A delicious healthy snack to enjoy whether it's raining or gorgeous outside. It's vegetarian, but loaded with tasty ingredients.

2 cups Green Mountain Gringo® Original Tortilla Strips
1/2 cup Green Mountain Gringo® Medium Salsa
1/3 cup canned black beans, drained and rinsed
1/4 teaspoon lime juice
1/2 cup Mexican cheese
1 avocado, diced
2 green onions, chopped
Sour cream, for drizzling

Steps:

  • Press a piece of aluminum foil down into your air fryer to form a flat bottom. Make sure the sides go up the air fryer at least 2 inches (so you can safely remove the nachos after heating). Remove foil from air fryer keeping its form.
  • Preheat your air fryer to 370 degrees.
  • Add chips to the aluminum foil then add salsa, black beans, and lime juice on top. Sprinkle cheese across the top of the nachos.
  • Carefully place the nachos inside the air fryer and cook for 1-2 minutes, until cheese is just melted.
  • Remove nachos from the air fryer and top with avocados, green onions, and sour cream.
  • Enjoy immediately.

6 hot dogs
3 cheddar cheese sticks, halved lengthwise
1-1/4 cups self-rising flour
1 cup plain Greek yogurt
1/4 cup salsa
1/4 teaspoon chili powder
3 tablespoons chopped seeded jalapeno pepper
1 cup crushed nacho-flavored tortilla chips, divided
Guacamole and sour cream, optional

Steps:

  • Cut a slit down the length of each hot dog without cutting through; insert a halved cheese stick into the slit. Set aside., Preheat air fryer to 350°. In a large bowl, stir together flour, yogurt, salsa, chili powder, jalapenos and ¼ cup crushed tortilla chips to form a soft dough. Place dough on a lightly floured surface; divide into sixths. Roll dough into 15-inch long strips; wrap one strip around cheese-stuffed hot dog. Repeat with remaining dough and hot dogs. Spray dogs with cooking spray and gently roll in remaining crushed chips. Spray air fryer basket with cooking spray, and place dogs in basket without touching, leaving room to expand. , In batches, cook until dough is slightly browned and cheese starts to melt, 8-10 minutes. If desired, serve with additional salsa, sour cream and guacamole.

And they can be turned into a main course by adding some protein like shrimp or chicken for a complete meal.

2 ½ ounces thin corn tortilla chips
½ teaspoon taco seasoning
1 ¼ cups shredded pepper Jack cheese
1 tablespoon sliced black olives
6 grape tomatoes, halved
1 teaspoon chopped fresh cilantro

Steps:

  • Preheat the air fryer to 360 degrees F (180 degrees C) for about 3 minutes. Line air fryer basket with foil or a parchment liner, and spray with cooking spray.
  • Spread out chips in the fryer basket in a single layer, slightly overlapping chips, so the cheese doesn't melt through. Lightly dust chips with taco seasoning to get a pop of taco flavor, and sprinkle with shredded cheese. Don't overcrowd the basket.
  • Top cheese with olives and tomatoes and place basket in the air fryer.
  • Air-fry until cheese is melted and chips are starting to slightly brown on the edges, 5 to 6 minutes. Watch closely to be sure the cheese doesn't burn. If necessary, add additional time until you reach your preferred crispness.
