3 cups chopped yellow onions (2 large onions)
2 tablespoons good olive oil
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
1 teaspoon fresh thyme leaves (1/2 teaspoon dried)
1/3 cup Worcestershire sauce
3/4 cup chicken stock
1 1/2 teaspoons tomato paste
5 pounds ground turkey breast
1 1/2 cups plain dry bread crumbs
3 extra-large eggs, beaten
3/4 cup ketchup

Steps:

  • Preheat oven to 325 degrees F.
  • In a medium saute pan, over medium-low heat, cook the onions, olive oil, salt, pepper, and thyme until translucent, but not browned, approximately 15 minutes. Add the Worcestershire sauce, chicken stock, and tomato paste and mix well. Allow to cool to room temperature.
  • Combine the ground turkey, bread crumbs, eggs, and onion mixture in a large bowl. Mix well and shape into a rectangular loaf on an ungreased sheet pan. Spread the ketchup evenly on top. Bake for 1 1/2 hours until the internal temperature is 160 degrees F. and the meatloaf is cooked through. (A pan of hot water in the oven under the meatloaf will keep the top from cracking.) Serve hot, at room temperature, or cold in a sandwich.

2 lb ground turkey (I used 93% lean)
2 eggs
1/2 medium onion, finely chopped or grated
1/2 cup grated carrot
3 cloves garlic, minced
3 Tbsp tomato paste
1 Tbsp Worcestershire sauce
1/3 cup milk
3/4 cup whole wheat panko breadcrumbs
1 tsp Italian seasoning
1/2 tsp paprika
1 tsp kosher salt
1/2 tsp black pepper
2 Tbsp fresh parsley, chopped
1/4 cup tomato paste
1 tsp white vinegar
2 tsp Worcestershire sauce
1 Tbsp maple syrup
1/2 tsp garlic powder
1/4 tsp onion powder
Pinch of salt and pepper

Steps:

  • Preheat oven to 375 degrees F and spray a baking sheet (or loaf pan) with non-stick spray.
  • In a large bowl, combine all meatloaf ingredients together and mix until just combined, making sure not to over-mix.
  • Form the meat mixture into a loaf making sure that the loaf is even on all sides so that it cooks evenly and place on the baking sheet. You could also press the meat mixture into a greased loaf pan. Place the meatloaf in the oven and bake for 40 to 45 minutes.
  • While the meatloaf is baking you can make the glaze. In a small bowl, whisk together tomato paste, vinegar, Worcestershire sauce, maple syrup, garlic powder, onion powder, salt and pepper until smooth. Set aside until meatloaf is ready.
  • Remove the meatloaf from the oven and spread the tomato glaze evenly all over the top. Pop it back into the oven and bake for an additional 15 to 20 minutes, or until the internal temperature reads 165 degrees.
  • Remove from the oven and let the meatloaf sit for about 10 minutes to seal in all that flavor, serve and enjoy!

1.2 lb honeysuckle white 99% fat free ground turkey
1 large egg
1 Tbsp less sodium worcestershire sauce
1/2 c italian seasoned panko bread crumbs
1/2 - 1 Tbsp onion powder
1 Tbsp mrs. dash original
2 Tbsp ketchup

Steps:

  • 1. Preheat oven to 400 and line a baking pan with foil
  • 2. In a medium bowl mix together the ground turkey, egg, and Worcestershire (I actually find that hands are the best mixing tool in this recipe!)
  • 3. Add in seasonings and bread crumbs.
  • 4. Mix until combined
  • 5. Spray foil lined baking sheet with cooking spray. Place the big ball of meat in the middle and form it into a rectangle.
  • 6. Spread the ketchup over the top. Note: Experiment with toppings here! I've used tomato sauce, pesto, and garlic butter before and it came out yummy each time!
  • 7. Optional: place vegetables around meatloaf in pan
  • 8. Place in preheated oven and cook for 20-25 minutes. Meat thermometer should read at least 160°F when inserted in the middle.
  • 9. Slice and enjoy!

LOW-FAT TURKEY MEATLOAF

Fat free ground turkey and lean ground pork meatloaf. Very low in fat and high in protein. I have calculated the nutritional values and this recipe is much lower in fat and cholesterol than the final recipe indicates. Be sure that the ground pork is very lean or use all turkey and more seasonings.

1 (15 ounce) can tomato sauce
1 (6 ounce) can tomato paste
½ cup ketchup
2 teaspoons white sugar
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon dried oregano
1 teaspoon ground black pepper
1 teaspoon Worcestershire sauce
1 (14.5 ounce) can Italian-style stewed tomatoes, undrained
3 pounds ground turkey
1 sleeve roasted vegetable-flavored buttery round crackers (such as Ritz®), crushed
1 onion, diced
1 green bell pepper, diced
2 eggs, slightly beaten
1 tablespoon dried oregano
1 tablespoon dried thyme
2 tablespoons Worcestershire sauce
1 clove garlic, minced
2 teaspoons ground black pepper
½ cup shredded mozzarella cheese

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease a 9x13-inch baking dish.
  • Mix tomato sauce, tomato paste, ketchup, sugar, onion powder, garlic powder, 1 teaspoon oregano, 1 teaspoon black pepper, and 1 teaspoon Worcestershire sauce in a bowl.
  • Place stewed tomatoes in a large bowl; crush tomatoes using a fork. Add turkey, crushed crackers, onion, green bell pepper, eggs, 1 tablespoon oregano, thyme, 2 tablespoons Worcestershire sauce, garlic, and 2 teaspoons black pepper; mix until evenly combined.   • Bake in the preheated oven for 45 minutes. Spoon the remaining tomato topping over loaf and top with mozzarella cheese. Bake until no longer pink in the center, 15 to 20 more minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).
