PEACH JAM WITH AMARETTO LIQUEUR

Opinions differ how this jam tastes best. Some members of our family like it as a spread on toast, others add it to a bowl of natural yogurt. Both are very tasty.

4 ½ cups finely chopped, peeled peaches
2 tablespoons lemon juice
3 cups sugar
1 (1.75 ounce) package fruit pectin (such as Sure-Jell® Pectin Light for less or no sugar)
⅓ cup amaretto liqueur, or more to taste

Steps:

  • Inspect 5 half-pint jars for cracks and rings for rust, discarding any defective ones. Immerse in simmering water until jam is ready. Wash new, unused lids and rings in warm soapy water.
  • Mix peaches with lemon juice in a large pot immediately after chopping to prevent peaches from turning brown. Place pot over medium heat.
  • Mix 1/4 cup of the sugar with pectin and add it to the pot with the peaches. Stir well. Slowly bring to a full rolling boil that does not stop bubbling when stirred. Add the remaining sugar and stir well, scraping the bottom of the pot, to fully dissolve the sugar. Cook for 1 minute, stirring constantly.
  • Remove from heat and stir in amaretto liqueur.
  • Ladle peach jam immediately into the prepared jars, filling to within 1/4 inch of the top. Run a clean knife or thin spatula around the insides of the jars to remove any air bubbles. Wipe rims with a moist paper towel to remove any spills. Top with lids and tightly screw on rings.
  • Place a rack in the bottom of a large stockpot and fill halfway with water. Bring to a boil and lower jars 2 inches apart into the boiling water using a holder. Pour in more boiling water to cover jars by at least 1 inch. Bring to a rolling boil, cover, and process for 10 minutes.
  • Remove the jars from the stockpot and place onto a cloth-covered or wood surface, several inches apart. Let rest for 24 hours without moving the jars. Gently press the center of each lid with a finger to ensure the lid does not move up or down. Remove the rings for storage and store in a cool, dark area.

This is from Emeril Lagasse's website. I needed some for a recipe and didn't have any so I tried this. Very quick and easy. Even had some left over for a sour. It was great and much cheaper.

1 cup sugar
1/2 cup water
3 cups vodka
3/4 teaspoon almond extract

Steps:

  • In a small sauce pan over medium heat bring 1 cup of sugar and 1/2 cup water to boil.
  • Let boil for 2 minutes to make a syrup.
  • Set aside to cool slightly.
  • When cooled mix 3 cups vodka, almond extract and 1 cup of the syrup mixture.
  • It's ready to bottle.

2 cups 80-proof vodka
2 tablespoons almond extract
2 teaspoons pure vanilla extract

Steps:

  • Combine the water and the sugars in a saucepan.
  • Heat until boiling over medium heat and until all the sugar is dissolved.
  • Remove from the heat and let mixture cool for about 15 minutes.
  • Add the vodka, almond extract and vanilla extract.
  • Store in a sealed bottle.

The second in some liqueurs recipes my girlfriend gave me 30 years ago. This recipe came from Quebec as well, so there we can get "Alcool " which is what this recipe requests. It is basically a 40% alcohol. But I know you can't get that in the USA, not sure if they even have alcohol. But I had to put alcohol in the list of ingredients because that is all it would recognize. This is a delicious almond flavor liqueur to enjoy.

3 teaspoons vanilla
1 1/8 cups water
40 ounces alcohol, 40%
6 drops orange bitters

This recipe is so "spot on" for store bought Amaretto it's hard to tell it from the real thing! Passed down from my Dad's sister, this makes a wonderful holiday gift.

2 cup(s) water
3 cup(s) white sugar
1 - lemon rind
3 cup(s) vodka
1 teaspoon(s) chocolate extract
2 teaspoon(s) vanilla extract
3 teaspoon(s) almond extract

Steps:

  • Scrape as much pith from the rind that you can. In heavy saucepan, add sugar, water and lemon rind and bring to a boil, stirring often. Reduce heat and simmer for 30 minutes. Remove lemon rind and discard.
  • While hot, strain the simple syrup through a coffee filter and let it cool completely.
  • Add vodka and extracts. Mix well and store in a well sealed bottle. Enjoy!
  • Serve over ice cream or use to make your favorite coctail. This also makes a great homemade gift!
