1 cup butter, softened
1 ½ cups white sugar
2 eggs
2 teaspoons vanilla extract
2 cups all-purpose flour
⅔ cup cocoa powder
¾ teaspoon baking soda
¼ teaspoon salt
2 cups semisweet chocolate chips
½ cup chopped walnuts

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In large bowl, beat butter, sugar, eggs, and vanilla until light and fluffy. Combine the flour, cocoa, baking soda, and salt; stir into the butter mixture until well blended. Mix in the chocolate chips and walnuts. Drop by rounded teaspoonfuls onto ungreased cookie sheets.
  • Bake for 8 to 10 minutes in the preheated oven, or just until set. Cool slightly on the cookie sheets before transferring to wire racks to cool completely.

1/2 cup brown sugar, firmly packed
1/4 cup canola oil
2 tablespoons water
2 egg whites, slightly beaten
1/2 teaspoon baking soda
1 teaspoon ground cinnamon
1/8 teaspoon table salt
1 1/2 cups Raisin Bran cereal
1/2 cup all-purpose flour, you can use 1 C All Purpose and omit the whole wheat
1/2 cup white whole wheat flour
1/4 cup mini chocolate chip, more if desired
1/4 walnuts (optional)

Steps:

  • Preheat oven to 350°F
  • Mix sugar, oil, egg whites, water, cinnamon, salt, baking soda in a large bowl. Set aside.
  • Add cereal and flour.; stir well until blended.
  • Add chocolate chips and nuts, if using, mix well.
  • Spray baking sheet with nonstick spray or use parchment paper or silicon mat.
  • Drop by small cookie scoop onto baking sheet. 2" apart. Bake for 14 minutes or until lightly browned. NOTE: if using a different measure, adjust timing accordingly. I used a small cookie scoop.
  • Remove from baking sheet and place on wire rack. Cool.

While dabbing in the kitchen one day, my husband, Dale, came up with these hearty cookies. I begged him to make them again, but he hadn't written down the recipe. Ten batches later, he finally recaptured the wonderful flavor.

1 cup butter, softened
3/4 cup sugar
3/4 cup packed brown sugar
2 eggs
1 teaspoon vanilla extract
1-1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
2-1/2 cups quick-cooking oats
1 package (11-1/2 ounces) milk chocolate chips
2 cups chopped walnuts
1-1/2 cups All-Bran cereal

Steps:

  • In a large bowl, cream butter and sugars until light and fluffy. Add the eggs, one at a time, beating well after each addition. Beat in vanilla. Combine the flour, baking soda and salt; gradually add to creamed mixture and mix well. Stir in the remaining ingredients. , Drop by tablespoonfuls 2 in. apart onto ungreased baking sheets. Bake at 350° for 12-14 minutes or until lightly browned. Remove to wire racks to cool.

⅛ cup honey
⅛ cup butter
⅛ cup natural peanut butter
½ banana, mashed
1 teaspoon vanilla extract
⅝ cup whole wheat flour
⅛ cup oat bran
½ cup rolled oats
¼ teaspoon baking soda
⅛ teaspoon salt
1 pinch pumpkin pie spice
½ cup dried cranberries
½ cup semisweet chocolate chips
2 tablespoons sunflower seeds

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • In a medium bowl, mix together the brown sugar, honey, butter and peanut butter until smooth. Stir in the banana and vanilla. Combine the whole wheat flour, oat bran, oats, baking soda, salt and pumpkin pie spice in a separate bowl. Stir the dry ingredients into the wet ingredients until it forms a smooth dough. Mix in the cranberries, chocolate chips and sunflower seeds. Drop by spoonfuls onto an ungreased baking sheet.

1/2 cup oat bran
1/2 cup water, at room temperature
1/4-1/2 cup margarine
1/3 cup sugar
1 tablespoon sugar substitute
1/2 cup egg white (3 to 4 medium)
2 teaspoons vanilla
2 cups all-purpose flour
1/3 cup cocoa
1 teaspoon baking soda
2 tablespoons dry buttermilk
1/2 teaspoon salt
2/3 cup miniature chocolate chip

Steps:

  • Mix oat bran and water, let stand at room temperature for 30-45 minutes .
  • (This timing is very important.) Cream margarine, sugar and sugar substitute together until light and fluffy.
  • Add egg whites and vanilla and mix at medium speed for 30 seconds Scrape down the bowl Stir flour, cocoa, soda, dry buttermilk and salt together to blend well.
  • Add to the creamed mixture along with the oat bran mixture and mix at medium speed to blend.
  • Add chocolate chips to dough Drop by tablespoonful onto cookie sheets that have been sprayed with pan spray or lined with aluminum foil.
  • Bake at 375° for 12 minutes.
  • (The cookies will not be crisp if they are not baked the full length of time.) Remove from hot cookie sheets to wire racks to cool.
  • Use 1 cookie per serving.
