  • Enjoy.

  • Pour Campari and sweet red vermouth into a highball glass, add cubed ice and place the orange wedge garnish on top.
  • Serve with the bottle of soda water on the side to taste.

The Negroni is enjoying a moment now. For bartenders and barflies, this deliciously complex mix of Campari, gin and sweet vermouth has become an easy way to fly one's flag as a knowing cocktail classicist. But the drink's rising profile has cast a shadow over its once-popular progenitor, the Americano. Without this refreshing Italian-born highball - Campari, sweet vermouth and club soda - there would have been no blueprint for the gin-loving Count Camillo Negroni to experiment with a century ago. (The drink's family line actually goes back even farther; the Americano grew out of a simpler aperitif that omitted the soda, called the Milano-Torino - Milano in honor of the birthplace of Campari, Torino for the vermouth.) While the Americano doesn't have quite the romance that's grown around the Negroni, it also doesn't have nearly as much alcohol. It's a lighter and saner choice for summertime drinking. A pitcher of Americanos enjoyed on the back patio during a hot afternoon will not leave you down for the, uh, count.

1 1/2 ounces sweet vermouth, preferably Carpano Antica Formula
3 ounces lager
Orange zest, for garnish

Steps:

  • Combine the Campari, vermouth, and 6 ice cubes in a tall tumbler or Burgundy wineglass. Stir with a bar spoon to chill. Pour the lager into a separate glass and whip the beer into a foam using an Aerolatteor immersion blender. Top the cocktail with beer foam and finish with orange zest.

1/2 cup water
1 cup granulated sugar
1/4 teaspoon ground allspice
1/4 teaspoon ground cinnamon, plus more for dusting
1/4 teaspoon ground ginger
1 cup brewed espresso
1 cup boiling water
1 cup heavy cream
2 tablespoons confectioners' sugar

Steps:

  • In a small saucepan, combine water and sugar over medium heat. Bring to a boil and reduce heat to low. Add the allspice, cinnamon, and ginger to the simple syrup and simmer for 5 minutes. Take pan off heat and set aside. To the 1 cup of brewed espresso, add 1 cup of boiling water. Pour 1/2 cup of espresso into each of 4 (6 to 8-ounce) serving cups. Add 2 tablespoons of the spiced simple syrup to each cup and stir to combine. In a large bowl, using an electric mixer with a whisk attachment, beat the heavy cream until soft peaks form. Add the confectioners' sugar and continue to beat until stiff. Top each cup of espresso with a dollop of whipped cream. Dust with cinnamon and serve.

1 loaf Ciabatta bread sliced into 4 (3-inch) thick slices (can be substituted with crusty Italian bread)
1/2 pound fresh mozzarella, sliced into 8 slices
4 ounces Brie, sliced into 4 pieces
1/2 cup fresh corn, blanched
2 tomatoes, sliced
Salt
Freshly ground black pepper
1 cup chopped arugula
Extra virgin olive oil

Steps:

  • Slice each 3-inch slice of Ciabatta in half horizontally to make a top and a bottom piece. In a toaster oven, toast the bread for 2 minutes, or until lightly toasted. On one side of the bread, place 2 slices of the mozzarella. On the other piece of Ciabatta, place a slice of Brie. Place 1/4 of the corn on top of the Brie. Place 2 slices of tomato on top of the mozzarella. Season both sides of the panini with salt and pepper. Place the panini in the toaster oven and toast for 4 minutes, or until tomato is warm and cheese is beginning to melt. Remove from the toaster oven and top the tomatoes with some of the arugula. Drizzle with a little extra virgin olive oil. Press the 2 halves together. Slice in half. Repeat process for the other 3 sandwiches.
