Easy Vegan Parmesan Cheese image

Make this simple vegan Parmesan cheese recipe and sprinkle it over your favorite Italian recipes! This vegan Parm is made with hemp seeds, so it's nut free. No food processor required-just stir together the ingredients and you're done. Recipe yields about 3/4 cup.

1/2 cup hemp seeds
1/4 cup nutritional yeast
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon fine sea salt, to taste

Steps:

  • Simply stir together the ingredients in a bowl or jar until they are evenly dispersed. Taste, and add more salt for more intense flavor (I usually add another pinch or so). You're done!
  • Store this vegan Parmesan cheese in an airtight container at room temperature for up to 3 months.

While I feel that most the FAKE cheese products out there are trying to mimic something that they just CAN'T, this version of grated parmesan comes pretty darn close to that nutty, salty topping that grated parmesan or other hard cheeses gives to a dish of pasta! This recipe is great too, because you can make it in seconds right in you kitchen instead of shelling out 3 times as much for the pre-made vegan grated cheese they sell in the store. The original recipe calls for 1/8 tsp salt, I use closer to 1/4. Use your taste.

1 cup raw almonds (either with skins or without)
2 tablespoons nutritional yeast
1 teaspoon garlic powder
1/2 teaspoon or so mineral salt

Steps:

  • Place all ingredients into the bowl of a food processor/blender and process until your desired consistency. Add more nutritional yeast, garlic powder and salt to taste.
  • That's it - it's ready to sprinkle on soups, pastas, salads, pizza, even sandwiches may benefit from a sprinkle or two!
  • Makes about 1 cup.
  • Serves 8, 2 tablespoons per serving.

MY VEGAN PARMESAN



My Vegan Parmesan image

I always have a batch of this on hand to sprinkle over pasta dishes. Great over red sauce or creamy white sauces too. This recipe has its roots in Recipe #283639, but then I kept tweaking it until it became what you see below! I actually use my (clean) coffee grinder for this because the oil from the almonds sometimes makes them get stuck in the bottom crevice of my blender!! I have made this without the lemon zest as well, and it turns out just as good :)
