Steps:
- Preheat an oven to 350 degrees F (175 degrees C). Butter a large baking dish.
- Place the beaten eggs in a shallow dish. Mix the almonds, coconut, sesame seeds, brown sugar, and nutmeg together in a mixing bowl. Stir the pineapple and onion together in a separate bowl. Dip each tilapia fillet into the beaten egg and then press into the almond mixture. Place the coated tilapia into the prepared dish. Spread the pineapple mixture over the coated fillets.
- Bake in the preheated oven until the fish flakes easily with a fork, about 40 minutes.

Steps:
- 1. Preheat oven to 475°F.
- 2. Cut 4 pieces 7 inch pieces of Reynolds Wrap Foil. Coat the bottom of each piece with 1/2 tbsp olive oil.
- 2. In a large bowl, combine sliced onions with balsamic vinegar, honey, remaining olive oil and a pinch of salt, mixing well so the onions are well coated.
- 3. In a medium bowl, combine ground almonds with lemon zest and a pinch of salt.
- 4. Divide onions equally on each piece of foil. Close the foil to form 4 sealed packets and place them on a large baking sheet in the oven. Bake for 20 minutes. Carefully open the packets and broil for 4 minutes. Remove baking sheet from the oven and turn the temperature down to 425°F.
- 5. In the meantime, season each tilapia fillet on both sides with salt, garlic powder and lemon pepper. Place one fillet in each packet on top of the caramelized onions and top with ground almonds. Drizzle with olive oil, close the packet and return to the oven. Bake at 425F for 18-20 minutes. Open the packets and broil for 1-2 minutes until golden brown.
- 6.Garnish with chopped basil or parsley, lemon zest and fresh lemon juice before serving.

What a quick and easy dinner for two. The almond crust fries perfectly and has a slightly nutty flavor. We love the savoriness of the Parmesan cheese. It's delicious on the tender, delicate tilapia.

Steps:
- 1. In a shallow dish beat egg and add spices, then set aside.
- 2. In a second shallow dish, mix finely chopped almonds with Parmesan cheese and set aside.
- 3. Lightly dust each fillet with flour on both sides.
- 4. Melt butter in a non-stick skillet over medium-high heat.
- 5. Dip floured fillets into egg mixture.
- 6. Then dip into almonds and cheese mixture. Press down to collect as much coating as possible on both sides of each piece.
- 7. When skillet is hot, saute the fillets turning only once till golden brown (approximately 2-1/2 minutes per side).
- 8. Serve with lemon wedge garnish.
ALMOND CRUSTED TILAPIA
Steps:
- 1. Preheat oven to 425 F. From 1 lemon, grate 1 teaspoon peel and squeeze 3 tablespoons juice; cut second lemon into wedges. In cup, mix lemon peel and 1 tablespoon juice, 1 tablespoon oil, 1/4 teaspoon salt, and 1/8 teaspoon coarsely ground black pepper. 2. Spray 13" by 9" glass baking dish with nonstick spray; place tilapia, dark side down, in dish. Drizzle tilapia with lemon mixture; top with almonds, pressing them on. Bake 15 minutes or until tilapia turns opaque. 3. Meanwhile, in 12-inch skillet, heat remaining 1 tablespoon oil on medium-high 1 minute. Add onion and cook 5 to 6 minutes or until golden, stirring occasionally. Stir in green beans, mushrooms, water, 1/4 teaspoon salt, and 1/8 teaspoon coarsely ground black pepper. Cook about 6 minutes or until most of liquid evaporates and green beans are tender-crisp. Tosss with remaining 2 Tablespoons lemon juice. Serve bean mixture with lemon wedges with tilapia

This recipe is modified from another recipe. It is simple and easy and great for those that are avoiding gluten and dairy. I make it in a toaster oven to prevent heating the house with the big oven.

- Grate whole frozen lemon (or use lemon zest). Mix with Almond Flour.
- Sprinkle Tilapia filet with Garlic Salt and Chili with lime on each side, and place in a piece of foil.
- Pat Almond Flour mixture onto the fish fillet and drizzle with oil. Close Foil. Place in preheated 425 degree oven and bake for 20 minutes. Open foil and brown for 2-3 minutes.

DIJON ALMOND CRUSTED TILAPIA

- Place almonds in a food processor and process until finely chopped. About 20 seconds. Transfer chopped almonds to a shallow dish. Add paprika and mix together. Season the tilapia filets generously with salt & pepper. Spread mustard on both sides of the filet and then transfer to the almond mixture to coat both sides. Heat coconut oil in a skillet over medium heat. Once hot, place the filets in the skillet and cook for about 3 minutes per side or until the fish is cooked through. Exterior should be browned and crispy but not burnt. Serve warm and garnish with parsley or lemon.

- Set oven rack about 6 inches from the heat source and preheat the oven's broiler. Line a broiling pan with aluminum foil or spray with olive oil cooking spray.
- Heat olive oil in a skillet over medium heat; cook and stir garlic until fragrant, 3 to 5 minutes.
