1/2 cup butter or 1/2 cup margarine, softened
1/2 cup granulated sugar (less 2 Tablespoons)
1/2 cup packed light brown sugar
1/2 cup creamy peanut butter
1 large egg
1 teaspoon vanilla
1 1/4 cups all-purpose flour
3/8 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 1/2 cups semi-sweet chocolate chips
1 1/2 teaspoons shortening

Steps:

  • Preheat oven to 375 degrees. Beat butter, granulated sugar, and brown sugar in a large bowl until light and fluffy. Beat in peanut butter, egg, and vanilla. Gradually stir in combined flour, baking powder, baking soda and salt; mix well.
  • Roll heaping teaspoons of dough into 1-1/2-inch balls. Place balls 2 inches apart on cookie sheet. (If dough is too soft to roll into balls, refrigerate for 30 minutes.) Dip fork into sugar; press crisscross indentation on each ball, flattening only slightly. Bake 11 to 12 minutes. Let cookies stand on cookie sheets for 2 minutes. Remove cookies to wire rack; cool completely.
  • Melt semisweet chocolate with 1-1/2 teaspoons shortening in top of double boiler over hot, not boiling, water. Place melted chocolate in baggie and snip bottom corner to create a small opening. Squeeze slowly to decorate cookies with a dragonfly design or create your own design.
  • Makes: about 2 to 2-1/2 dozen cookies.

1 cup crunchy peanut butter
1 cup white sugar
1 cup packed brown sugar
2 large eggs eggs
2 ½ cups all-purpose flour
1 teaspoon baking powder
½ teaspoon salt
1 ½ teaspoons baking soda

Steps:

  • Cream butter, peanut butter, and sugars together in a bowl; beat in eggs.
  • In a separate bowl, sift flour, baking powder, baking soda, and salt; stir into butter mixture. Put dough in refrigerator for 1 hour.
  • Roll dough into 1 inch balls and put on baking sheets. Flatten each ball with a fork, making a crisscross pattern. Bake in a preheated 375 degrees F oven for about 10 minutes or until cookies begin to brown.

1 cup butter, softened
1/2 cup sugar
2 teaspoons vanilla extract
2 cups all-purpose flour
Additional sugar
PEANUT BUTTER TOPPING:
1/3 cup packed brown sugar
1/3 cup creamy peanut butter
1/4 cup butter, softened
CHOCOLATE GLAZE:
1/2 cup semisweet chocolate chips, melted
1/3 cup confectioners' sugar
2 tablespoons 2% milk

Steps:

  • Preheat oven to 325°. In a large bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Beat in vanilla. Gradually add flour to creamed mixture and mix well., Shape into 3/4-in. balls. Coat bottom of a glass with cooking spray, then dip it in sugar. Flatten cookies with prepared glass, redipping glass in sugar as needed. Place on baking sheets. Bake until set, 12-15 minutes. Cool on a wire rack., In a small bowl, beat the brown sugar, peanut butter and butter until smooth. Spread 1 teaspoon over each cookie. I don't remember where I got this recipe from, but it has been my go-to recipe for peanut butter cookies for the past several years. After making these I can't see myself using any other peanut butter recipe! The picture isn't from my batch of cookies, if any survive long enough the next time I make them I'll post a picture.

1 c butter
1 c granulated white sugar
1 c firmly packed brown sugar
2 eggs
1 egg yolk
2 tsp vanilla
1 jar(s) peanut butter (18 ounces)
2 c all-purpose flour
1/2 tsp salt
1 tsp baking soda
1 c chopped (non salted) peanuts *optional*
few tsp sugar, for dusting

Steps:

  • 1. In a large mixing bowl using an electric mixer, beat butter for about 30 seconds. Add sugars and mix until smooth. Add eggs and vanilla and mix until it starts to get fluffy. Stir in peanut butter. In a separate bowl, mix flour, baking soda and salt. Stir into combined wet ingredients in portions. If you choose, stir in the finely chopped peanuts. Cover and chill for about 2 hours. I usually make my cookie dough the day before and let it chill overnight, but 2 hours is sufficient for these.
  • 2. Preheat oven to 350 degrees. Lightly grease your cookie sheets. Roll dough into about 1-inch round balls and place on cookie sheet, at least 2 inches apart. Using a fork that has been dipped in water, flatten the slightly. Sprinkle lightly with granulated or coarse sugar. Bake 12-15 minutes. I usually start checking at 10 minutes, they should look dry on top. Be very careful not to overcook!
  • 3. Allow cookies to cool a few minutes before moving them to cooling racks. Makes about 3 dozen cookies

1 cup white sugar
1 cup brown sugar
2 eggs
¾ cup peanut butter
2 cups rolled oats
2 cups all-purpose flour
1 teaspoon baking soda
2 ½ cups semisweet chocolate chips
½ cup peanut butter

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking pan.
  • In a large bowl, cream together the butter, white sugar and brown sugar. Beat in the eggs, one at a time, then stir in the 3/4 cup peanut butter. Combine the oats, flour and baking soda; stir into the creamed mixture until well blended. Press the dough evenly into the prepared pan.
  • Bake for 15 to 20 minutes in the preheated oven, until firm. In the microwave or over a double boiler, melt chocolate chips and 1/2 cup peanut butter together, stirring frequently until smooth. Spread over cooled bars and allow to set up before cutting into squares.

1 cup peanut butter
¾ cup brown sugar
3 tablespoons water

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • In a large bowl, combine the pie crust mix, peanut butter and brown sugar. Incorporate the water, one tablespoon at a time, while mixing gently. Roll into 1 inch balls. Place onto a cookie sheet and flatten slightly with a fork.
  • Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.
