2 cups dry elbow macaroni, cooked, rinsed, and drained
1/3 cup diced celery
1/4 cup minced red onion, soaked in cold water for 5 minutes, drained
1 tablespoon minced flat-leaf parsley
1/2 cup diced vine-ripened tomato (optional)
1/2 cup prepared mayonnaise
3/4 teaspoon dry mustard
1 1/2 teaspoons sugar
1 1/2 tablespoons cider vinegar
3 tablespoons sour cream
1/2 teaspoon kosher salt, plus more to taste
Freshly ground black pepper

Steps:

  • In a large bowl, combine the macaroni, celery, onion, parsley and tomato, if using. In a small bowl, whisk together the mayonnaise, mustard, sugar, vinegar, sour cream and salt. Pour the dressing over the salad and stir to combine. Season with salt and pepper to taste. Serve. Store covered in the refrigerator, for up to 3 days.

What I really appreciate about this Macaroni Salad is that I live in a household divided. Half of us like mayonaise and the other loves Miracle Whip. This Macaroni Salad is a big pleaser with EVERYONE! This brought peace back to our table. ;)

4 oz monterey jack / cheddar cheese, cubed
1 cup frozen peas
1 stalk celery, thinly sliced

0.5 cup mayo
0.25 cup sweet pickle relish
1-2 tbsp milk (optional)
Dash pepper
8 cherry tomatoes
Fresh parsley sprig (optional)

  • * Cook pasta; drain; rinse with cold water; drain again * In large bowl, combine pasta, ham, cheese, celery, onion, and pimento * In small bowl, stir mayo, relish, pickle, milk, and pepper. * combine * cover and chill 4-24 hours * before serving, stir, transfer to serving dish, arrange tomatoes and parsley

1 cup red onion, chopped
1 cup celery, chopped
1 cup frozen peas, defrosted
1/2 cup red peppers, chopped
1 cup carrots, grated
3 eggs, hardboiled and chopped
1/2 lb thinly sliced deli ham, diced
Dressing:
1-1/2 cups mayonnaise
3/4 cup sour cream
2 Tbsp Dijon mustard
3 Tbsp white vinegar
1/2 tsp garlic powder
1 tsp ground black pepper
2 tsp kosher salt
1 Tbsp sugar
1 tsp celery seed

Steps:

  • Combine the elbows, onion, celery, peas, red peppers, carrots, eggs, and ham in a large mixing bowl. Then, in a separate bowl, combine the mayonnaise, sour cream, Dijon mustard, vinegar, garlic powder, black pepper, salt, sugar, and celery seed. Mix until fully combined. 1lb Radiatore or Fusilli pasta
1 1/4 cups Mayonnaise
1/3 cup sour cream
1 1/2 Tbsps white wine vinegar
1 Tbsp garlic, minced
1 tsp dry mustard
1/2 tsp salt
1/2 tsp black pepper
1/2 tsp sweet paprika, plus additional to sprinkle on top
1/2 tsp tabasco
2 cups green bell pepper, cored & diced fine (I actually always use red pepper)
1 1/2 cups celery, diced fine
1 cup cucumber, seeded and diced fine (I never worry about getting rid of the seeds)
1 cup sliced or coarsely chopped pimiento-stuffed green olives
1/2 cup sliced or coarsely chopped pitted black olives
1/3 cup red onion, diced fine
1 - 4oz jar pimiento strips, including all juices
6 oz extra sharp cheddar cheese, diced fine or shredded
1/2 cup finely chopped parsley

Steps:

  • Cook pasta in boiling water until tender. Drain thoroughly. While pasta cooks, mix together mayonnaise, sour cream, vinegar, garlic, dry mustard, salt, black pepper, paprika and tabasco in a medium bowl. When pasta has cooled to room temperature, toss with dressing in a large bowl. Fold in bell peppers, celery, cucumber, green & black olives, red onion, pimiento, and juices, cheese and 1/3 of parsley. Transfer to serving dish and top with remaining parsley and additional paprika. Serve at room temperature.
