I got this from an internet source a while back. They taste just like the potatoes served at the luaus at the Hale Koa in Honolulu! Yummy!

Number Of Ingredients 5

4 -5 medium sweet potatoes
1/2 cup butter
1 cup brown sugar
1/2 cup water
1/4 cup shredded coconut

Steps:

  • Boil the sweet potatoes in their jackets until tender, about 25 minutes. Let cool and then cut into slices about 1 1/2 inches thick.
  • In a large skillet melt butter. Stir in brown sugar and water and cook on medium heat for about 5 minutes.
  • Reduce heat and add sweet potatoes.
  • Cook gently, tossing lightly until sweet potatoes are glazed.
  • Top with coconut before serving.

1/4 c sweet flake coconut, raw or toasted
2 med sweet potatoes
2 med red garnet yams
4 tbsp canola oil
Pinch of salt

Steps:

  • To toast coconut, preheat oven to 350*. Spread the coconut out in a thin layer on a baking sheet, and toast, stirring or shaking the pan occasionally, until the coconut is golden, about 5 min. Preheat oven to 400*. Peel and dice the sweet potatoes and yams into 1/2 in. cubes. Toss with the oil and salt. Spread into a single layer on a baking sheet. Roast, turning with a spatula 2-3 times, until the sweet potatoes are fork-tender and starting to brown, 20-25 min. Let cool, then sprinkle with shredded coconut.
