BAKER'S CHOCOLATE WELLESLEY FUDGE CAKE (1941)

7 squares of Baker's unsweetened chocolate (separated)
1/2 cup of hot water
1/2 cup of sugar
2 cups of Swans Downs cake flour
1 teaspoon of baking soda
1/2 teaspoon of salt
1/2 cup of butter or other type of shortening
1-1/4 cups of sugar
3 eggs
2/3 cup milk
1 teaspoon of vanilla extract
2 tablespoons of butter
1-1/2 cups of sifted confectioner's sugar
7 tablespoons of light cream or top milk
Dash of salt
1 teaspoon of vanilla extract
1-1/4 cups of sifted confectioner's sugar, divided (in thirds)

Steps:

  • (All measurements are level.) Place 4 squares of chocolate and the water in the top part of a double boiler.
  • Cook and stir over boiling water until the chocolate is melted and the mixture thickens.
  • Add the 1/2 cup of sugar and cook for 2 minutes.
  • Cool to lukewarm.
  • Sift the flour once, measure, add the baking soda and salt, and sift together three times.
  • Cream the butter, adding 1-1/4 cups of sugar gradually, and cream together until light and fluffy.
  • Add the eggs, one at a time, beating thoroughly after each is added.
  • Add the milk and remaining flour to the creamed mixture, alternately in two parts each, beating after each addition until smooth.
  • Then add the vanilla extract and chocolate mixture and blend.
  • Bake in two greased 8- by 8- by 2-inch layer pans in a moderate oven (350 F) for 40 minutes, or until done.
  • Now, to make the "Easy fudge frosting", melt 3 squares of Baker's unsweetened chocolate and tablespoons of butter over boiling water; blend.
  • Add the 1-1/2 cups of sifted confectioner's sugar, light cream or top milk, and a dash of salt all at once.
  • Beat until smooth.
  • Place the mixture over a low flame, cook and stir until the mixture bubbles up well around the edges.
  • Add 1 teaspoon of vanilla, then add the 1-1/4 cups of sifted confectioner's sugar in thirds, beating after each addition until smooth. (If necessary, place the mixture over a bowl of cold water until thick enough to spread.)
  • Spread the "Easy fudge frosting" between the layers and on the top and sides of the cake.

1 ½ cups white sugar
1 teaspoon vanilla extract
2 large eggs eggs
1 cup milk
1 tablespoon fresh lemon juice
½ cup unsweetened cocoa powder
1 cup hot water
2 ½ cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
½ teaspoon salt
½ cup butter

Steps:

  • Cream butter or margarine and sugar together in a large bowl. Add vanilla, and then eggs to the mixture.
  • In another bowl, mix together flour, soda, baking powder, and salt. Sour the milk by adding the lemon juice or vinegar. Add flour mixture alternately with soured milk to the creamed mixture.
  • Mix cocoa and hot water together, and beat into batter.
  • Bake 30 to 35 minutes at 350 degrees F (175 degrees C). Cool, and frost with desired frosting.

1 cup butter, softened
1-1/2 cups sugar
4 large eggs, room temperature
1 cup buttermilk
1/2 teaspoon baking soda
2-1/2 cups all-purpose flour
8 ounces German sweet chocolate, melted
1 cup chocolate syrup
2 teaspoons vanilla extract
1-1/4 cups miniature semisweet chocolate chips, divided
4 ounces white baking chocolate, chopped
2 tablespoons plus 1 teaspoon shortening, divided

Steps:

  • Cream butter in a large bowl. Gradually mix in sugar. Add 1 egg at a time, beating well after each addition. Combine buttermilk and baking soda; add to creamed mixture alternately with flour, beginning and ending with flour. Add melted chocolate, chocolate syrup and vanilla. Stir in 1 cup miniature chocolate chips. Pour into a greased and floured 10-in. fluted tube pan. Bake at 325° for 1-1/4 hours or until a toothpick comes out clean. Immediately invert cake onto a serving plate; cool completely., Meanwhile, in a microwave, melt white chocolate and 2 tablespoons shortening; stir until smooth. Cool slightly; drizzle over cake. Melt remaining chips and shortening in a small saucepan over low heat, stirring until smooth. Remove from the heat; cool slightly. Drizzle over white chocolate.

125 g butter
225 g dark brown sugar
2 eggs
142 ml sour cream
175 g plain flour
5 ml baking powder
2 1/2 ml bicarbonate of soda
50 g cadbury bournville cocoa
40 ml cadbury bournville cocoa
125 g butter
150 g icing sugar, sieved
vanilla essence
200 g bar of cadbury bournville chocolate
40 ml cadbury bournville cocoa
142 ml double cream

Steps:

  • * Two 20 cm (8-inch), shallow cake tins, greased and base-lined.
  • For the cake, cream together the butter and sugar until the mixture is light in colour anti texture. Gradually beat in the eggs, and then the soured cream (the mixture looks curdled at this stage). Sieve together the dry ingredients and fold them into the mixture. Divide the mixture equally between the tins. Bake at Gas Mark 5/190ºC:/375ºF for 30 - 35 minutes, until cooked. Turn out on to a wire tray to cool.
  • Make the filling by mixing the cocoa with 40 ml (2 Tbs) of boiling water to a smooth paste, allow to cool. Beat together the butter, sieved icing sugar and essence, until light and fluffy. Beat in the cocoa. Slice the cake in half and then sandwich the halves together with the filling.
  • For the frosting, melt the chocolate carefully. Make the cocoa into a paste with water as before and mix with the chocolate. Slowly whisk the cream into the chocolate until smooth and thickened. Spread the frosting evenly over the cake with a palette knife.
  • Serve in slices, with whipped cream or ice-cream. If possible warm each slice in a microwave or oven, if you have made the cake in advance; it can also be served cold but is definitely more interesting hot, with the contrast of ice cream.

150ml sunflower oil, plus extra for the tin
175g self-raising flour
2 tbsp cocoa powder
1 tsp bicarbonate of soda
150g caster sugar
2 tbsp golden syrup
2 large eggs, lightly beaten
150ml semi-skimmed milk
100g unsalted butter
225g icing sugar
40g cocoa powder
2½ tbsp milk (a little more if needed)

Steps:

  • Heat the oven to 180C/160C fan/gas 4. Oil and line the base of two 18cm sandwich tins. Sieve the flour, cocoa powder and bicarbonate of soda into a bowl. Add the caster sugar and mix well.
  • Make a well in the centre and add the golden syrup, eggs, sunflower oil and milk. Beat well with an electric whisk until smooth.
  • Pour the mixture into the two tins and bake for 25-30 mins until risen and firm to the touch. Remove from oven, leave to cool for 10 mins before turning out onto a cooling rack.
  • To make the icing, beat the unsalted butter in a bowl until soft. Gradually sieve and beat in the icing sugar and cocoa powder, then add enough of the milk to make the icing fluffy and spreadable.
  • Sandwich the two cakes together with the butter icing and cover the sides and the top of the cake with more icing.

3 ounces baking chocolate, melted in microwave
1/2 cup butter or 1/2 cup margarine
2 1/4 cups light brown sugar, lightly packed
3 eggs
1 1/2 teaspoons vanilla extract
2 teaspoons baking soda
1/2 teaspoon salt
2 1/4 cups sifted cake flour
1 cup sour cream
1 cup boiling water

Steps:

  • Preheat oven to 350°.
  • Grease and flour 3 9-inch cake pans.
  • In a large mixing bowl, cream the butter until smooth.
  • Gradually pour in the brown sugar, then eggs.
  • Beat with mixer until light and fluffy, approx 5 minutes.
  • On low speed, beat in the vanilla extract, melted chocolate, baking soda and salt.
  • Add flour alternately with sour cream, beating at low speed until smooth.
  • Pour in boiling hot water and stir until blended.
  • Pour into the prepared pan.
  • Bake about 25 minutes or until done.
  • Remove from oven, let cakes cool about 10-15 minutes, then place on wire racks.
